Grocery shopping today so I can meal prep tomorrow! As you can see I’m focusing on lots of fruits and veggies because I’ve been struggling with food choices lately. I also got some chicken and eggs for lean proteins. I’m going to try cutting out most refined carbs and see how that goes. Which is hard bc 🍞 is life, but being healthy is so more more important. So for my meal prep I’m thinking of making some zucchini lasagna, chicken broccoli bake, buffalo chicken, lots of veggies and salads for this week. New year, new eating plan Using only my allowed ingredients I made breakfast cookies - 65g quick cooking oats -1/4tsp baking powder - cinnamon - 1-2tbps Walden farms calorie free raspberry jam - 1/4 - 1/3cup hot water Mix all ingredients together EXCEPT water. Once well mixed slowly add the hot water while stirring. You want to have a porridge like consistency - no to liquidy, otherwise you wont get cookies. Let batter sit while oven preheats to 350°. Stir again before dishing out onto baking sheet. 1 mixture is all yours;1 serving! Yields 17 cookies...depending on how big you want to portion them. Lemon Oregano Spaghetti Squash Makes 4 servings Per serving 1 Lean protein 3 vegetables 3 condiments 1. 1 large spaghetti squash (approximately 2 pounds) – use 5 cups cooked squash 2. 4 boneless, skinless chicken thighs, pan-seared and diced – total weight 28 ounces 3. 10 sprays olive oil spray 4. 1 cup frozen kale 5. 1 tablespoon lemon zest 6. ¼ cup lemon juice 7. 1/2 tsp salt 8. 1 tsp oregano 9. 1 tsp crushed red pepper flakes Instructions Puncture spaghetti squash rind about 20 times to allow steam to vent while cooking. Place spaghetti squash on a microwave-safe plate and heat for 8 minutes in microwave Check for doneness by pressing lightly on spaghetti squash rind. Rind should yield gently to pressure. Heat for an additional 2-4 minutes if spaghetti squash is still hard. Allow spaghetti squash to rest for a few minutes until cool enough to handle. Slice spaghetti squash lengthwise and scoop out seeds with a large spoon. Use a fork to scrape out spaghetti squash flesh from each half and set "spaghetti" aside. Add 2 tbs olive oil to a large sauté pan over medium heat. Add spaghetti squash, kale, lemon juice, lemon zest, spices, and diced chicken to pan. Cook for 10 minutes, stirring occasionally. African Peanut Soup with greens. This soup has become our family’s favorite since 2012, when our whole family went vegan. We lost an incredible amount of weight just eating healthy vegan meals. This soup will rock your taste buds!!! So freaking delicious 🤤 This recipe is for about 8-10 large portions, and I used: 1 large onion diced 12 garlic cloves minced 8 celery stalks diced 9-10 medium sweet potatoes diced 3 cans coconut milk 3 (14.5 oz) cans diced fire-roasted tomatoes 2-3 Tbsp soy sauce or Bragg’s liquid aminos Salt and pepper after taste 2-4 Tbsp Berbere mix after taste Pinch of cayenne pepper 1.5 cup peanut butter 6 cups veggie broth or water Chopped kale, spinach or your favorite greens. 4-5 Tbsp chopped cilantro Roasted peanuts for garnish. (I didn’t have cilantro and roasted peanuts either) . Sauté the onions, garlic and celery until soft, then add the sweet potatoes and the berbere mix and saute 2-3 min. Add tomatoes, soy sauce, coconut milk and the water (or the veggie broth if using) bring to a boil, then cover and simmer until potatoes are soft, about 15-20 min. Put the peanut butter in a bowl and add some hot soup from the pot little by little, mixing carefully until liquid. Pour it all in the pot with soup and mix. Fix with salt and pepper, add a pinch of cayenne if you like it spicy. You can add the chopped cilantro mix well and serve as is or bring to a boil and the greens. Reduce the heat again for another 2-4 min or until the greens are wilted a little but not much. Pour in bowl and garnish with roasted peanuts and a little cilantro - which I didn’t have! Hope you give this a try. Let me know if you do and how you like it. . You can totally reduce this recipe to half. I make a lot always because we love to eat, and this soup is unbelievably good! Cheesy Cauliflower Au Gratin 👇🏻 Makes 8 servings Ingredients: 4 cups raw cauliflower florets 4 tbsp butter 1/3c. heavy whipping cream ¼ tsp salt ½ tsp pepper 6 ounces low fat cheddar cheese (I use Fresh & Healthy Brand) Directions: In a microwave safe dish, combine the cauliflower, butter, cream, salt and pepper and mix thoroughly. Microwave on high for about 25 minutes, or until tender. (You can always start with 10 minutes, then 10 more, then 5 more if you think it is necessary. Some microwaves cook different than others. You want it soft enough to mash with a fork. The longer it stays in, the thicker the sauce gets.) Remove from the microwave and mash with a fork or potato masher. Lay the slices of cheese across the top of the cauliflower. Microwave for another 2-3 