With the Thanksgiving right around the corner it’s easy to slip into the mindset of thinking that there is no hope for a healthy food holiday. Well, I’m here to tell you that you can infect eat delicious food and still keep to your healthy options. One little goodie that I have used over the past few years is this homemade recipe for Cream of Mushroom Soup. (Recipe is from @wellnessmama —check out her blog and recipe also found on Pinterest!) Cream of Mushroom Soup is one of those sneaky little ingredients that is used in many a dishes including with one of my all time favorite holiday sides....green bean casserole. I have made both the dairy and non dairy versions of this recipe and have been please either way. Plus, it feels good knowing that I am putting a healthier option on the table for my family. No chemicals. No preservatives. No worries. It taste so good anyways you may never want to buy it canned again. Give it a try this year. #FoodFridays Pasta alle Vongole Ingredients Salt (optional) 1 large shallot Chopped 4 large garlic cloves chopped 1/4 cup extra-virgin olive oil About 1/2 cup dry white wine 1/4 teaspoon red chile flakes 3 large plum tomatoes chopped 1 pound dried linguine 4 dozen little neck clams, preferably small (4 to 5 lbs.), scrubbed and rinsed 1/2 cup coarsely chopped flat-leaf parsley How to Make It Step 1 Bring a large pot of salted water to a boil for pasta. Meanwhile, sauté shallot and garlic in oil in another large pot over medium-high heat until softened, 3 minutes. Add 1/2 cup wine and cook 1 minute. Stir in chile flakes and tomatoes; cook 1 to 2 minutes. Step 2 Boil pasta 5 to 6 minutes, or until halfway done. Meanwhile, add clams to garlic mixture, increase heat to high, and cook, covered, 5 minutes. Step 3 Scoop out 3/4 cup pasta water and reserve. Drain pasta and add to pan with clams. Cook together, covered, stirring occasionally, until pasta is al dente and clams have opened, 5 to 6 minutes. Add some pasta water or more wine if you want a juicier sauce. Discard any unopened clams. So you’ve learned you have food intolerances, or you’ve gotten older and certain things don’t agree with your stomach as much as your mouth likes them. Maybe you are just making changes in your life to eat healthier and reduce refined sugar intake among other things. ⠀ ⠀ Then you find that one old recipe. The one you love. Maybe it’s an old family recipe and you can’t imagine a holiday without it.⠀ ⠀ My recommendation.... MODIFY IT!!! ⠀ ⠀ I made this awesome recipe from recipegirl.com for chocolate chip cookie dough brownies. Yes. You read that right. They are glorious brownies and a top layer of cookie dough. We have had them several times in the past. ⠀ ⠀ But for now, I’m eating pretty healthy. I recently have done another @Whole30 and I haven’t eaten gluten in quite some time. While I wanted to enjoy a fun treat when my kids were in town visiting, I didn’t want to throw everything out the window. Learning how to modify recipes you love to include healthier eating, gluten free or dairy free modifications. ⠀ ⠀ As the recipe was written, I was able to switch to a gluten free flour, I used super quality dark chocolate chips and made my own brown monk fruit sugar with molasses mixed into it. The BEST Grilled Chicken Recipe you will ever have! Full of flavor from an easy spice rub, moist, and done in less than 20 minutes! 3 chicken breasts 1 teaspoon of garlic powder 1 teaspoon of ground cumin 1/2 teaspoon of ground coriander 1/2 teaspoon of smoked paprika 1/2 teaspoon of sea salt 1/4 teaspoon of ground black pepper 2 tablespoon of olive oil ___ Preheat grill to medium high heat. In a small bowl, mix garlic powder, cumin, coriander, smoked paprika, sea salt, pepper, and olive oil. Mix until combined. Rub mixture over both sides of the chicken. Healthy Egg & Chips (Serves 4) . . Ingredients: * 500g potatoes, diced * 2 shallots, sliced * 1 tbsp olive oil * 2 tsp dried crushed oregano or 1 tsp fresh leaves * 200g small mushrooms * 4 eggs . . Method: 1. Heat oven to 200C/fan 180C/gas 6. Tip the potatoes and shallots into a large, non-stick roasting tin, drizzle with the oil, sprinkle over the oregano, then mix everything together well. Bake for 15 mins, add the mushrooms, then cook for a further 10 mins until the potatoes are browned and tender. 