I'm still on that "meals to go" thing. Maybe it's mental maybe it's real, but I feel more satisfied by the meals I prepare at home, even when they are as simple as #hummus #beets & a #hardboiledeggs You know what IS real? The money I save 💣 BOOM 😎 〰〰〰〰〰〰〰〰〰〰〰〰 All jokes side, I remember how deeply intense my dependency on food use to be. My whole day spent measuring, counting, weighing, contemplating how physical I would be and then making sure I wasn't eating more than my caloric output, trying to figure out if I was eating "properly". I was obsessed. Obsessed also with making sure I didn't enjoy food too much or that I didn't let myself off lightly if I "fell off" my plan. Uffff. It was exhausting, painful, maddening, and just plain awful. Truth is you can't hate yourself into a loving place. If you struggle with eating habits I get it. Truly! Just know it doesn't have to be that way. It took A LOT of effort; self talks, mantras, notes, standing in the mirror, changing specific eating habits, listening to my bodies cues, learning about intuitive eating, learning about the thousands of diets out there & why they do or don't work! But let me simplify this without demeaning the severity of disordered eating. You have to eat wholesome foods, foods that are high in nutrients, foods that make you happy, foods that fill you up... mind, body, and spirit. Food is love. Food is how you love your body. Food can heal you or harm you. Took a couple of yoga classes at different levels with Jon as the teacher over at my gym, Atlantic Club in Red Bank in the past two weeks. Do you like oriental food? This is a savory😋 Japanese pancake🥞 called okonomiaki. It is made with scallions, kale, jalapeno pepper️🌶️, green and red cabbages, summer squash, and carrots🥕. The dipping sauce was made with grated ginger and garlic, soy sauce, white balsamic vinegar, red chili pepper🌶️ flakes, and toasted sesame seeds. To the pancake🥞 recipe I added some garbanzo bean flour for protein... . This is a great way to clear out vegetables from your refrigerator. If you would like to make this version of okonomiaki, my recipe is below 👇... . 👉 RECIPE FOR OKONOMIAKI (makes 3 large pancakes🥞): 1. 5 cups of 1-2" vegetable matchsticks including cabbage and green onions as the base. Cut the whites of the green onion in half lengthwise 2. 2 thinly sliced jalapeno peppers🌶️ (optional) 3. 3/4 cup garbanzo bean flour* 4. 3/4 cup all purpose flour* 5. 1 tsp Himalayan salt 6. 1 egg + water for 1 1/2 cups liquid 7. Vegetable oil (I used coconut) 8. Measure dry ingredients and combine together well 9. In a large bowl, add all chopped vegetables. Toss with the dry ingredients 10. Mix well the egg and water. Add to the bowl and mix together well with the vegetables and flours 11. In a large 9" nonstick hot pan over medium to high heat, add 2 Tbsp of oil. Add the vegetable mixture to form a thin vegetable pancake🥞. Cook about 3 minutes until golden brown. Carefully flip the pancake🥞. I transferred to a plate, added 1 Tbsp oil to the pan, and slid it back on the pan. Cook for another 2-3 minutes until golden brown and crisp 12. Yup. This is me back in 1988. I had big glasses, an even bigger smile, and I loved cows. In just a few years I’d be having joint pain and start having a hard time in school. But, in the 80’s I was just your regular kid who loved to be outside. I’d already been prescribed antibiotics 10 times, consumed fluoride daily, was fully vaccinated, eating a standard American diet, and starting to feel the pressure of school, sports, and music. • • • Sometimes when people ask me “When did you get sick?” I don’t know how to explain it. I can tell them that “I never felt well since my miscarriage.” Yet, that doesn’t explain the complexity of illness. It doesn’t explain my genetics, my upbringing, my constitution, my lifestyle, every bug bite I’ve ever gotten, and virus/bacteria/mold/parasite I’ve ever been exposed to. It doesn’t explain those early years when I started to notice inflammation in my knees or anxiety creeping in. There are so many factors involved in disease that make healing incredibly complicated for Western allopathic medicine. Chronic illness is not the same as breaking a bone, setting it, and seeing the patient again in 6 weeks. Real healing takes the finely honed skill of a well trained physician.
