Having my sister (@zingijournal ) in town means trying out places I have yet to go. Yesterday that location was @dosabydosa in Oakland. ____ If you didn’t already know Dosa’s are a South Indian “crepe” if you will made from a fermented batter of rice and black lentils. It is filled with various things (mine was a chili garlic masala potato mix, my sister’s was veggies) and served with different chutneys and sambar which you dip your Dosa in. I have been busy with @zingijournal being in town and a whole bunch of other things that I haven't had as much time as I would like to start new ferments even though this is a great season for it (hello fresh produce!). That being said I have been working through the ferments that have been hanging out in my fridge which is always a good thing! ____ I have a container of pickled Anaheim chilies that are super tasty and have made their way on top of many things like this delicious avocado toast. Having a variety of different ferments and spices at home makes it super easy to make your own gourmet toast on the fly. Having a Wednesday off is always a weird feeling as it makes Thursday feel like a weird Monday. I had been wanting to make my own kombucha for ages but never got around to it due to busy schedules and living situations. Have you ever made your own mustard? If you haven't you are really missing out on the wonders of homemade mustard. It is something that sounds super complex but in reality is just a mix of some simple ingredients + time and the results are out of this world. ____ One of my early forays into preservation was mustard inspired by Sean Brock's cookbook Heritage and I have been making it myself ever since. Last night was a big bottling night for me. I bottled up a batch of kombucha and then 2 different hot sauces I’ve had fermenting for a few weeks. This green sauce is a mix of jalapeños, Thai chilies, scallions, garlic, and 5% salt brine. In bottling I added vinager (apple cider in a few bottles and rice vinager in the others) to give it a tang and see which vinager is best! ____ Have you made hot sauce before? The past few days have been weird, odd, and sad for many different reasons. One of those being the death of a personal inspiration, and an inspiration to many along with many other various things. In times of stress and in times of happiness I always turn to the kitchen and these past few days were no exception. I love coming up with unique ways to use fermented vegetables because I think they have so much more potential than just as a side (or however you choose to eat them). This Tangy Avocado Taco Sauce recipe (link in profile!) is the genesis of such thoughts. ____ I used my Jalapeno, Cilantro, and Lime Sauerkraut (link also in profile) + an avocado to make this great substitute for sour cream on your tacos or quesadilla. One of the first ferment recipes I came up when I decided I was going to launch Fans of Fermentation was for this delicious Carrot, Ginger, Turmeric mix. I was inspired by my collection of Indian Cuisine cookbooks but the final product became something else entirely but still delicious. Part two to my sourdough saga post from yesterday is that even though my bread making has semi failed so far that I still need to feel my starter which means getting rid of most of it each feeding. This always makes me sad so I started saving the disgard in a container in my refrigerator , but then what now to do with this? ____ My first project for discarded starter I decided was going to be muffins. So I made spelt cocao nib muffins using an @kingarthurflour recipe as a base. A few years ago I was on a roll making sourdough bread on a weekly basis in my apartment in Brooklyn. I had finally figured out the process to a nice loaf of bread, and then I moved back to California. Since I have been back I attempted a sourdough starter once that died of neglect and finally started one again in my new apartment and so far it has been going okay, except for the loaf of bread part. ____ I have made rolls that had no issues and spelt crispbreads (link in profile to that recipe) but when I attempted a loaf of bread it was a major fail. The loaf was dense and gummy, due to issues in the rise. I used a refrigerator method that worked for me in the past but I guess I just have to figure out the particulars of my new arrangement. This week I got a bunch of Fresno peppers in my @imperfectproduce box and a pineapple for a steal @costco so I decided they will become a fruity hot sauce! ____ As it becomes pepper season here in California I see many more fermented hot sauces in my future. This one is Fresno Chilies, Pineapple, Garlic, Onion, and a 5% salt brine. I am going to let it ferment for a few weeks (time will tell how long exactly) and then blend up and bottle. I made purple cabbage sauerkraut a little while back because it was on sale. Even though I generally like a crunchier kraut than is traditional there was something about the purple cabbage version that didn't grab me as much. ____ As I am not one to waste a perfectly good ferment I have kept it around trying to find where it fits into my eating and I think I finally figured it out. On tacos! The flavor profile and extra crispiness pairs well with an avocado and protein (this time was leftover chicken & sprouted lentils, reheated in a pan with coconut oil to get a crisp on them). I have also tried it with fish tacos and it was a win there as well. For the past few weeks I have been trying out @imperfectproduce and so far am enjoying the experience and the weekly delivery of produce to my door. So this past week when I saw Padron Peppers were an option I decided that I had to get them and added them to my cart. ____ When they arrived on Saturday I realized I didn't know what I wanted to do with them. Sauté them? Dry them? Something else? Then inspiration hit and I decided I would ferment them à la Pepperoncini so I could have some lovely snackable peppers for summer. Since I got back from visiting @zingijournal Sweden in March I have been craving the deliciously thin and flavorful crispbreads that are oh so a part of daily life there. So I finally got around to making my own this weekend as my little sourdough starter is now ready for action! ____ I basically followed the method in @tartinebakery ’s book No.3 and used the Kamut recipe but subbed spelt because that is what I could find. I am a big fan of Korean food but I find it hard to find a Gochujang paste (the chili paste that is ubiquitous in the cuisine) that is truly fermented. Often they contain corn syrup or other additives to mimic the richness that comes from a long fermentation. ____ So this weekend I took it into my own hands and made a 1/4 batch of @maangchi gochujang paste (because I have no need for the full quantity! its so much!!). In a few months I am going to be handing out chili paste to everyone because even a quarter qty is more than I need but when you buy all the ingrdients why not make a large batch! ____ Have you made any large format long fermentation time projects like Gochujang or Miso? Weekends mean farmers markets especially now that all the best spring/summer produce is starting to hit the stalls here in California! This past Sunday I decided to check out one of the local ones to me to see what they had! ____ I love to pick up unique items and find in new ways to use and preserve them. This week I grabbed squash blossoms which I’m going to make a lemon, ricotta tart which should be delicious.
