Obsessed with Kalonji seeds at the moment - they are little black seeds also called nigella seeds that go well with olive oil and tomatoes 🍅 among so many other things. Amazingly good for your health - there are hundreds of studies showing major health benefits. Spinach Crust Wraps! 2 C raw spinach (2 green) 1/2 C grated low-fat mozzarella (1/2 leaner) 1 egg (1/3 lean) fresh basil / oregano to taste (count as condiments). Blend cheese and spinach together in a food processor. Stir in the egg and herbs. Spread onto parchment paper (I'd say about 1/4" thick, if that - make it fairly thin). Bake at 400 deg for 15-18 minutes. This makes a lovely flexible crust, which you could then add pizza toppings to, but it also makes an amazing wrap! add: 1 oz chicken breast (~ 1/5th lean to make 1 full lean with the crust). 1/4 c diced cherry tomatoes (1/2 green) 1/2 C chopped lettuce (1/2 green) 1 TBSP ranch dressing (1 fat) Total: Full lean & green + healthy fat + condiments (depending on how much herbs you add). SKILLET CHEESY CHICKEN AND VEGGIE “RICE” Makes 2 servings Per serving 1 Leaner protein 3 Greens 2 ½ condiments 1 fat • 13 ounces boneless, skinless chicken breast, cubed small • 1/2 teaspoon kosher salt • 1/4 teaspoon garlic powder • ¼ black pepper • 2 teaspoons olive oil • 2 cloves crushed garlic • 1/4 cup chopped green onion • 12 ounces riced cauliflower and broccoli (Try Green Giant Riced Cauliflower Broccoli) • 1/2 cup reduced fat sharp cheddar DIRECTIONS: Season chicken with 1/4 teaspoon kosher salt, garlic powder and black pepper. Heat a large nonstick skillet over high heat. When hot add 1 teaspoon oil and add half of the chicken. Cook 2 to 3 minutes on each side, until no longer pink in the center and browned on the edges. Set aside. Repeat with remaining chicken. Add the remaining 1 teaspoon of oil, onion and garlic and cook over medium heat about 2 minutes, until soft. Add the riced vegetables (frozen), 1/4 teaspoon salt and pepper and cook 5 to 6 minutes, until heated through. Return the chicken to the skillet, top with the cheese and cover. Garlic Butter Meatballs with Lemon Zucchini Noodles Ingredients: 20 oz raw ground 95-97% turkey (2 1/2 Leaner Leans) 1/2 Cup reduced fat mozzarella cheese (1/2 Lean) 3/4 Teaspoon garlic powder, divided (1 1/2 Condiment) 1 Teaspoon dried basil (1/2 Condiment) 1/2 Teaspoon dried oregano (1/2 Condiment) 1 bouillon cube (1 Condiment) 1/2 Teaspoon salt (2 Condiments) 1/4 Teaspoon pepper (1/2 Condiment) 1 Cup chopped cilantro (1 Condiment) 4 1/2 Cups zucchini noodles (9 greens) 2 1/2 Tablespoons light butter, divided (2 1/2 Healthy fats) 1 Tablespoon lemon juice (1 1/2 Condiment) 1 Tablespoon Frank’s hot sauce (1/2 Condiment) Directions: In a large bowl, combine ground turkey, cheese, 1/2 tsp garlic powder, basil, oregano, bouillon cube, chopped cilantro, salt and black pepper. Mix well with your hands or fork and form medium balls. Arrange on a plate and set aside. Melt 1 1/2 tablespoons butter in a large skillet over medium-low heat. Cook the meatballs for 8 – 10 minutes on all sides, until browned and cooked through. While cooking, baste the meatballs with the mix of butter and juices. Remove to a clean plate and set aside. In the same skillet melt remaining 1 tablespoon butter; then add lemon juice, hot sauce, 1/4 tsp garlic powder. Add the zucchini noodles and cook for 3 or 4 minutes, stirring regularly, until zucchini is done but still crisp and juices have reduced a bit. Push zucchini on one side of the skillet and add the meatballs back to the pan and reheat for a minute or two. Serve immediately. Another delicious healthy meal. Chicken crust pizza. 1 full lean and green with 1 condiment 3 oz cooked and shredded chicken breast. (1/2 lean) 2 tbsp egg beaters 2.64 oz very fine cauliflower rice (1 1/2 veggie) 1 tbsp parmesan (1 condiment) 1/4 cup Rao Marinara sauce (1 veggie) 2 oz low fat shredded cheese (1/2 Lean) veggies for topping. (1/2 veggies) Combine chicken, egg beaters, cauliflower rice, and parmesan. Form a pizza crust on either parchment paper or a silicone baking mat. Bake at 400 for approximately 20 min. Remove from oven and flip over. Top with Marinara sauce, cheese and veggies. So I guess today is “Happy Relaxation Day.” I hope many of you took advantage! While I certainly did not do a lot of relaxing, it was my exercise rest day and my husband planned, prepped, and cooked a delicious dinner. Plus he looks cute. I’ll take it! Cajun Shrimp🍤, Sausage🐷, and Vegetable🥒Skillet 👇🏻 Makes 6 servings Per serving 1 Leanest 1 Healthy Fat 3 Greens 2 1/3 Condiment INGREDIENTS 28 