Coconut pancakes - I was craving something sweet and dairy this morning. I finally found a recipe for coconut pancakes 😍 I decided to treat myself and whipped up some heavy cream with 2 drops of vanilla aroma as a side. And this made me soooooo happy. Just what I needed!

Today in the blog we are talking about developing a healthy lifestyle. This is the first in a series that will help you develop a healthy primal/keto aligned life.
My goal with this series is to get you thinking about health in a while picture point of veiw. It is not just about using the next crash diet to get weight off for an event. Instead it is about building a lifestyle that is optimal for you and your goals. And the start of that is of course knowing why the heck you are doing this.
Having and knowing your why will give you the motivation to stay the course.
If you know you're why, but are still having trouble getting to your goals. You may want to look into getting a health coach, or someone to be an outside observer to help. However, not every one needs that outer accountability. Regardless of if you do or not, you can get healthy! You can do it! It's about knowing yourself and your why and building the accountability and the infrastructure you need to succeed!

1. I love running. I run indoors (treadmill) but I especially love running outside.🏃♀️
2. Running is therapy for me.🏃♀️
3. I don't lose weight from running. I never have. When I eat poorly I gain weight when I keep my carbs very low I will lose or maintain my weight regardless if I run.🏃♀️
4. I started running by joining a running group at my church. Best decision ever.🏃♀️
5. Running was the one exercise I could commit to and stay with it.🏃♀️
6. I love finding keto runners on the IG. When I find #ketorunners
I follow them.🏃♀️
7. I'm actually considered a slow runner by running pace numbers. But so what. I run at my pace.🏃♀️
8. I've started to travel out of state to run races. It's so exciting.🏃♀️
9. As much as I love running, I've never ran a marathon. It's not on my bucket list right now. I run all miles up to half marathons🏃♀️
10. I've been running for about 7 years now. WOW. Tequila Lime Chicken Tacos.
I'm not even able to take props for this one!!! My son announced he was making something from a cookbook I got for him years ago about food trucks called Eat Street(remember the show?) Although the process takes some preparation, from chopping and marinating, I absolutely LOVED the flavours of this dish. Lime, homemade pico de giallo and cilantro are all flavours I love. I served mine in lettuce leaves.

I'm so aware that yesterday was transformation Tuesday, but whatever! This can be weight loss Wednesday! Lol. 🎉 The reason why I'm posting again is because I'm feeling myself this morning! 💃🏻I can see and feel the weight loss! The picture on the right is from a year ago around this time. I was at 150ish, and pretty bloated all the time. We got family 👨👩👧👧 pictures and I HATED THEM!!! Today is on the left and I haven't weighed myself (because I'm being strict on myself to only weigh once a week) but I'm feeling good!!! I am not hating what I see!!! Keto Recipes, Keto Meal Plans (Link in the bio 👆)
9 large eggs, divided
1 (8-oz.) block cream cheese, softened to room temperature, cut into cubes
1 tsp. maple extract
1 tsp. pure vanilla extract
1 1/2 c. almond flour
2 tsp. baking powder
1 tsp. kosher salt
Butter, for pan
4 pieces bacon, cooked
1 tbsp. heavy cream
Freshly ground black pepper
4 slices American cheese
In a medium bowl, whisk together 4 eggs, cream cheese, maple extract, and vanilla. Add almond flour, baking powder, and salt.
In a medium nonstick skillet, melt butter. Add about ¼ cup of batter to pan and cook, 3 minutes, then flip and cook another 3 minutes or until golden and cooked through. Repeat with remaining batter.
In a small nonstick skillet, melt butter. In a small bowl whisk together remaining 5 eggs and heavy cream. Season with salt and pepper. Pour about ¼ of eggs into skillet. Let cook 1 minute, then fold edges into the center to create a small circle. Repeat with remaining eggs.
Place eggs on top of a griddle cake, then cheese and a slice of bacon and top with another griddle cake.
