And I must say, it is out of the world! After years of making dum aloo with tomatoes, onions, ginger, garlic, this version is delightfully delicate in flavour and refreshingly different. The main aromatics are dried ginger and fennel seeds.

Now for the side story! That jewellery box of carved wood you see in the picture, is straight from Kashmir and was bought by my mother 45 years ago. That was when the valley was benignly beautiful and there would be gentle Kashmiri men on little boats selling artifacts, saffron, walnuts, fruits and vegetables. Always smiling and talking with a lovely lilting accent 💕
I inherited this gorgeous jewellery box from my Mom when she passed away several years ago. But the memories of that trip to Kashmir when I was 5 years old still linger every time my glance falls on this gorgeously crafted box!
