This time of year is insanely busy for me but as always it is still extremely important for me to stay on track with healthy meals. These might not be the most Instagram worthy food pictures but it was all so delicious none the less!
Being vulnerable has nothing to do with weakness.
Vulnerability means you fall easily. You see the best in people. You get attached easily, because you give yourself the freedom to feel.
Vulnerability means you’re comfortable opening up to other people. You are willing to look someone in the eyes 👀 and spill your soul out.
Vulnerability means you care deeply about things. You don’t want to lose what you have, because you love 💕 what you have. You love your life, at least most of it and you aren’t willing to loosen your grasp on them.
Vulnerability means you are comfortable crying over things that upset you instead of pushing away all your emotions.
Vulnerability means you have nothing to hide. The people closest to you know your dreams, your hopes, your fears. They know who you really are. You have given them permission to dig deep inside yourself.
Vulnerability mean you know who you are as a person. You realize you aren’t indestructible. You aren’t superhuman. You are mortal and full of flaws. But you are still beautiful 💖. Vulnerability means you have doubts. You think so highly of other people, if doesn’t mean you hate yourself 🙅🏼♀️. It means you see room for improvement and growth.
Vulnerability means you have huge heart ❤️ . Caring about others. Wanting the best for the world 🌎. Vulnerability means you are human so don’t ever feel bad about shedding a tear 😪. About admitting that no you aren’t fine. About letting the truth out instead of pretty little lies.
Be proud of being vulnerable because it makes you beautiful and exceptional.

Started this weight-loss effort not so much as an effort to be thin or chase male-gaze-focused beauty standards, but as a way to get my body into a physical and spiritual space that I am comfortable being in. It started as a goal to avoid being hot, sweaty, and sticky uncomfortable when I am in Oklahoma's miserable heat & humidity this fall. Also as a way of proactively slowing the degenerative process of an aging body. I want to enjoy the next half of my life fully, without abandon, with as little pain and stiffness as possible, with as much free-range of motion and strong, capable joints and limbs to carry myself gracefully to my grave. I have never been more uncomfortable in my life. I have never had more of those feelings in my the pit of my stomach that big things are about to happen. I’ve never had to face more fears.
I’ve never felt happier or more alive.
Looking fears in the face and following my gut, following what I know is right, has allowed me to push myself and challenge myself in new ways I didn’t think possible. Sure, I still have fears every day but every time I overcome one, it gives me confidence and I can overcome the next.
In business, in relationships in my own personal nutrition and fitness, getting out of my comfort zone is the number one thing that is pushing me to grow and allowing me to be more in tune with what I want out of life more than ever.
Having the right tribe around me has been pivotal in facing fears and taking leaps. I’m feeling SO grateful for relationships I have and am building every day because those people we surround ourselves with are a huge piece in the way the game of life plays out.

Sometimes you just really need to have a moment for yourself, ya know? Go do something that you love to do, do it by yourself, or do it with your family, or with your friends, whatever makes you happy. Make your head and your heart healthy, do what it takes to make yourself healthy.
As I mentioned in my stories yesterday, now that Hubs is home and my mom is no longer visiting, I am doing what I can to get myself and our home back into routine. I need to clean everything. I need to do multiple loads of laundry. I need to meal plan and grocery shop for next week. I need to start making lists to prepare for our vacation. And I need to use about 1 billion zucchini from my garden. So, I am not going to stress over perfect meals the rest of this week. I am going to use up what we have (which is a bit low, but enough to make meals) and eat what sounds good and is easy to make. Yesterday, I shared this huge yogurt bowl with my little. Yogurt, granola, bananas, flaxseed, and hemp powder. It was filling, tasty, easy to make, and easy to clean. This morning, I had cereal and my little one had oatmeal. It’s all about balance, so I can put more time and energy into other “to-do” items.
Ever get the urge to eat something? You just have to have it there and then!!! Do you often go to have a biscuit and find you can’t stop at one...unless it’s one pack? Do you always eat as soon as you start to feel hungry or get hunger pains?
A great tip and a useful tool I use myself when I get urges to impulsively eat or when hunger strikes is surfing the urge wave.
“Urge surfing” is where instead of giving in to an urge and acting impulsively to satisfy the craving, you ride out the increasing desire or need.
An urge will always die down eventually if you leave it long enough, this includes hunger pains...because your stomach rumbles does not mean you HAVE to eat, I’ve noticed over time my hunger will last 5-10 mins and then it goes, like a passing rain storm.
When surfing the urge wave you should be curious about the urge and play detective.
▫️be aware of how you feel at that moment, where in your body can you feel the urge?
▫️what is the environment like? are you at work, Home, an all you can eat buffet?
▫️what preceded the urge? Were you stressed, tired, bored, hungry? ▫️how long does the urge go before it leaves you again?
The purpose of riding it out is to retrain your brain over time to be able to better manage those moments we crave or act impulsively and over time those urges will weaken and be less frequent.

Now, I do LOVE LOVE LOVE a burger (right?). But in my quest to eat less meat and seek out healthy vegetarian and vegan food a few days a week, I found this beauty in Il Giardino café, San Marcos, which I intend to recreate in my own kitchen this weekend with a few tweaks! I have a real soft spot for burgers – my meaty favourite ones come from @dorkingbutchery
where they are handmade and sold in a roll so you can cut your own thickness. Utterly delicious… but I did promise I would try to have more meat free meals in my repertoire and this gem really hit the spot.
It was a spicy chickpea and lentil burger, flavoured with cumin, garlic and garam masala, on top of some home made sourdough – one side of which was spread with beetroot puree and the other with mashed avocado. The relish was a sweet carrot, onion and tomato concoction and it was served with a mixed salad and roast potatoes. YUM YUM.
It was absolutely delicious but a little carb heavy for me as something I would eat regularly, so I’m going to ditch the bread and the roast potatoes (or maybe swap them for a few roast sweet potato wedges) and maybe add a greek yoghurt dressing to the salad. Although there is some protein in here in the way of chick peas, I’d still like to up the protein content a little. You could use a seitan or tofu burger, I just haven’t found one I like yet, and I’m not a huge fan of soy products as a regular part of my diet. So, I’ll play around with it… watch this space.

this time four years ago I got into my first choice university. three months later, I left (we will leave that story for another time lols)
moral of the story: life isn’t a one size fits all. I was someone who wanted to go to university so so so bad and worked my bum off to get there, and then didn’t enjoy the university lifestyle because situations made it hard for my mental health. but I have friends who fricking loved university, so much so they are now doing their masters. I also have friends who travelled the world instead 🌎
four years later and I’m working within marketing which I firstly went to university for & in six months I’m finally travelling for six months (something I wanted to do before I got into the idea of university)
If you didn’t get what you wanted today, that’s ok even though it feels so disheartening and upsetting, and if you did get what you wanted, that’s soooo amazing - either way you should be so proud of yourself and reassured in knowing that we all have our own time and our own path. And life has a crazy way of showing it sometimes 🌟
I really hope everyone is reassured in knowing that’s what meant to be will most definitely be ❤️
