This was a MONSTER. Tartine country bread 🍞
Breakfast was pretty and light - vanilla waffles with sugar icing, raspberries and blueberries, maple syrup and whipped cream on the side. (gluten and sugar alert 😬). It was so light, I love it and gobbled everything up within 6 mins. Anyone tried @andazsingapore

You’ve probably heard it before and now you’ll hear it again, if you are suffering from any kind of chronic condition or autoimmune condition #gluten

If you haven’t figured it out yet, I LOVE my greens—especially kale and spinach! I feel so good and energized after eating these power-packed veggies, and it makes me feel less guilty about enjoying a glass or two of vino with dinner.
I started this by cooking up some brown rice elbow noodles, tossed the noodles with some butter, and set them aside. Then I crisped up some diced bacon, added a diced sweet onion, diced bell pepper, and 2 minced cloves of garlic. Once the onion was translucent, I threw in some kale, salt, pepper, oregano, and red chili flake and cooked until my kale was nice and tender. Then I mixed my noodles into my kale mixture and YUM!
Make this yourself and add whatever other veggies you like! Don’t like kale? How about some broccoli?! Don’t do pork? How about dicing up chicken or crisping up some chickpeas? Chicken and prawn substituted with courgette and carrot noodles. And just as tasty! .
2 litres chicken stock
300g boneless and skinless chicken thighs, chopped
300g raw king prawns
4 boiled eggs, peeled and halved
150g mushrooms, sliced
150g pak choi, shredded
1 sweet pepper, sliced
2 medium carrots, spiralized
1 courgette, spiralized
1 chilli, sliced
1 inch piece of ginger, grated
3 garlic cloves, crushed
4 tbsp soy sauce or liquid aminos
1 tsp fish sauce
1 tsp Chinese five spice
1 tsp coconut sugar .
Add the chicken stock to a pan and bring to the boil. Add the coconut sugar, Chinese five spice, fish sauce, soy sauce, garlic, chilli and ginger and simmer for around 5 minutes to merge the flavours. Add the mushrooms, peppers and chicken thighs and simmer for a further 10 minutes (depending on size of chicken chunks) until cooked through. Add the king prawns and pak choi and cook for a further few minutes. Place a portion of spiralised courgette and carrot in a soup bowl then ladle some broth over the top. Add a halved boiled egg on top and serve!

A quick disclaimer: I am not doing this diet in the strictest sense, I am definitely eating snacks, I’m allowing myself to make healthy desserts out of compliant ingredients, and I am eating some packaged food as long as it’s compliant (like kind fruit bars, Lara bars, and epic bars). I also work at a gluten free bakery and sometimes I have to taste new products so I know what to tell customers, so I’m just acknowledging from the get-go that I might have to cheat once or twice for that.
Why I’m doing it: since coming back to college I’ve been really busy and while I’ve been eating healthy, I’ve been relying on a lot of processed health food (eating protein bars as meals, etc) so I wanted to challenge myself to prepare more whole foods and try out new recipes. It also cuts out everything that could potentially strain your digestion (grains, dairy, legumes, sugar, artificial additives) so it’s PERFECT for giving your digestion a break so the gut can heal itself.
What I’m eating: I want to make a post of my go-to whole 30 recipes soon, but honestly the diet isn’t that different from how I normally eat, my only major diet staples that have been cut out is oatmeal, peanut butter, peas and protein powder. The lack of sugar has been the hardest part because normally I have a huge sweet tooth! I’ve also noticed that I have to really focus on getting enough meat because I can’t rely on protein powder, beans, peas, and chickpeas to supplement my protein intake
How I’m feeling: the first two days were a breeze, but honestly, today I started feeling like crap. I woke up super bloated, I’m breaking out, and I felt tired and nauseous as the day went on. I’m totally attributing this to a sugar detox, I’ve heard about these symptoms from other people who have cut out sugar/ processed food, so I’m not going to worry about it as long as I start to perk up in the next day or two. Apparently it gets worse first and then you start to feel amazing so I’m really hoping for good things! Hopefully I’ll get a chance in the next few days to photograph some yummy meals and post another update!