2. Make four gaps in the vegetables and crack an egg into each space. Return to the oven for 3-4 mins or until the eggs are cooked to your liking. . . Every year at this time I get into a sticky dilemma. To candy, or not to candy. I am faced with taking my daughter to places to get candy that I don’t want her to eat and that typically I am telling her is not healthy. Over the years I have learned to get better, healthier, (if there is such a thing), treat options for my daughter. I buy the candy I want her to have in advance, and then we agree to not get tons of the “junky” candy while we go to the church harvest parties and community events. It’s a good trade. We still get to go out and have a great time as a family, and I can continue to teach her about making healthy, or at least healthier choices. We call this good, better, best. Sometimes we can’t afford all of the best options, but we can still find some that are better than most. Ingredients do matter. Sugar matters. Some candy is even made with honey!!! 🙌🏻🐝🍯 Life is always going to have events where we have to make food choices. Teaching my family and friends how to do that, plus living it out myself gives me the options invest the the health and future of those I love. Good Morning 🌞 on our Food and Health Friday we are answering a question we get asked quite a bit.(we are doing math 💀) 🎇 Today's topic is how to determine if you are eating enough or eating too much depending on your goals. 🎇 The 1st slide is how to determine your BMR(Basal Metabolic Rate) this is what your body needs to support your basic bodily functions in its most effective way. 🎇 The 2nd slide is the Harris Benedict Formula (HBF)and it is useful for determining what your needs are based off of your lifestyle. 🎇 Both of these methods put together are great tools to understand your caloric intake and how you can make an impact. Need to lose weight? Take 10-25% of the calories off of the HBF. Need to gain weight? Add 10-25% of the caloric intake. 🎇 Horrible with math? Ingredients: * 50g butter or margarine, plus extra for greasing * 1 onion, chopped * 100g button mushrooms, sliced * 40g plain flour * 1 chicken stock cube or 500ml fresh chicken stock * pinch of nutmeg * pinch of mustard powder * 250g cooked chicken, chopped * 2 handfuls of a mixed pack of sweetcorn, peas, broccoli and carrots, or pick your favourites * 2 large potatoes, sliced into rounds * knob of butter, melted . . Method: 1. Heat oven to 200C/180C fan/gas 6. Put the butter in a medium-size saucepan and place over a medium heat. Add the onion and leave to cook for 5 mins, stirring occasionally. Add the mushrooms to the saucepan with the onions. 2. Once the onion and mushrooms are almost cooked, stir in the flour – this will make a thick paste called a roux. If you are using a stock cube, crumble the cube into the roux now and stir well. Put the roux over a low heat and stir continuously for 2 mins – this will cook the flour and stop the sauce from having a floury taste. 3. Take the roux off the heat. Slowly add the fresh stock, if using, or pour in 500ml water if you’ve used a stock cube, stirring all the time. Once all the liquid has been added, season with pepper, a pinch of nutmeg and mustard powder. Put the saucepan back onto a medium heat and slowly bring it to the boil, stirring all the time. Once the sauce has thickened, place on a very low heat. Add the cooked chicken and vegetables to the sauce and stir well. Grease a medium-size ovenproof pie dish with a little butter and pour in the chicken and mushroom filling. 4. Carefully lay the potatoes on top of the hot-pot filling, overlapping them slightly, almost like a pie top. 5. Brush the potatoes with a little melted butter and cook in the oven for about 35 mins. The hot-pot is ready once the potatoes are cooked and golden brown. . . Chicken & Sweet Potato Curry (Serves 4) . Ingredients: * 1 tbsp sunflower oil * 1 onion, chopped * 450g boneless, skinless chicken thighs, cut into bite-sized pieces * 165g jar Korma paste * 2 garlic cloves, crushed * 500g sweet potatoes, cut into small chunks * 400g can chopped tomatoes * 100g baby spinach * basmati rice, to serve . . Method: 1. Heat the oil in a pan, add the onion and cook over a low heat for about 5 mins until softened. Increase the heat slightly, add the chicken pieces and brown. 2. Stir in the curry paste and garlic, cooking for 2 mins before adding 100ml water, the sweet potatoes and chopped tomatoes. Simmer for 20-30 mins until the chicken is cooked through and the sweet potato is tender – add a splash more water if it starts to look dry. Season to taste and add the spinach, removing the pan from the heat and stirring until the spinach has wilted. Serve with basmati rice. . .