minutes or until cheese has melted. EGGPLANT SKILLET Serves 4 Per serving 1 Lean protein 2 vegetables 2 condiments 1 ¼ lb ground beef 1/4 cup chopped onion 1/4 cup chopped celery 1 8oz can (1 cup) tomato sauce 3/4 cup water 1/2 - 3/4 tsp oregano 1/2 - 3/4 tsp chili powder 1 small eggplant (about 1 lb) cut into 1/2" slices 4 ounces of low fat cheddar Cheese 1 tsp Paprika Cook beef, onion and celery until meat is browned. Drain off excess fat. Stir in tomato sauce, water, oregano and chili powder. Season eggplant slices with salt and pepper. Arrange on top of meat sauce. Cover and simmer on low until eggplant is tender, about 25-30 minutes. Add more water to the side of the skillet if it seems the sauce is getting overcooked. Remove from heat. Top with cheese and sprinkle with paprika. Teriyaki Tuna Kabobs Makes 4 servings PER SERVING 1 Leanest protein, 3 Greens, 2 ½ condiments, 2 fats • 4 Ahi tuna steaks (10 ounces each), cut into 1-1/2-in. chunks • 1 medium sweet red pepper, cut into 1-in. pieces • 2 large leeks, cut into 1-in. pieces MARINADE/DRESSING • 1/4 cup minced fresh cilantro • 4 teaspoons sesame oil • 3 tablespoons lime juice • 2 tablespoons soy sauce • 4 teaspoons extra virgin olive oil • 1 tablespoon minced fresh gingerroot • 2 garlic cloves, minced SALAD • 1 package (5 ounces) fresh baby spinach • 1 medium sweet yellow pepper, cut into 1-in. pieces • 1 cup cherry tomatoes, halved DIRECTIONS 1. Thread tuna chunks onto four metal or soaked wooden skewers. Thread pepper and Leek pieces onto four more skewers. Place skewers in a 13x9-in. baking dish. 2. Whisk together marinade ingredients. Reserve half of mixture for salad dressing. Pour remaining marinade over skewers; refrigerate, covered, 30 minutes. 3. Something about ball slams is very therapeutic. Other than that it’s been hard to keep a routine lately. It’s easy to show a highlight real of me; eating clean and hitting the gym everyday but nope, I’m not perfect. Ive indulged in some treats, skipped some workouts and haven’t been as good with sleep. Feeling a bit funky actually but it’s ok. We all venture from our routines from time to time. I have had people ask me, “do you ever cheat on your diet or eat fast food?” I always laugh because if you truly knew me you’d know how difficult it is for me to be mindful of my food choices! I am a FOODIE, I am the person at the table that can call it on what spice/seasoning is in my food and appreciate the marriage of flavors on an entire different level than most people. So if I have ever come across as the girl who seems perfect in all her ways by no means I’m not...yes I do eat some treats and will probably have some this weekend with friends. Tried out a new oatmeal recipe this morning and I can’t believe I’ve never made it this way before! I used 1/2 cup oats, 1/2 cup almond milk (so much better when it’s homemade), a splash of water, about a tsp of cinnamon.... ⁣ ⁣ 🌟and the game changer, DATES 🌟⁣ ⁣ I mashed in two of them 😊 they are easy to mash once they have gotten warm. I cook my oats about medium heat on the stovetop and stir the entire time so they don’t burn. This will make your oatmeal super creamy and add a nice sweet taste 😛 highly recommend trying, especially if you aren’t so sure about oatmeal! I promise you will love ☺️

Yumbo Gumbo Ingredients: 10 oz Crabs, fresh (raw) 10 oz Shrimp, peeled, deveined (raw) 1 cup Cooked Tomatoes, canned 1 cup Raw Okra 1/4 cup Raw Peppers, Green 1/4 cup Raw Peppers, Red 1/2 cup Tomato Juice, low-sodium 3/4 cup Water 1/4 cup Chopped Onion 2 sprays Non-stick Cooking Spray 1 tsp Cajun Seasoning 1/2 tsp Hot Sauce Preparation: 1. Prep the ingredients: Chop the green pepper, red pepper, and onion. Peel and devine shrimp if necessary. 2. Bring a large pot to medium heat and add 2-3 quick sprays of non-stick cooking spray. 3. Add bell peppers and onion. Cook for 3 minutes, stirring occasionally. 4. Add tomatoes and low-sodium tomato juice. 5. Stir well until mixture begins to bubble. 6. Add okra, cajun seasoning, and hot sauce. 7. Stir and bring to a boil. 8. Reduce heat to low, cover and simmer for 10 minutes. 9. Add shrimp. Continue to simmer until shrimp is pearly and opaque, 3-4 minutes. 10. Add crab meat and 3/4 cup water. 11. Increase heat to medium for the mixture to return to a boil. 12. Remove pot from heat, cover, and let thicken for 5 minutes. Allow to cool and enjoy! Potato nachos 😝⁣⁣ ⁣⁣ One of my favorite dinners that I can only have about once a month because it’s so filling and I don’t ever wanna get sick of it 😂 tried a new mock meat this time and it was awesome! It included mushrooms, cauliflower, walnuts and spices 😋 it even looks like real meat 👀 The only thing I will do different to the meat next time is add some cooked onion! Besides that, I topped with cashew cheese, garlic mayo, and all my favorite veggie toppings! All of this made with 100% Whole Foods ☺️
