1 cup pitted dates
1/2 cup rolled oats
1/2 cup cashews
1/2 cup desiccated coconut
1/4 cup coconut flour
2-3 tbsp maple syrup
10-15 drops of doTERRA lemon essential
▪️Soak the dates in warm water for 10 minutes beforehand.
▪️Add all ingredients to your food processor or high powered blender and process until combined and sticky. ▪️Remove and roll into balls. Makes about 10.
▪️Store in the fridge, or freeze if you want to keep them longer

Store bought brands usually have gums/thickeners/emulsifiers/added sugars, and the ones that don’t can be very expensive 💸💰..
Soak 1 cup of almonds overnight or all day. Rinse. Place in almond cow basket. Add water to 1st line in almond cow canister. Add 2 T maple syrup, and 1 tsp pumpkin pie spice to water. Place top on canister, and press that cute little cow on top. That’s all folks. 🥕🍊🍋Today started with juicing - all organic, orange, lemon, carrot, celery, beetroot and ginger. 🥘Then a breakfast hash for brunch! Anything goes! I added cooked butternut squash, shredded cooked chicken breast, mushrooms, and leftover organic beans with added broth. 🍜Dinner was chicken thighs, diced sweet potatoes and roasted cauliflower and gravy made with broth.
All organic, fresh ingredients and everything made from scratch. All meals were quick and easy and full of nutrients 👌

You can always find a Keto dish when eating out. I ordered the Crazy Spicy Skillet (comes with potatoes) and subbed the potatoes for greens.
Getting greens in is just as important as keeping the carbs low.
Trying out a wee piece of poached pear with my porridge + some cinnamon and coconut/rice milk. Pear isn't low FODMAP so I'm trying a small amount. Often there can be a reaction when reintroducing food after being on a restricted diet, but so far so good 😄
