Peanut Caramel 'Protein' bars. I dont often do 'healthy snacks' because I don't like the idea of snacking because if im not hungry enough to eat a meal then I will just wait until I am but iv had some requests for some so here you are. I say 'protein because theres not that much in there😂😂 But they taste amazing💪💪
Ingredients: Base: 100g Porridge Oats/quinoa flakes, 60g Shredded/ Desiccated Coconut, 60g Unflavoured protein powder (or vanilla) 150g Natural Peanut Butter, 3 tbsp Honey.
Caramel: 120g pitted dates, 1 tsp vanilla essence, 50ml coconut milk (tinned)
Topping: 50g chopped hazelnuts/peanuts, 100g dark chocolate
Method: For base: Add the dry ingredients to a blender and mix on full power. Then add remaining ingredients and mix together until well combined. (If the mixture is a little dry (eg if you used the end of peanut butter jar) add 20ml of coconut milk to help it mixLine a baking tray with greaseproof paper and flatten the mixture to cover the tin then refridgerate.
Soak the dates in a bowl of boiling water for 10 mins. Then drain water and blend in a food processor with vanilla and coconut milk until smooth. Layer the mixture over the base evenly.
Sprinkle your chopped nuts on top.
Fill a pot with boiling water, and simmer. Place your dark chocolate in a pyrex bowl on top of the pot for about 3mins until it melts. Drizzle the chocolate over the mixture then with a spatula lightly spread the chocolate to coat it evenly. Allow to cool then refridgerate for an hour then cut into bars. Store in the fridge for up to 4 days.
Total calories is 3600, breakdown is 31/15/54 carb/protein/fat makes 20 bars of 180 calories. Enjoy

Happy little accident! I’m making lemon meringue custards & while I was separating the egg whites & yolks I messed up, so I decided to make a little omelette. 2 eggs with diced pickled jalapeño, a slice of jack melted in, and sour cream, cilantro, hot sauce, and my homemade pickled red onion on top. Turned out pretty good but now I’m so full I don’t want to make dinner 🤷🏼♀️. Tonight may be a dessert only day #notmad

I wanted to share these delicious and guilt free paleo chocolate tarts I made this week. They are so Good! And they are free from soy, gluten, refined sugar, dairy, and grains! Let's just say they aren't lasting long 😉 the crust is only made with almond flour, coconut oil, and cocoa powder, plus a little maple syrup. The filling I made up from coconut oil, coconut butter, and a little maple syrup as well. Then topped then with coconut flakes, cashew butter, and fresh organic raspberries 👌😍 yum!!

I’ve come a long way from boxed brownies, but any form of baking is an easy way to have mini science experiments in the kitchen with kids (or adults!) *

Lemon water 🍋 Do you start your day with it?
Many people drink warm water with lemon in the morning to ‘kick start’ digestion, but as someone who isn’t normally hungry in the morning, I’ve also found it kick starts hunger 🥗
There are a few research articles out there stating that warm lemon water improves digestion (& elimination), circulation, and metabolic rate, but solid evidence is lacking.
However, what we do know is that lemon water gets you started on your daily H2O and vitamin C intake, and if it helps you to build healthy habits for the rest of the morning/day, that’s a bonus! 💛
Protein Twix Bars (V) 🍫🤤
Ok so I’m back with ACTUAL salted caramel protein Twix bars! These were just SO DELICIOUS and I wish I could describe them more but I’m going to go over the word-limit...so just trust me and check out that gooey caramel action...🤤🙌🏻
▪️10ml coconut oil.
▪️30ml almond milk
▪️10g smooth nut butter
▪️20g coconut flour
vanilla pea protein powder
▪️10g almond meal
▪️1 tsp apple cider vinegar
▪️1 tsp granulated natural sweetener
▪️30g sticky sweetener of choice (rice malt, honey, agave)
▪️2-3 tsp granulated natural sweetener
▪️30g smooth peanut butter
▪️10ml almond milk
▪️5ml coconut oil
▪️A pinch of sea salt
▪️5ml coconut oil
▪️40g dark chocolate
1️⃣Preheat oven to 180 degrees celsius, fan-forced.
2️⃣For the base: Mix all ingredients together in a large mixing bowl until combined. With your hands, mould the mixture until it forms a dough-like consistency. Press this dough into a lined loaf/brownie tin, and bake in the oven for 15-20 minutes until golden. Allow to cool.
3️⃣For the filling: Mix all ingredients together in a large mixing bowl until combined. The texture should be like a gooey caramel. Pour this mixture on top of your cooled base, and place in the freezer to set for 2-4 hours.
4️⃣For the coating: mix dark chocolate and coconut oil together and melt in the microwave or over a saucepan on boiling water.
5️⃣Once your base and filling have set together, cut them into 10 even sized pieces. Dip and coat in the melted chocolate, and place on baking paper
6️⃣Place all pieces in the freezer to set for another 2 hours before devouring! Best enjoyed chilled.
✅Serves: 10 twix bars