ounces cooked shrimp 12 ounces jennie-o turkey sausage 3 Cups zucchini 3 Cups yellow squash 1 Cup asparagus 2 Cups red bell pepper ¼ Teaspoon salt ½ Teaspoon pepper 2 Tablespoons olive oil 2 Tablespoon Cajun seasoning INSTRUCTIONS In a large bowl add the shrimp, sausage, zucchini, yellow squash, asparagus, bell pepper and salt and pepper. Add olive oil and cajun seasoning and toss until coated. Add to a large skillet and turn to medium high. Cook for about 5-7 minutes until the shrimp is pink and the vegetables are tender. Chicken Burritos Cauliflower Tortilla Ingredients: 2 cups of cauliflower grated to look like rice ½ cup egg beaters 1/8 tsp salt ¼ tsp pepper * Note: This makes 2 servings of tortillas, 3 tortillas per serving Burrito Ingredients: 3 cauliflower tortillas 3 ounces cooked chicken 1 ounces (1/8 cup) low fat Mexican Cheese shredded 1 ½ ounces avocado 2 tbs cilantro *Note: this makes 1 serving. Cauliflower Tortilla Directions: Preheat oven to 375 degrees and line a baking sheet with parchment paper. Grate cauliflower to get a texture slightly finer than rice. (Once it’s riced, measure it to make sure you have 2 cups packed.) Place riced cauliflower in a bowl and microwave for 2 minutes and stir, then another two minutes and stir again. Then place in a dish towel and squeeze excess water out as hard as you can. Place drained cauliflower back in bowl and add egg beaters, salt and pepper. Mix well. Spread mixture onto a baking sheet into 6 small fairly flat circles. Place in over for 10 minutes then pull out of oven and carefully peel them off the parchment and flip them and place back in the oven for 5-7 more minutes. Once they are done place them on a wire rack to cool slightly. Burrito Directions: Mix the shredded chicken, cheese, cilantro, and the diced avocados. Lay a cauliflower tortilla flat on a plate and add ¼ of the mixture, form a roll. Repeat the process for all three tortillas. Spray pan with 10 sprays non-stick pan spray and heat to medium-high heat. Place all three tortillas on the pan and cook for 2 minutes. Flip on the other side and cook for another minutes or until the burritos are golden in color. Serve warm. Whole30 egg free breakfast! Not that I mind eating eggs though. This was inspired by a recipe I saw on the package of @applegate chicken apple sausage and I thought it sounded great for breakfast! I loosely followed the recipe and here's what I did: I cooked up a sliced chicken apple sausage link and set it aside. Then I cooked some rice cauliflower and sweet potato and added onions, spinach and a sprinkle of raisins all cooked in a little olive oil. I seasoned it with salt, pepper, garlic powder and sage then added the sausage back in. Strawberry Meringue Cookies Makes 8 servings Per serving ¼ ounce protein 1 ½ condiments ½ optional snack 7 egg whites 1/4 cup Lieber's Sweetees 1tsp. vanilla 1 package sugar free strawberry jello Preheat oven to 350 degrees F. Line cookie sheet with parchment paper Beat Egg Whites until fluffy.Gradually add sweetner, jello and vanilla. Continue beating until soft peaks form. Garlic Butter Meatballs and Zoodles Ingredients: 20 oz raw ground 95-97% turkey (2 1/2 Leaner Leans) 1/2 Cup reduced fat mozzarella cheese (1/2 Lean) 3/4 Teaspoon garlic powder, divided (1 1/2 Condiment) 1 Teaspoon dried basil (1/2 Condiment) 1/2 Teaspoon dried oregano (1/2 Condiment) 1 bouillon cube (1 Condiment) 1/2 Teaspoon salt (2 Condiments) 1/4 Teaspoon pepper (1/2 Condiment) 1 Cup chopped cilantro (1 Condiment) 4 1/2 Cups zucchini noodles (9 greens) 2 1/2 Tablespoons light butter, divided (2 1/2 Healthy fats) 1 Tablespoon lemon juice (1 1/2 Condiment) 1 Tablespoon Frank’s hot sauce (1/2 Condiment) Directions: In a large bowl, combine ground turkey, cheese, 1/2 tsp garlic powder, basil, oregano, bouillon cube, chopped cilantro, salt and black pepper. Mix well with your hands or fork and form medium balls. Arrange on a plate and set aside. Melt 1 1/2 tablespoons butter in a large skillet over medium-low heat. Cook the meatballs for 8 – 10 minutes on all sides, until browned and cooked through. While cooking, baste the meatballs with the mix of butter and juices. Remove to a clean plate and set aside. In the same skillet melt remaining 1 tablespoon butter; then add lemon juice, hot sauce, 1/4 tsp garlic powder. Add the zucchini noodles and cook for 3 or 4 minutes, stirring regularly, until zucchini is done but still crisp and juices have reduced a bit. Push zucchini on one side of the skillet and add the meatballs back to the pan and reheat for a minute or two. Serve immediately.
