I was down in London at a friend’s birthday party – he is also gluten and dairy free so I was sorted for all things buffet and cake! Still struggling with my badly swollen foot so off to get an MRI scan of the foot and ankle this week. Fingers crossed it shows a problem that can be relatively easily fixed. I’m missing my fancy shoes and little boots as trainers are the only footwear that is fitting on at the moment. I love the vibrant colours in this mornings smoothie bowl. The deep purple of the blueberries is the perfect backdrop to the delicate colour of the pear smoothie. If you want to save time on this recipe you can just put all the ingredients into the blender at once and it will taste just as good. Enjoy! Finally on board the zoodle train, this was absolutely delicious ——————————— 1.5 oz zucchini noodles 1.5 oz sweet potato noodles .25 oz chopped jalapeño 1/4 cup beans 1/4 cup roasted corn 1/2 lime squeeze Add 1 tbsp olive oil and 1 tbsp water to a pan and cook sweet potato noodles for 5 mins. Then add zucchini for an additional 2mins before adding the rest of the ingredients. Seasoned with salt, black pepper, garlic powder, and @traderjoes chili lime seasoning 1 oz sliced avocado with salt and chili lime 1 chicken thigh •Salt, pepper, chili lime seasoning 1/2 lime squeeze

Dairy free, gluten free, and guilt free :) ——————————— 1/4 cup maple syrup 1 tsp vanilla extract 1 cups creamy almond butter (I mixed in a little dark chocolate @laurelsbutter too) 1 egg 1 1/2 cups grated zucchini loosely packed 1/2 df cup chocolate chips Pinch of salt 1/4 cup cacao powder 1tsp baking soda Preheat oven to 350 F Whisk syrup, egg, almond butter, and vanilla Add cacao, baking soda, and salt Once smooth, fold in zucchini and chocolate chips Bake in 8x8 pan for 30-35 mins

Cookies. !!!! ——————————— 1 1/4 cup natural peanut butter 3/4 cup coconut sugar 1/4 cup melted coconut oil 1 egg 1 tsp vanilla extract 2 cups almond flour Pinch of salt Chocolate chips (to preference) ———————————— Mix peanut butter, sugar, and coconut oil in a bowl Mix in the egg and vanilla Mix in about half the almond flour first, then the rest. Add the salt Scoop ~1-1.5 tbsp of the dough onto a baking pan, flatten, and press in chocolate chips. Bake at 350 F for 10-12 mins
A crappy, rainy day calls for some hot, yummy stew 😋 ———————————— 1lb ground turkey Medium yellow onion chopped 1 gold potato cubed 1 medium sweet potato cubed 4 cups beef broth 4 cloves of garlic minced 3 tbsp Italian seasoning 2 tsp oregano 3 bay leaves 1 28oz can tomato sauce 2 cups frozen peas/corn mix 2 cups @eatbanza elbow pasta ————————————— Cook turkey in nonstick pan over medium heat for ~2mins before adding in onion Cook for 2 more mins, breaking up the meat Transfer meat/onion to pot. Add rest of ingredients except the pasta and frozen veggies. Let cook until potatoes are tender and easily broken Add pasta and veggies and continue cooking for ~5 more minutes before removing from heat

It’s texture is similar to that of brown rice.

It feels great to be back in the swing of things- made these turkey sweet potato enchilada boats for dinner tonight and they were delicious! ——————————————— Sweet potatoes were fork-poked and covered in a little olive oil, salt, pepper, cayenne, garlic powder and then baked for 50 mins Ground turkey was cooked with sautéed onions, garlic, salt, pepper, cayenne Enchilada sauce was made with 12 oz tomato sauce, 1/4 cup water, 1 tbsp chilli powder, 2/3 tsp garlic powder, salt to taste brought to a boil After baking potatoes for 50 mins, scoop most of insides out, leaving a small layer of sweet potato to keep the skin intact Mash the sweet pot flesh and combine with the turkey and half of the sauce, refill the potato skins, and add a little more sauce on top. Bake for another 10-15 mins and top with some avo!
