Lindt baking class review at Design Quarter
French chocolate macarons with Lindt ganache
I've never made macarons before so I was really excited to go to the Lindt macaron class. It's perfect for beginners or people who have tried it at home and need some guidance. You start off with the chocolatier explaining the recipe, the ingredients and the equipment. It's a lot to take in but they do explain while the class is going on too.Everything is weighed out and ready for you and it's extremely organised and well run. The hardest part about this class was the piping 🙈 they made it look really easy. But the chocolatiers give you tips every step of the way, flavour combination ideas and even some chocolate education and chocolate tasting. You get to take home all the macarons you have made and they give you some too (about 16 in total), any leftover ganache you have and the recipe. Hands down best Valentine's Day present ever.
Tip: If you do tend to feel cold then dress warm because the aircon is very chilly in the chocolate studio. .

Gnocchi in home made sauce
Put your mashed potato and add a cup of cake flour and start kneading until it forms into a ball and does not stick to your hands.
Divide into four balls and roll them into long ropes a centimetre thick. Then cut it into 2.5cm long pieces.
Using a fork, roll them to give them line that helps to absorb all flavour of the tomato sauce.
Using the same water used to boil the potato, add them in small bunches to avoid having them stick to each other. Ensure that the water is still boiling. Once the gnocchi has cooked and ready to be taken out they will float above the water.
Set aside and make your sauce.
For the sauce, satue the onion until glossy before emptying the content of the can into the pot. Let it Simmer for 7 minutes before adding salt and pepper. Ensure you Crush the tomato and add the tomato paste and letting it simmer for additional 2 minutes before taking off the stove.
Combine the gnocchi and sauce and mix gently.
Serve with a topping of kj controlled mozzarella cheese.

Low carb Eggs Benedict! .
One of my favorite breakfasts!!
Hollandaise sauce is a beautiful and rich emulsion of egg yolks, lemon juice, seasonings and clarified butter! It goes perfectly with eggs, vegetables and steaks (add tarragon and you have bernaise sauce)! .
I have here a low carb English muffin that has been toasted, flash fried breakfast beef and a seasoned poached egg topped with this lush hollandaise😍 .

Melt butter and remove the white solids floating/froth on the top! Allow to cool down slightly and pour into a jug for easier pouring!
Whisk the following together in a heatproof glass bowl:
5 egg yolks
Juice of a lemon
Whisk the above together till pale and place over a simmering (not boiling pot of water) and continue to whisk till the yolks thicken slightly and a ribbon is left for 5 seconds when you drizzle it across the bowl.
Slowly whisk in the butter a little at a time ensuring each addition is beaten in before adding more. Your sauce will thicken and if it’s a little too thick whisk in a little water!
Taste for seasoning and serve warm! If making ahead, continue whisking occasionally until it has cooled
Make sure your saucepan with the water below is not high as this will scramble or split the mixture! For the Sprite Ice Cubes:
2 cans (330ml each) Sprite Lemon-Lime Cucumber
For the Sprite Slushie:
*The prepared Sprite iced cubes
120 ml (4 shots) SKYY Vodka
120 ml (4 shots) Sprite Lemon Lime & Cucumber
2 slices of cucumber
For the Sprite Ice Cubes:
1. Fill two ice trays with the Sprite Lemon-Lime Cucumber and freeze until the cubes are solid.
For the Slushie:
1. In a blender, pulse the Sprite ice cubes multiple times until crushed ice is formed.
2. Add the SKYY Vodka and Sprite and blend 3-5 more seconds.
3. Pour the slushies into two glass jars.
4. Garnish each jar with a slice of cucumber, a slice of lime and a sprig of mint.
5. Serve & ENJOY!

Now and then it’s okay to spoil yourself and enjoy a real hearty, delicious meal 🥘! For Valentine’s Day, my partner and I decided to ditch the normal valentines dinner out at a restaurant and to cook our own curry💚 This way we could indulge in a meal that we were 100% aware of what ingredients we were eating☘️ This is what you will need:
1x Diced onion
1x Clove of garlic
1x diced Potato
Half a cup of Full Cream
1x can of Coconut milk
2x teaspoons of Masala ( curry powder of choice )
1x teaspoon of Cornstarch in milk (to thicken the sauce)
Roasted Cauliflower ( in the oven with olive oil, salt and paprika )
Firstly, chop up your onions and garlic and chili and put these ingredients into a pot with olive oil to simmer on a low heat for 5 minutes. Then add some vegetable stock and Masala powder with coconut milk and cream to get the flavors going. You can now place in your diced potatoes to begin cooking. Let this cook on a medium heat for atleast 15-20 minutes. If after 20 minutes the sauce is still pretty runny, this is where you add in your cornstarch with some milk. To do this, firstly place a teaspoon of cornstarch into a mug with milk. Then whisk the mixture until it’s smooth and has no lumps. Then slowly add to the curry & allow to cook and thicken for another 10 minutes. Don’t forget to stir.
Once the potato is soft and the curry is almost ready, place the prawns and shrimp into the pot and allow to cook for at least 5 minutes on a very low heat- too keep the prawns from going tough!
To serve take your roasted cauliflower out of the oven, place into a bowl and add the curry into the bowl. 😍
