Baseline Burcha. This vegan burcha recipe is a great start, snack or lunch on any day. Have a go at playing with colours to dress it up! On Mondays I work on my Base Chakra so I've chosen red apple. Burcha mix:
1/4 cup flax seeds
1/2 cup sesame seeds
1/2 cup sunflower seeds
1/2 cup chia seeds
1/2 cup shredded coconut
1/2 cup cacao nibs
1/2 cup pumpkin seeds
1/2 cup hemp seeds
1/4 cup sultanas
1/2 cup diced dried mango or apricot
1/4 cup activated buckwheat (can substitute for oats, puffed rice or quinoa)
Process sultanas and mango/apricot in food processor into small pieces
5 cups total = approx 13 servings
Soak 3/4 cup of this mix in 1/2 cup almond milk and 2 tbs coconut yogurt overnight. Top with fresh strawberries, kiwi fruit, mangos or frozen crushed raspberries, blackberries or blueberries.

Just found out that I'm anemic (and failed my 1 hour glucose) so I have to pump up my iron numbers. Dinner tonight consisted of a salad with spinach, swish chard, and kale among some other stuff, steak, and spinach. This one meal alone has 43mg of iron and a good percentage of vitamin C which helps with the absorption of iron. (FYI, calcium hinders absorption of iron) I ate this entire meal even though it taught me something, I don't like cooked spinach!

SUNFED CHICKEN FREE CHICKEN BUDDHA BOWL ✨
Enjoy a luxuriously lazy Saturday with this quick, easy and deliciously filling Sunfed Buddha Bowl 🏵️
Cooking + Prep: 25 mins
½ box Sunfed Chicken Free Chicken
1/2 white onion, finely sliced
1 cup cooked quinoa
2 carrots, julienned or spiralled
8 silver beet leaves, stems removed and chopped
1 TBS vegan aioli
2 TBS sauerkraut
2 tsp sesame seeds
1 TBS tamari
1 tsp sesame oil
1/4 tsp rice wine vinegar
1 TBS chopped sushi ginger
Cashews to garnish
1. Cook the quinoa as per packet instructions. If boiling from scratch, start this first.
2. Meanwhile, heat a little oil in a pan and place Sunfed Chicken Free Chicken in.
3. Add the onion, tamari, sesame oil, sesame seeds, rice wine vinegar and sushi ginger to the pan and stir fry until Sunfed chicken slightly crispy.
4. Place the chopped silver beet in a bowl and massage or stir through the vegan aioli.
5. Begin to build your bowl with all the components.
6. Serve warm.

- 2 tbs Grilo (your choice)⠀
- 8 pitted medjool dates⠀
- 2 cups almond meal⠀
- 2 tbs chia seeds⠀

Combine all ingredients in a blender or food processor, until it turns into a course flour. Then place the mixture in a bowl and mix with your hands until it gets stick. Roll into balls and coat with raw cacao, coconut flakes, chia seeds or whatever goodie you find in your pantry!⠀
