My grocery haul looks much different than it did a couple of years ago. I was the person who wouldn’t buy a single vegetable or I would end up getting a pack of pre made salad mixes in order to feel like I had something “healthy” to take home and eat (which I wouldn’t.) I would load up on chips and bread and frozen meals. I would buy sweet treats and soda....and on a rare occasion an apple or banana would make it home.
But lookie now! THIS is what my groceries consist of! Look at all of those colors. This organic produce may cost more than my previous grocery cart full of junk but my health is no longer the price!! ________________________________

Acti-Fry, I just made the most perfect CARROT FRENCH FRIES ever! Crispy, crunchy, delicious, nutritious & they taste, feel & look just like fries! But... they’re potato & oil-free, vegan, gluten, grain-free & a lower carb option! 💯
Serve them with your fave fish, chicken, steak, seafood, tofu or throw them into bowls or salads for some crunch! They’re delish dipped into guac, salsa, hummus, pesto, ketchup or dijon! 😋
12 large carrots, peeled & sliced into “fries”
1/2 tsp. ground curry powder
1 tsp. garlic powder
Celtic salt & black pepper to taste
1/4-1/2 tsp. ground turmeric
3 tbsp. raw organic coconut vinegar
Pinch of paprika or cayenne
Add all the ingredients to your air fryer & set the timer for 25-26 minutes! Add extra time if they’re not as crispy as you’d like!

FESTIVE BRUSSELS WITH POMEGRANATE!! SWIPE LEFT FOR THE FULL STEP BY STEP RECIPE!! BRUSELL SPROUTS JUST GOT SEXY :) Who said brussel sprouts were boring?! They're healthy and this recipe will lift them up with lots of flavour. The pomegranate will add some sweetness and crunch to finish and cleanse your palate between each mouthful . Enjoy :)
1.20-25 brussel SPROUTS (Steamed or boiled)
2. 1 red onion sliced
3. 6 coves of garlic roughly chopped
4. 1 tbsp olive oil
5. 1 tsp Mustard seeds
6. Salt, ground black pepper and chilli flakes to taste.
7. 1 tbsp vitalite (or any vegan free margarine. If you're not vegan use butter instead. Here I've made this recipe vegan.
8. Garnish: Pomegranate.
STEP 1: To a frying pan add the mustard seeds. Once they start to sizzle and pop, add the oil, garlic and onion.. Sauté until soft.
STEP 2: Add the boiled brussel sprouts. Cook for a further 4-5 mins on low-medium heat.
STEP 3: Add salt, pepper and chilli flakes to your taste.
STEP 4: Add tbsp of vegan free margarine/butter or butter for those non vegans.
STEP 5: Place in the grill for 2-3 mins to make the brussels a bit crispy.
STEP 6: Remove from girll and garnish with pomegranate and serve immediately!

Missing the crunch when I eat a taco salad, I was searching for an alternative!
These were recommended by a friend, and did not disappoint!
Definitely a different taste 🆚 tortilla chips. One benefit is they are seasoned so I don’t feel the need to dip them in salsa or queso! PLUS my stomach didn’t hurt or bloat after I had them!
Definitely not something I will eat frequently, but a nice alternative to have available for those taco Tuesday nights 🌮

- 1 cup quick oats
- 1 cup homemade almond milk (or milk or choice)
- 1 tsp baking powder
- 1 ripe banana 🍌
- pinch of salt
Blend dry ingredients together until a powder consistency, add banana and milk and blend until smooth. Then cook! Yummm 😋

My go-to “cold weather+I don’t want to get sick” soup. So good and nutritious 🙌💪
-3 tbsp Olive Oil
-1 Onion, chopped
-1 cup Carrots, chopped
-1 Bell Pepper, chopped
-1 Zucchini, sliced
-1 Yellow Zucchini, sliced
-5 cups Kale
-1 28 oz Crushed Tomatoes
-7 cups Chicken Broth
-4 cloves Garlic
-1 tbsp Italian Seasoning
-1/2 tsp Dried Oregano
-1/4 tsp Cayenne Pepper
-1/2 tsp Basil
-Salt & Pepper to taste
—In a large pot, sauté onion in olive oil over medium high heat until softened.
—Add in carrots, cabbage, bell pepper, and garlic. Season liberally with salt & pepper. Stir and sauté for 10 minutes.
—Add Italian seasoning, dried oregano, cayenne pepper, basil, and cook for another 2 minutes.
—Add crushed tomatoes and chicken broth. Season with salt & pepper. Bring to a simmer and cook for 10 minutes.
—Add in kale and zucchini
—Stir and bring back up to a simmer to finish cooking. Total cook time depends on how much you want to cook the vegetables. For tender with a slight crunch, simmer for 15-20 minutes. For super tender, simmer for 25-35 minutes.
