What do you do when you have an abundance of fresh Mint in your garden? Make “Pina Colada Ice-blocks” of course!! 🍍
As the weather is warming up I always like to have a stash of ice-blocks handy for cooling off but also fill them with fresh ingredients to boost fruit intake.
These easy to make ice-blocks contain fresh pineapple, coconut cream, fresh mint leaves and a dash of honey or rice malt syrup if you want to make them a little sweeter! Yum!

3 cups fresh pineapple
1 x 200g can coconut cream
1 cup fresh mint leaves
2 tablespoons raw honey or rice malt syrup (Optional)
Blitz ingredients in a powerful blender until it becomes a smooth consistency. Pour into ice-block moulds and freeze overnight until completely set! Viola!

sleeves, making homemade ice blocks an easy treat. This way I know exactly what’s in them and can control the sugar content Ilija consumes.
I simply used 1 cup strawberry, 1 cup raspberries, 1 cup mango, 2 cups pineapple, 1 cup coconut water, 1 tbsp maple syrup. I blended it all together and adjusted the thickness by adding a little water. 👌

Summer Days call for ice blocks
I made these with sofia and hazel a few days ago, just squezzed oranges from a friends tree and frozen berries makes for a nice cool treat.
Our jbt program has so many ideas like these for kids sofia loves finding the berries as she eats them.
