it’s early and i stayed up way late playing video games (how have i already played sooooo many hours in breath of the wild and i’ve only revealed half of the map?! 🧐), so i’m just gonna leave ya with a charcoal chocolate ganache tart with meringue sploots, booberries, and dried rose petals ❀◕ ‿ ◕❀ HAPPY FRIDAY.

Plum tart. This tart should be made with « mirabelles » but since I love Cedric Grolet’s tarts, I wanted to try his recipe with the plums varieties I find here. Once again, I found all the details on @cest_pas_de_la_tarte
beautiful blog. I kept the composition of the tart the same except for the top: red plums are so big and hard I couldn’t use them just cut in 1/2 and raw. I cut them in 8, sautéed the slices in a tiny bit of butter/sugar/vanilla seeds and flambéed them with rum to soften them a little bit.
Conclusion: I found the tart good on the day it was made, delicious the following day but I was still a little bit disappointed I couldn’t taste all the different textures and flavors of the layers.
Composition: sweet crust pastry, almond cream with plums, plums marinated in verjuice, plum sauce/jam, plum slices.
