Best meal we’ve had in a while!
I’ve been on a nonstop streak of fails and finally hit a home run.
Japanese Roasted Chicken Legs, crispy brussels, and cauli quinoa rice with makeshift furikake
I ended up cooking them all on a sheet pan in the oven instead on searing them in a pan first. Roasted at 400 skin side down for 20 mins, flipped, roasted another 20 mins at 425 skin side up and finished a couple mins with the broiler on for that crispy skin 👌
Chopped some Brussels, sprayed with avo oil, salt, pepper, and then air fried at 350 for 8-10 minutes. I let them sit in the fryer for a few minutes so the heat will cook and soften them a bit.
Been making cauliflower quinoa lately and our family just loves the texture of the two together
One cup quinoa, 2 1/2 cups water, and one single serving bag of frozen cauliflower from @costco
Bring to a boil, simmer while loosely covered for 15 mins, and let rest off heat for 5.
I grew up with furikake on my rice but if you read the ingredients on most of those mixes... there’s some questionable stuff in there. So I thought I’ll chop up my kids favorite seaweed snack pack and mix it with @traderjoes #ebbseasoning
Top with coconut aminos if desired 😋
This meal will def be on rotation....
