Back home after an amazing 16 days away in Italy 😊☹️mixed feelings! Happy to be home but sad it’s over. First dinner absolutely had to be salmon & salad. Needless to say we ate ALL the pasta and carbs when we were away. Absolutely zero regrets (it was so amazing) but happy to be back to our regular fresh and light faves 🍃 it was a solo dinner tonight as poor Gordo had to fly straight to Mongolia for work 😟 oven baked salmon with dill & lemon, plus a salad of rocket, spinach, baby toms, toasted pepitas & sunflower seeds, cucumber, avo & @meredithdairy goats cheese, all drizzled with a heap of lemon 🍋 it’s no spaghetti alle vongole (my fave 😩) but it hit the spot 👌

We had the best day today, learning how to make pasta (and other Italian classics) here in Rome 🍝 we shopped at the markets for the produce, cooked (and drank 😏), learnt SO much, and enjoyed the amazing 3 course meal we produced. Feeling so inspired and so excited to get into more Italian cooking when we get home 🙌 also, we would highly recommend @cookwithusinrome 💯 if you have a few days in Rome, definitely do it!

Made a triple batch of this last weekend for the freezer so it was a quick tea last night with leftovers for my lunch today #winning . . What a way to start the day 👅💦 that colour! I made this for Gordo yesterday when he got home from an overnight flight. The perfect breaky to shake off the red eye dustiness 🙃This fresh little mix is mango, red dragonfruit, banana, peach (all frozen), 1/4 cup oats and a big splash of milk (I used regular cows milk because that’s all we had, but any milk would do just fine). For me I would ALWAYS add protein powder to keep me full, but Gordo is happy with the fruit and oats. Topped with toasted coconut, @loving_earth buckinis & @carmanskitchen Fruit Free Muesli 🔮✨🌺🧡

Moroccan lamb tagine 🍃💥 I cooked up this go-to feed for my girlfriends on Wednesday night (although the pic is a throwback because I didn’t want to put my hungry pals through a photoshoot 😂). This is such a great recipe to cook for guests, as it’s all done in advance. It’s simmering away on the stove while you entertain, and only a few minutes of your time is needed before plating up. Last day of winter = last soups for the year 🍲 One of the reasons I am pro soup is because the veggies/ foods are cooked through. Yes, some of the nutritional value of veggies can be degraded from cooking (namely water soluble C and B vitamins), however cooked foods are much easier to digest, so the nutrients are then easier to be extracted by the body. We are not what we eat- we are what we digest and absorb! Good digestion is the cornerstone of good health, and if your digestion is sluggish, it may be time to give it some support.
🍎 Vanilla bean cacao chip nice cream with apple crumble 🍏 quite possibly the most decadent, delicious breakfast I’ve ever made 🤤 I had my girlfriends over for dinner last night and made apple crumble for dessert. Since it’s refined sugar free and full of goodness, there’s no reason it’s not breakfast material as well as dessert. What a DREAM ❤️ although, even this was a serious feast for me aka the hungriest gal in the world. The nice cream recipe is below, but I’d recommend sharing the nice cream between 2 and going for a slightly larger serve of crumble on top 👌 I’m still perfecting the crumble recipe - I will definitely post it when I do 👅

Fridge clean out time 💥 we’re off to Italy in 4 sleeps (😱😍) so it’s time to empty out the fridge. I roasted up a couple of sad looking zucchinis, half a yellow capsicum, a handful of random baby toms that were floating around the crisper and a wedge of pumpkin I bought last week but hadn’t found a use for. I tossed the pumpkin with some chopped rosemary (also looking very sad but it did the job), olive oil and S&P. Also boiled some corn that was leftover in the the fridge. I found some chicken tenderloins in the freezer (I’m not even going to say how long they were in there...), tossed them with some paprika, chili & cumin, cooked them in the fry pan. Threw it all in a bowl with some rocket, plus a drizzle of cumin yogurt (leftover from our lamb feast last week), hemp seeds & pomegranate ✨✨✨ plenty leftover, it hit the spot and it basically felt as though it was free 😛

