Starting my 3rd week of keto. Had a cheat weekend because of family meals etc. And why not 😁. Just some of my yummy Keto meals all homecooked. With my low carb homemade almond bread, carbless (3g) noodles with clear soups and made from scratch curry laksa my first attempt and I must say it was delicious . I wanted something solid. Something sturdy. Something I could really sink my teeth into. This hit the spot.
breakfast: Egg bites. Such an easy way to get some early morning protein! 10 eggs, 12 slices of bacon, a half of a bell pepper, about a quarter of red onion, and a few leaves of chopped spinach. Divide each ingredient equally into a 12 serving cupcake pan (#protip

My weekend went a little something like this... buffalo cauliflower, Brussels and Cobb salad. Making better choices everyday and everyday I’m inching closer to a better version of me 😇
Pizza 🍕 bowl with bacon pieces, pepperoni, Parmesan and mild cheddar cheese shredded. 🧀, 1 tablespoon of pizza sauce. Cook in microwave for 1 min 30 secs. I added ranch dressing to the top. Season to taste. This is a great meal that is quick and easy.
Filled 🌶 (recipe below)
INGREDIENTS (4 people):
- 3 sweet peppers
- 1 onion
- 3 carrots
- olive oil
- rosemary & thyme
- 200 g of basmati rice
- 400 ml of vegetable bouillon
- 200 ml of passata
- 150 g of goat cheese
1) peel & chop the onion and carrots
2) prepare 1 sweet pepper and dice it
3) heat your olive oil and add the carrots, onion and bell pepper and cook for about 5 minutes
4) add the rice together with the veggies and boil for 2 extra minutes
5) add the bouillon & passata and cook for +-20 min at a low temperature
6) add pepper and salt
7) preheat the oven at 175’C
8) halve the other 2 sweet peppers
9) fill your peppers with the rice & crumble some goat cheese
10) bake for about 30 minutes and enjoy 🤗🤗

I know I’ve talked about my sweet tooth before & how I totally believe we shouldn’t cut sweets out of our diet but instead, create healthier versions of them.. well praise Jesus, I’ve outdone myself! Please tell me youve had brownie brittle.. the crunchy, sweet, addictive chocolately goodness that’s full of sugar 🤦♀️ it’s absolutely delicious though. & I knew I wanted to create something similar. I can’t believe it only took me one batch of these bad boys to get it right. These “NUTELLA” BROWNIE BRITTLE BITES are a winner. They’re seriously addictive but full of good for you ingredients that you don’t have to feel bad about. They won’t spike your blood sugar & aren’t full of empty calories. TRY THEM NOW. You won’t be upset about it 🙃
Nutella brownie brittle:
1/2 cup @bobsredmill
1/2 tsp baking powder
3 tbsp @navitasorganics
1/2 cup coconut sugar
A few squirts of vanilla liquid stevia (or more coconut sugar to taste)
1/4 tsp pink salt
1/4 cup coconut oil melted
1 tsp hazelnut extract or vanilla
Chocolate & any other add ins you want!
Whisk dry ingredients together. In large bowl, whisk wet ingredients. Slowly mix in dry ingredients until combined. Then fold in chocolate chips, nuts, etc. spread onto lined baking sheet into rectangle. The thinner, the more crispy they’ll get. Bake at 325 for about 15 min. Take out of oven and cut into squares. Bake again for another 10 min. Remove and let cool. They crisp as they cool!
