champagnes! Beside making great biodynamic wines, Pierre and Sophie are just very nice people and very open persons! I still remember my visit to them as one of the highlights.
Terre de Vertus: no blending, single cru, Chardonnays only, coming from the vineyard plots of Les Barillers and Les Faucherets situated mid-slope in Vertus, facing south-east. One terroir only and one vintage only.
Brut nature, but if you taste it, you never guess it, so nicely it’s balanced, unlike some other extremely acidic chalky dry zero dosage champagnes. Then you have a wonderful mix of brioche, hazelnuts, toasts, apple and minerality on the finish, all wrapped together in elegant package.
Lifehack: don’t be misled by these “Chef & Sommelier” @chefetsommelier
glasses. Though it’s said, that “tumbler is created for the brown spirits category, ideal for whisky or rum to be enjoyed at 18°C”, we tested it so many times by so many people as a set of travel glasses for champagnes and white wines, that we can say - great deal to open up the aroma and taste of the wines, even if you drink something nice like “Terre de Vertus”. Easy to carry around too.
35€ for a set of 6 glasses, so, if you break one, not a big deal, it’s not a Zalto. The only downside is, as they have no stem, you just have to drink a bit faster if you hold it in your hands.