CHILI CON CARNE 🌶 Spicy, homey, delicious comfort food at it's best ⚡️Served with guacamole, rocket, coriander, grated cheese & home made corn tortilla chippies.  Recipe below 💃🏼 . . . . Ingredients: Olive oil 2 onions, finely chopped 2 capsicums, finely chopped 5 garlic cloves, finely chopped or minced 500g lean minced beef (we got ours from @themeatclubsg - top quality ✔️) 2 heaped tsp chilli powder 2 heaped tsp ground cumin 2 heaped tsp paprika 1 tsp dried marjoram 1 cinnamon stick 400g canned chickpeas 400g canned red kidney beans 2 x 400g canned chopped tomatoes Large handful of fresh coriander - separate the stalks from the leaves and chop both separately Splash of balsamic vinegar 1/2 cup of pickled jalapeños Method continued in the comments 👇

Salmon zucchetti with sugar snaps, peas, pine nuts, chili & parsley 🍋 a tasty little number I made up back in April (the best thing about insta - it’s literally a timeline of all our meals). I really felt like it on Thursday and I hadn’t made it for Gordo yet. It was one of those moments where the stars aligned and I had all the ingredients without going to the shops 🎉🎉🎉 this very rarely happens! Well almost everything... I made it last time with dill (one of my fave herbs) but didn’t have any so this time it was parsley who was the star 🌟 I also added leftover dill & parmesan peas I had in the fridge from dinner the other night 👌 Ingredients: 2 pieces of Atlantic salmon (Singapore based people - we got ours from @themeatclubsg and it was DELISH) 3 medium sized zucchinis, spiralised Bunch of spring onions, finely sliced Big handful of continental parsley leaves, finely chopped 1 lemon Punnet or sugar snap peas (about 2-3 big handfuls), sliced lengthways 1 red chili, seeds removed, finely sliced Chili flakes (as much or as little you like. I went about 1 tbsp) Handful of pine nuts Salt and pepper Olive oil Method: After you spiralise your zucc, lay it out on some paper towels or a clean tea towel and try squeeze out as much moisture as possible. This is important so you don’t have sloppy “spaghetti”. Season your salmon with S&P. Heat a fry pan over medium heat, add a small dash of olive oil, then throw in your salmon (skin down if it has skin). While that was cooking away I toasted the pine nuts in a separate pan cause I LOVE nicely browned pine nuts but you don’t have to do this. Once the salmon is cooked, pop it on a plate to rest. Leave the pan as is (salmon juices and all) and throw in your spring onion, sugar snaps & zucchini, toss it around then add the chili and the zest of the lemon. Combine through and cook for about 1 min. While that’s cooking, slice the salmon. Add the parsley, pine nuts, salmon & chili flakes to the pan, toss through and season to your liking. Voila! Throw it on a plate and give it a big squeeze of lemon juice. After this pic I also gave it a sneaky bit of finely shaved Parmesan to bring it all together. Delish 👌

The sweet potato & goats cheese smash is a specialty of Gordo's which we haven't made in years, and the rainbow bulgar salad was a new invention from me, born yesterday as a result of what was in the fridge and what looked good at the shops 😛 The recipes are in the comments below and they are VERY approximate. I'm still not quite in the habit of writing things down and measuring them. Bear with me, I'll get it eventually! 🕺

SUPER BOWL💥 Super bowl, Buddha bowl, vitality bowl, nourish bowl - call it what you will. To me, it’s whatever is floating around your fridge or whatever you’ve got a hankering for, strategically arranged in a bowl, and then (post photoshoot) mixed and mushed together so that it becomes very unattractive. Doesn’t make a huge amount of sense but it’s very satisfying 🤷🏼‍♀️ this baby features sweet potato chippies, raw zoodles, mixed rice, baby toms, balsamic roasted brussels, spinach, avo, rocket pesto, peas with dill & parmesan, lemon & hemp seeds ✨ usually I would add some sort of “protein” but tonight my bod was telling me this would enough. My last supper in Aus last night 👉 Spiced whole cauliflower & warm chickpea salad (recipe from BBC Food - online), served with turmeric chicken tenderloins, haloumi & flatbreads 😍 all courtesy of my beautiful Mumma ❤️ The recipe is a definite keeper 🤤 can’t wait to cook it back in Singas! I could bang on all day about what an amazingly versatile vegetable cauliflower is. Salads, roasts, pizza, mash, rice... is there anything cauli can’t do?!
