As promised here’s my recipe for the pineapple honey molasses barbecue sauce I made this past weekend....
2 c ketchup,
1/2 c Apple cider vinegar (I used @braggslivefoodproducts
because I always have it on hand, but regular ACV will do),
1 c fresh squeezed orange juice,
5 tbsp brown sugar,
2 tbsp honey,
2 tbsp blackstrap molasses (excellent source of iron and calcium, but definitely use regular molasses if you don’t have blackstrap on hand),
1 tbsp @bragglivefoodproducts
aminos (or regular soy sauce, again this is just something I always have on hand),
1 tbsp Worcestershire sauce,
1/2 small onion sautéed,
1 tsp garlic paste,
1/2 tsp ginger paste,
1 tbsp smoked paprika,
1/2 tsp cayenne (or to taste, my daughter always says I should use more, but she’s a hot head),
1/2 tsp red pepper flakes (or to taste),
1/2 tsp black pepper,
1 cup pineapple chunks...
In this recipe I used fresh fruit, if you decide to use bottled juice or canned pineapple just be mindful of the added sugar....
Combine all ingredients in a non-reactive saucepan, bring to boil then reduce to simmer for two hours, stirring frequently. Let cool then blend until smooth or desired texture. Recycle old ketchup bottle to store extra sauce.
