Good morning everyone☀️hope you are enjoying your nourishing breakfast this morning. As part of my study at @culinarynutrition was conducting my first ever a workshop for my family where we were making this delicious chocolate muffins. Of course gluten free, vegan, refined sugar free, packed with protein, dietary fiber,antioxidants , essential fatty acids, vitamins and minerals, truly healing muffins, ideal for breakfast or snack, they won’t drive your sugar level up meaning you will feel full for longer. . Make sure to double tap in order to see my future posts on your newsfeed and grab the recipe below👇🏻😘 . . *2 cups of gluten free oats grind into flour @bobsredmill *1/4 cup raw cacao powder *1 tsp of baking soda *1 tsp of baking powder *3/4 tsp of psyllium husk *1 tsp of Stevia or monk fruit sweetener ( optional) *1 ripe and mashed banana *1 cup of apple pure *1 cup of plant based milk ( I used almond) *1 tbs of lemon juice *3 tbs of melted cacao paste or vegan chocolate In a bowl sift and combine all dry ingredients. In a separate bowl combine banana with apple pure, lemon juice and chosen milk. Add wet ingredients into dry. Mix well. Fold in melted cacao paste or chocolate. Line muffin tins with parchment paper, fill 3/4 of the tin with the mixture. Bake in the preheated to 180 degrees oven 40-45 minutes. Store in the airtight container in the fridge. Warm up before serving. . And our final Inaugural Week Recipe: Morning Glory Smoothie. A few years ago, I never had smoothies. I was fully in the “don’t drink your meals” camp. But you know what? Eff that. Smoothies are delicious. It’s funny how often my idea to combine foods now is “dump them in a blender.” But it works so well here! Take everything great about a Morning Glory Muffin - carrots, apples, coconut, nuts, spices - and just blend it up. Simple, healthy, unique and delicious. Old “no smoothie” me was missing out. study fuel💪🏼 i eat oatmeal every morning for breakfast (im boring🤷🏽‍♀️) but i find it keeps me full and gives me soooo many nutrients😋 i had oats cooked with almond milk topped with cinnamon, chia seeds, hemps hearts, almond butter, and half an apple🥣
quinoa bowl with sweet potato + apple 🍎🍠 this took me 10 min to put together because we always have cooked quinoa and cooked sweet potatoes in the fridge. I love quinoa bowls because you can make them sweet or savory and get creative with what you already have. I sliced one sweet potato and fried it with coconut oil, cinnamon, nutmeg, and salt (3-4 min on each side). while that was cooking, I warmed up about 1/4 cup of quinoa and chopped 1/2 an apple. when the potato was golden and a little crisp, I put it on top of the quinoa then added the diced apple to the same pan with coconut oil and cinnamon. I sautéed them for maybe 2 minutes (until cooked but not mushy). I topped the bowl with peanut butter, cashews, and coconut then mixed it all up! you can add maple or honey too but the apple has enough sweetness for me.
I had such an odd dream last night that I was making eggs but every time I did there were a bunch of small eggs shells that line the bottom and I couldn't get them out in time before the egg cooked. I was left with the dilemma of whether I should scrap the entire pan of eggs and waste the food (I hate food waste!), or eat the eggs with the shells (which makes me legit gag when I think about). I kind of feel like this is a metaphor for my life right now. It also could be telling me that I'm eating too many eggs 😂. How would you interpret this dream???
Something not many people realize is oats are not #gf unless they are labeled so. During harvesting oats can be contaminated by stray wheat, barley, or rye and the facility is not #glutenfreesafe . There is such a high risk of cross contamination and it's not worth saving a few bucks to risk being glutened. We recently had someone make us "gluten free" cookies with gluten contaminated oats and my son ended up sick. I made my family my fluffy and flaky Gluten-Free Buttermilk Biscuit this morning. But not only did I make them gluten-free and dairy-free but also egg-free!