Late post of my breakfast from this morning after my run! Not my prettiest or thickest smoothie bowl but it was very chocolate-y so I was happy! I just got back from Trader Joe's, which I hadn't been in a while, and forgot how much I love that store - I went a little overboard lol. Got ingredients for pumpkin muffins though which I'm excited to make! 🍓~

Brunch be like I want to feel good today! Best home made breakfast bowl ever! Quinoa, baby spinach, kale, and arugula, red onions, sweet potatoes, garlic everywhere, I wanted Brussel sprouts, but had asparagus 🤷🏻♀️, my super food- bacon, eggs, avocado, and a splash of light honey mustard. Single Serve Peanut Butter Stuffed Chocolate Muffin 🤤🤤🤤

▪️60ml egg whites (I used @pureggandlifeplus
▪️100ml almond milk
▪️1 tsp baking powder
▪️30g flour of choice (I used 20g coconut flour and 10g oat flour)
choc pea protein powder
▪️20g smooth peanut butter (feel free to use more!)
1️⃣Preheat oven to 180 degrees celscius, fan-forced.
2️⃣In a mixing bowl, combine flour, choc pea protein, baking powder. Stir to combine.
3️⃣Add in the egg whites and almond milk, and stir to combine wet ingredients into dry ingredients.
4️⃣Pour half the batter into a single serve, oven-proof ceramic dish before spooning in the peanut butter. Cover with rest of batter.
5️⃣Bake in the oven for 10-15 minutes.
6️⃣Top with more PB, your favourite snack (you guys know mine is the @sneaky_wholefoods
peanut butter caramel slice), crushed nuts, berries or ice cream, and dig in while it’s still warm!

Feeling very autumnal this morning with spiced apple pie overnight oats🍏
✨ Overnight oats have got to be my fave go to breakfast. As they’re prepared the night before there’s absolutely no mess or rush in the morning and you have a healthy breakfast waiting for you to eat.
💛 Oats are slow releasing carbs allowing you to maintain your energy levels throughout the morning without that big crash in energy, making you reach for that sugary snack! 💚 They are also full of fibre keeping you feeling fuller for longer, as well as iron, magnesium and other important minerals, B vitamins and antioxidants.
🌱 They can be prepared, flavoured and incorporated in so many different ways which makes them so versatile and never boring!
To make my apple pie overnight oats:
🍎 In a bowl add 1/2 cup oats, 1/2 grated apple (no skin), 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1 tbsp chia seeds, 2 tbsp raisins and 1/2 cup almond milk.
⚡️ Mix together with a spoon and transfer the mixture to an airtight container. Store in the fridge overnight.
😍 In the morning, top with apple chunks, hemp hearts, chia seeds and a sprinkling of cinnamon or whatever else you fancy!
