1 pan dinner ✅ *Seared and cooked chicken thighs- set aside *cut into small chunks & cook 1/2 pack of bacon 🥓 set it aside * leave drippings in pan and slowly render down 1 onion *add sliced mushrooms 🍄 and cook until tender *add 4 cloves diced garlic, 2T finely chopped fresh parsley & 1-2T chopped fresh rosemary *cook until fragrant *add 1-1.5C heavy cream *put bacon 🥓 back in *add 1 cup shredded parmigiana *add 1 bunch fresh spinach *cook down *add the chicken back. *serve 😋 Fresh asparagus on the side tossed in salt & pepper and cooked in a little olive oil.

KETO LOW-CARB BACON CHICKEN SPINACH ALFREDO FATHEAD PIZZA⠀⠀

1 cup + 2 tablespoons almond flour⠀
1 1/2 oz cream cheese⠀
2 1/4 cups shredded mozzarella⠀
1-2 teaspoons Italian Seasoning ⠀
1 teaspoon butter melted (optional)⠀
Pizza White Alfredo Sauce⠀
3 oz cream cheese⠀
1/3 cup heavy cream⠀
2 tablespoons butter⠀
1/2 cup Parmesan reggiano cheese, shredded⠀
1/4 teaspoon crushed red pepper flakes optional⠀
salt and pepper to taste⠀
3 slices bacon cooked and crumbled⠀
3/4 pound skinless chicken breasts cut into 1 inch cubes⠀
McCormick's Grill Mates Chicken Seasoning, salt, pepper ⠀
1/4 cup fresh spinach⠀
1/2 cup mozzarella cheese⠀
1/3 cup Parmesan reggiano cheese⠀
Preheat oven to 425 degrees.⠀⠀
Add the mozzarella and cream cheese to a large bowl. Place in the microwave for 60 seconds.⠀⠀
Remove the mixture from the microwave. Add the Italian Seasoning and stir.⠀⠀
Stir in the almond flour. ⠀
Remove from the microwave and stir. Add in the egg. Stir until the mixture forms crust.⠀⠀
Place a sheet of parchment paper over the pizza pan.⠀⠀
Spoon the dough onto the parchment paper. Flatten the dough. ⠀
Using a fork, poke holes throughout the pizza dough.⠀
Bake for 8 minutes.⠀⠀
Add the chicken cubes to the skillet. Season with chicken seasoning. Cook for 3-4 minutes until the chicken is no longer pink on the inside.⠀⠀
Remove the chicken from the skillet and set aside.⠀⠀
Add the butter to the skillet on medium heat. Then add the chunks of cream cheese, Parmesan reggiano, heavy cream, red pepper flakes, and salt and pepper to taste.⠀⠀
Stir continuously until the cheese has melted. ⠀
Spread the alfredo sauce over the pizza crust.⠀⠀
Add the fresh spinach.⠀⠀
Toss the cooked bacon and chicken throughout. Sprinkle the mozzarella and Parmesan Reggiano cheese on the top.⠀⠀
Bake for an additional 8-10 minutes.

Low Carb Chicken Nuggets say what?! Tonight’s dinner was pork rind crusted chicken nuggs. I added a bit of @flavorgod
garlic lovers seasoning to the crushed up pork rinds and it made for some ridiculously tasty nuggets! However I did find them not as crunchy as they could’ve been... I baked them on 350 for 20 minutes per side! Have you guys made low carb nuggs before? If so, what’s the trick to get the ultimate crunch?!?

Okay y'all!!!! Devin here with the recipe for Cilantro Lime Avocado Chicken Salad! (Thats a mouth full)
First cook up 8-12 chicken tenders (8 for home dinner, 12 if youd like a little extra for lunch the next day) and season them with salt, pepper, cumin, and some carne asada mix. Cook for 25 minutes at 375 and grab a knife!🔪 Next; cut up a large handful of cilantro and the same for some green onion.
Dice up 2-3 jalapenos.
Cut 2 small limes (for juicing later)
And finally, dice up one large avocado.🥑 (I would wait on your avocado until you are just about to mix)
Once your chicken is cooked, its time to shred! 🎸*air guitar* Shred your chicken to the texture you prefer in your chicken salad; in a large bowl. Toss in the rest of your ingredients minus the limes. Juice one lime half over the contents of your bowl while you make your sauce.
Now get ready....this is the complicated bit! Spoon some Mayonnaise into a smaller bowl depending on how you like your chicken salad (more wet or more dry). Then juice the rest of your limes into the small bowl and stir until mixed.
Thats it! Pour your sauce into the large bowl with all your other ingredients and gently mix (so you dont make guacamole chicken salad lol)

I ended up having a snack today since my Lunch was so early. Snack was 2 string cheese and 1 sugar free jello pudding 🤗 I finally found my favorite keto pancake recipe and that's what was for dinner 😍
Keto Pancakes (Makes 4 using 1/3 cup to pour batter into pan):
1 cup kirkland blanched almond flour
1/2 TB liquid coconut oil(MCT)
1/8 cup cold water
2 large eggs
Pinch of salt
1 tsp imitation vanilla extract
1/2 tsp baking powder
1 TB granulated Swerve Sweetener
4 TB kirkland salted butter melted
2 TB kirkland salted butter for greasing pan
Preheat pan on stove over medium heat. Place all ingredients(except for last butter item) in blender and mix well. Pour batter into a 1/3 cup measuring cup. Put a little butter in pan to grease it and pour in 1/3 cup of batter. Cook about 3 minutes or until bottom is golden and flip pancake. Cook until golden and remove. Repeat steps until all the batter is cooked. I like to add butter and sugar free syrup to pancakes but feel free to add whatever ingredients you like and enjoy 😍
Today was Yom Kippur, and on this holiday, Jews fast for 24 hours and break the fast typically with bagels and spreads 🍽 Since this is my first Yom Kippur on keto, I decided to make some keto bagels so that I wouldn’t feel too left out!

and I would definitely recommend bc these bagels were DELICIOUS 😍 Obviously, it can’t compete with a Jersey bagel, but it was great as a bagel-substitute. Everything else served for break fast was keto friendly also!
I thought fasting this year would be a little easier since I’ve adapted a 16:8 IF schedule, but I still found it to be kind of difficult - prob bc on Yom Kippur you can’t drink anything and with IF I have plenty of water and black coffee ☕️
