Keto Cabbage Lasagna!!😋😍 OMG! 😱 It’s so delicious! Make sure to TAG a friend who would LOVE this recipe 👇👇
1 large head cabbage, leaves separated
2 tbsp. extra-virgin olive oil, plus more for baking dish
1 onion, chopped
2 cloves garlic, minced
1 1/2 lb. ground beef
1 (28-oz.) can crushed tomatoes
1 tbsp. balsamic vinegar
1/4 c. torn basil leaves
Freshly ground black pepper
3 c. ricotta
2 eggs, beaten
1/4 c. grated Parmesan, plus more for serving
3 c. shredded mozzarella
Preheat oven to 350°. In a large skillet over medium heat, heat oil. Add onion and cook until onion is soft, about 5 minutes. Stir in garlic and ground beef, breaking up meat with a wooden spoon. Cook until beef is no longer pink, about 6 minutes; drain excess fat. Add crushed tomatoes and balsamic vinegar. Bring mixture to boil then reduce heat and simmer for 20 minutes. Season with salt and pepper then stir in basil.
In a medium bowl, combine ricotta, eggs, and Parmesan.
Grease a large baking dish with olive oil. Spoon a thin layer of sauce into bottom of baking dish. Add a layer of cabbage leaves, then top with more sauce, ricotta mixture, and mozzarella. Repeat layering twice more.
Bake until cabbage is tender and mozzarella is bubbly, about 25 minutes. Garnish with more basil.

I havent posted in a long time becasue I went on vacation and was phone free. Im a little sad because even though I did stick to diet, I gained 2lbs :( I think it was just not being as active as I am in normal life (sunbathing only) and i do think I tended to just eat more even though it was all good food. My favorite meal I had is pictured here, we went out for a boat trip and caught lobsters. This lobster was HUGE. I’m a Target type’o’girl. I scoffed at the barbies that wore @lululemon
at my gym. So, I was reluctant to even peek in the store when my BF said he needed to buy a few things.
He surprised me by encouraging me to try on some pants.
He was with me when I broke down in tears after realizing I could no longer shop at Lane Bryant because I had lost too much weight to wear their clothes, so I figured he must have lost his mind.
The manager immediately walked towards me- in my mind, I thought for sure she was going to pull a Pretty Woman “we don’t have anything for you.” Instead, she was so sweet and understanding. I told her about my weight loss and struggles with accommodating my lose skin and long legs. She suggested two different styles of yoga pants- one buttery soft and one full of pockets. I was shocked AF when I tried on a size 12 and they fit. I almost cried- again. When I came out of the dressing room I was FLOORED when the manager suggested I try on 10- and they fit better!!!!!
I haven’t taken them for a workout yet but so far I am loving the fit in the crotch and waist.
Two weeks ago I bought some $30 pants. I regret it now. I’d rather have one pair of these @lululemon
‘s than three pairs of the others. The fit is totally worth the cost!

I am a big potato chip person. I used to be able to down a whole bag in one sitting. I really am starting to miss my favorite chips so to satisfy my chip crave I bought some pork rinds. And to prevent myself from eating the whole bag I gave myself a small amount and I have my water on the side. I’m down another pound and don’t want to mess up my flow so this little snack is perfect right now for me. Once my son wakes up from his nap we’ll be going for our walk and I’ll feel even better after having these. What are some snack you love? Guys, this is the best Keto cheesecake I’ve ever made! It tastes completely non keto and like all Keto friendly foods, tiniest bit is so rich and satisfying. The base is almond flour, melted butter and powdered erythritol.
The cake is made of 32oz cream cheese, 1 cup sour cream, 1/2 cup HWC, 2 eggs and three yolks, scant 1 cup powdered erythritol, and a tsp of vanilla essence.
I baked the base in the oven at 350 till golden brown, which took about 12-15 mins. Once it’s completely cooled, pour the cheesecake batter in and bake at 275 for an hour. LMK how you like it!

90 second bread ingredients:
3 TBSP almond flour
1/2 tsp baking powder
2 TBSP butter melted
Seasonings optional: taco seasoning, curry, garlic salt, etc
Melt butter in a bowl.
Add the almond flour, egg, baking powder, seasonings and then whisk together.
Dump into the sandwich container (or bowl/mug works). You can do it in a mug for an English muffin or in a square container for "bread shape" . It is best toasted before using as it's super soft and squishy after cooking.
Cook in the microwave for 90 seconds.
Take out of the microwave and let cool 20 seconds.
Cut bread in half and fill with cheese/meat (if too thin, make 2 slices of bread)
Heat butter in a skillet and cook the bread on each side until crisp.
