If you’ve been following the story, earlier this week I revealed an egg custard dish, and to create today's dish I simply baked it until golden crispy and drizzled with my Paleo Whole30 friendly sesame sauce. Wow! Did she just make tofu? 😱 This is a dish called Chinese Egg Custard (aka egg tofu). It uses no soy at all just eggs + milk cream. The word “tofu” is used to describe the silky smooth texture of the custard. You can make it savory or sweet, depends on the dressing. The custard is milky smooth and can be made in Instant Pot or Stovetop (see today’s story). It’s low carb and Keto paleo friendly. Whole30/Paleo Creamy Chicken Kale soup! With temperatures dropping, this soup is SO comforting and has all the flavors you could want in a delicious & nutritious soup. Dinner... WOW! I tried a variation on a new recipe tonight and LOVED it 😍 The original recipe is from the #iheartumami website, but I used what I had, and varied it for our taste. I marinated a pound of beef tips in 2 1/2 TBS coconut aminos, 1 TBS fish sauce, 2 tsp sesame oil, a tsp minced garlic, a tsp ground ginger, and 1/2 tsp red pepper flakes for about a half hour. I heated up a tablespoon, or so, of ghee (swipe to check out how pretty and yummy looking mine turned out on Saturday) in my iron skillet and sauteed the beef in it's marinade juices on medium-ish until almost done. While that was sauteing, I nuked a bag of riced veggies - cauliflower, carrot, red pepper, green onions, peas - for about 4 minutes. I then tossed it all together in the pan and cooked a few more minutes. So delicious!! We'll definitely be having again. Best meal we’ve had in a while! . I’ve been on a nonstop streak of fails and finally hit a home run. . Made @iheartumami.ny Japanese Roasted Chicken Legs, crispy brussels, and cauli quinoa rice with makeshift furikake . I ended up cooking them all on a sheet pan in the oven instead on searing them in a pan first. Roasted at 400 skin side down for 20 mins, flipped, roasted another 20 mins at 425 skin side up and finished a couple mins with the broiler on for that crispy skin 👌 . Chopped some Brussels, sprayed with avo oil, salt, pepper, and then air fried at 350 for 8-10 minutes. I let them sit in the fryer for a few minutes so the heat will cook and soften them a bit. . Been making cauliflower quinoa lately and our family just loves the texture of the two together One cup quinoa, 2 1/2 cups water, and one single serving bag of frozen cauliflower from @costco Bring to a boil, simmer while loosely covered for 15 mins, and let rest off heat for 5. . I grew up with furikake on my rice but if you read the ingredients on most of those mixes... there’s some questionable stuff in there. So I thought I’ll chop up my kids favorite seaweed snack pack and mix it with @traderjoes #ebbseasoning Worked perfectly!! . Top with coconut aminos if desired 😋 . This meal will def be on rotation.... and I can find deals @wholefoods on these whole chicken legs a lot of the time. Being a prime member def has its perks! Ok so I don’t know if this classifies as a “haul” but still, excited over here 🙌🏼 If you follow my favorite, brilliant, delicious recipe-making queen @iheartumami.ny you know that coconut aminos are a #whole30 necessity. I usually buy the ones from @traderjoes because they are cheaper but the thrive market brand is my favorite! It is the most flavorful and least sweet brand imho. I’m not a fan of using coco aminos by itself, my brain is hardwired to expect it to taste like soy sauce and it just doesn’t, but it is great in sauces and marinades! Pumped to try the jalapeño @chomps 🌶 You know I love me a chomp. I’ve talked about the @primalkitchenfoods ketchup before, because it is amazing, it tastes like what you remember ketchup tasting like. And I’ve never had this garlic aioli mayo but I’m pretty sure it’s gonna be 💣 Not sure if I’ve mentioned this @thenewprimal bbq sauce before but it is SO GOOD. When I started whole30-ing I was not a fan of vinegary sauces, and the @whole30approved bbq and ketchups always ended up tasting very vinegary to me. Over time though I’ve noticed that my taste buds must be evolving because now I actually enjoy the taste and might even pick a vinegar over a sweet bbq. That being said, this bbq sauce is the perfect blend of sweet, spicy & a teeny bit vinegary. They also have a mustard bbq that is delightfully tangy. Last night for dinner, I made this Brocolli Rice recipe from @iheartumami.ny for a side!! It was really yummy and a new and different way to get an extra serving of veggies! Best of all, it took less than five minutes to make! .. .. It’s Paleo, keto-friendly, gluten-free, sugar-free, vegan ....ALL THE THINGS🙌🙌🙌🙌 Most grocery stores now have bags of “riced” Broccoli, and it’s so easy just to dump it in a skillet ....no chopping or prepping required!👍💯🙌 .. .. Expectations can really make all the difference in whether you like something or not! So, for Riced Brocolli, don’t expect it to taste anything like rice at all! This was crunchy and flavorful and more like a crunchy stir-fry or even kind of a warm broccoli salad! I loved it! Especially with the crunch of the slivered almonds! .. .. Here is what’s in it!!! 🥦 @traderjoes Riced Brocolli. 🥦garlic. 🥦 coconut Aminos. 🥦Himalayan pink salt. 🥦 Toasted Sesame Oil. 🥦grated ginger 🥦 squeeze of lime 🥦 slivered almonds 🥦 toss with green onions or cilantro (I used both😜) .. ..
