This is the same dough from Tuesday - it had three and a half days in the fridge before baking this morning. That's right, three and a half days! I wanted to test the lacto sourness development to see how far it can be pushed without the bread becoming overly sour. Well, based on this loaf, it can go even longer than 3.5 days! Definitely more sourness than the earlier version, but in no way is it extreme or overpowering. In fact, I think it is possibly even more tasty as a result. The crumb structure is way more regular but still light and airy. Your intestine functions as a barrier and, when healthy, only allows certain food proteins to cross. If there is an impairment in the ability to regulate which food proteins cross the barrier undigested, leaky gut ensues. This is a common cause of food allergies and sensitivities * ✔Overuse of antibiotics – which cause both leaky gut and an imbalanced microbiome by killing the “good” bacteria. * ✔Extremely poor diet – adequate nutrients such as zinc and vitamin D are required to maintain the healthy gut barrier. Inflammatory foods also impair the gut wall. Additives and preservatives or chemicals in processed foods are also an additional load on the immune system which may contribute to overactivity. It's my weekend off so time for a big breakfast. . Sweet Cinnamon & Banana 🍌 French Toast with coconut 🥥 yoghurt & maple syrup. . 🌱 Recipe Below 👇. . Made with chickpea flour, soya milk, black salt, nutritional yeast & @naturesheartsuperfoods chia seeds. Using wholemeal bread. . Waitrose 🆕 coconut 🥥 yoghurt, fresh fruits & organic maple syrup. . Chocolate 'good bacteria' coconut 🥥 drink. . 50g chickpea flour (gram flour). 2 tbsp nutritional yeast. Generous pinch of black salt. Season with black pepper. 1 tbsp milled chia/flax seeds. 250ml soya milk. 2 tsp maple syrup. 1 tsp cinnamon. 1/2 banana. Mix all the dry ingredients in a bowl then blend the banana, milk, maple syrup in a blender. Whisk into dry ingredients & allow to thicken for 5 minutes. Heat some oil in a frying pan then coat a slice of bread in the batter on both sides. Cake for breakfast? Could only happen on a saturday, right? 😋 Actually, this was my second breakkie this morning. Had the usual eggs anf veggies, hit the gym and after my workout I enjoyed this lovely bite! • So what kind of cake is it? It's a lucuma cake. • You'll need: 3 dl cashews 1 dl coconut oil 1 dl cacao nibs 4 ripe bananas 1 dl lucuma powder Make it like this: 1) mix the cashews to a flour in your food processor. 2) Melt the coconut oil. 3) Add the oil, bananas and lucuma powder into the food processor and mix together with the nut flour until a smoooooooth batter. 4) Add the caco nibs and blend very shortly. 5) Pour over in a baking pan dressed with baking paper. Let sit in the fridge or freezer until it's hard. 6) Enjoy!

Paprika • Spiced • Chickpeas .. .. A convenient snack to make in advance and keep in the fridge in an airtight container. Chickpeas are high in protein, making this a low sugar and tasty fibre -rich snack! .. ..
