Paneer and spinach stuffed parathas! As I mentioned in my stories last night - I prefer making my parathas healthy so they're a guilt-free indulgence. To make parathas or stuffed parathas healthy you simply make the dough, shape it, stuff it, and roll it WITHOUT OIL or any fat. Use only a few drops of ghee or butter when cooking them. Since I make these for breakfast the night before - I even cook them without oil. So when I'm heating them up, I do it with a few drops of ghee or butter. Healthy heaven.
100g paneer, grated
2 handfuls of spinach - wash it, blanch it, cool it, squeeze out the water, chop it
1/2 teaspoon finely chopped ginger
1-2 green chillies, finely chopped
1/2 teaspoon mint leaves (pudina), finely chopped
1/2 teaspoon raisins, finely chopped.
Salt to taste
This makes enough filling for 6 parathas. Divide into 6 portions. Take a ball of roti dough, flatten it like a disc, place the filling, seal it. Carefully roll it out. Make sure you roll it at least 1/4" or 1/3" thick. Cook on a tawa on low-medium heat till done.
Adding raisins gives it this soothing twist cuz between bites of savoury, hints of ginger, mint, and chilli, you detect this faint presence that's slightly sweet. And it adds SO much balance to the palate. Totally my thing. .
