A long while back @atxfoodchronicles shared that Wild Chix & Waffles had gluten free waffles...and months later we finally made it back to try them! And not only are their waffles gluten free but their entire kitchen! Such a surprise! The last time we visited this wasn’t the case. So! I had to get mac n cheese with my waffle 😄🙌. It had bits of super crunchy fried garlic on top that were delicious!

Last week our kitchen wizards had this idea to make smoothie bowl type yogurt cups with grains and fruit. We tested one with wheat berries and y’all ate those up in record time! So here’s a second iteration, this one gluten free (did you know our chef Angela @fanglet has to be gluten free?); Greek yogurt blended with blueberries and sugar preserved lemon, topped with tri-colored quinoa, a spoonful of fresh berry and stem ginger compote, raw cashews, toasted pepitas, and a sprinkle of cinnamon sugar! 🌟Chia pudding with strawberry nice cream 🌟I made these treats for my son & I (we’re the only chia freaks in our nest!) For the chia: 1/2 cup chia seeds ¾ cup coconut milk ¾ cup rice milk 1 Tbsp pure maple syrup Optional dash of vanilla Add all ingredients to a bowl or container, and stir stir stir. I use a small whisk to ensure no seeds clump together. The little chia seeds will become increasingly gelatinous as they absorb the liquid, creating a thick, goopy, soft pud. Set aside in the fridge to thicken up, at least half an hour. For the nice cream: 4 tiny or 2 regular frozen bananas (I get bonus points cos mine were homegrown😆) 3-4 large frozen strawberries enough mylk to get the blender going Whiz everything together in a high speed blender or NutriBullet @nutribulletnz until smooth & creamy. Add dashes of mylk as needed to ensure smooth blending. Last Friday Auggie and I made banana chocolate chip muffins. They didn’t even make it til Saturday morning. My kids love these so much. They really are yummy. My best tip is to let the outside of your bananas brown up. The browner the better. This will allow the banana flavor to really come through in your muffins. Mix together 3 very ripe bananas 1 egg 2/3 cup sugar or honey 1 1/2 cups gluten free flour 1 tsp baking soda 1 tsp vanilla Pinch of salt 1/3 cup melted butter After you have mixed the ingredients well add 1 cup of chocolate chips. @enjoylifefoods has dairy free chocolate chips that we prefer. Bake at 350 for 18-22 minutes. Enjoy 😋
INSTAPOT vegetable soup @thereciperebel AMAZING!! . INGREDIENTS . * 1 teaspoon olive oil * 1 medium onion finely diced * 2 teaspoons minced garlic * 2 teaspoons Italian seasoning * 2 teaspoons salt * 1/4 teaspoon black pepper * 6 cups chicken broth * 1 lb potatoes chopped * 3 large carrots peeled and chopped * 2 ribs celery sliced * 1 1/2 cups fired roasted diced tomatoes (drain juices) * 1 cup frozen French Cut Greenbeans . INSTRUCTIONS . * Heat oil in Instant Pot on saute mode. Add onion, cook and stir until softened *Turn the Instant Pot off and add the garlic, Italian seasoning, salt and pepper. Stir and cook for 1 minute on the residual heat. * Add chicken broth to the still hot pan, and scrape the bottom with a spoon to remove any left behind bits. * Add potatoes, carrots, celery, tomatoes and stir. * Put the lid on, turn the valve to sealing, and select Manual or Pressure Cook for 2 minutes. I've been struggling to get my #9cupsperday this week. I haven't been coming even close so yesterday I did a big grocery shopping @lidlus and am doing some #mealprep to help me succeed. #Paleo can be an experience diet and while I prioritize my health, I don't go out of my way to spend more than needed. Breakfast smoothie bowl! This morning I was hit with a major sweet tooth but didn’t want to fall of the health train on a Tuesday, so I found a delicious solution. This smoothie bowl includes, two bananas, a handful of strawberries, a cup of coconut milk yogurt, and a tablespoon of agave nectar all blended together with the least hemp milk you can use while still getting it to all blend smoothly. For this to come out perfectly, you will have to take breaks in between blending to move around the contents with a spatula. Pancakes keep really well in the fridge once they’ve been made up. They can be warmed up in the oven in a few minutes or can be eaten chilled. If you insist on having your pancakes fresh, the batter can be made up in advance and stored in a sealed container in the fridge for few days too. . The stewed blueberries last a few days and so simple to make. . I spoke to one of my clients this morning who I absolutely adore! I’m in awe of how much she crams in to her days, she rarely complains about it and just gets on. This morning was one of the rare days that she said she was feeling ‘overwhelmed’ by lack of time. . Feeling overwhelmed can jolt us in to feeling anxious and inadequate . When we tune in to these feelings, self care can be the first to go and we can let our food choices slip.
