This aloo-methi-palak (potatoes-fenugreek-spinach) dish is power packed with nutritional value. It is commonly eaten with rotis or chawal-Dal. Fenugreek herb has been used for thousands of years for their medicinal qualities. It is high in fiber and minerals. A little goes a long way!
Recipe as follows:
3 cups of chopped spinach
3-4 small potatoes, diced into small chunks
1 cup of methi leaves/1 tbsp dried methi leaves
1 green chili pepper, slit in half
1/4 cup onions, chopped
1tsp cumin seeds
1/4 tsp fenugreek seeds
1/4 cayenne pepper
1/4 turmeric powder
Salt to taste
Heat 2 tbsp olive oil on medium heat. Add onions, lightly brown it. Add cumin and fenugreek seeds, wait till it starts spluttering. Add potatoes, spinach and fenugreek leaves and green chili. Next add spices and salt, stir and mix. Cover and cook on low heat for 20 minutes.
