Smoothie Saturday, amirite? Do you ever have a vision for your food and wake up having to try it out? Just me? Ok.
The red smoothie has frozen pineapple, mango, coconut milk, raspberries, and blueberries. The green one has frozen pineapple, mango, coconut, @soarorganics
matcha, spirulina, and spinach. Both smoothies use @vitalproteins
collagen powder and are topped with coconut flakes. The snack bites on top are ground pecans, coconut oil, almond flour, almond butter, maple syrup and either @oaktownspice
beet powder or @soarorganics
Needless to say, this created a mess in my kitchen

Winter rice and chicken soup, a basic that holds in the fridge and tastes great topped with pesto, chimichurri, a fried egg, a mess of kimchi...the list goes on and on. I make this by boiling a whole parted chicken (poaching sounds more elegant but I literally boil it at medium heat) in salted water to cover for 1 hour. Skim off the foam, remove chicken, add 3 cups arborio to the broth. While the rice cooks, cool and pick/chop the chicken and add back to the rice once its tender. Finish with sofritto (if you have it), 1/2 cup olive oil, 1/4 c lemon juice, and salt/pepper to taste. When I served it I topped with leftover herb sauce, a handful of parmesan and a dose of fresh lemon juice. You can easily take this in a congee/rice porridge direction by tossing fresh raw ginger and lemongrass in your broth pot with the chicken at the start of your recipe.

We had a morning to ourselves the other day, which isn’t typical, so we packed up some of my #whole30approved
banana bread, packed up some homework + books, and road our bikes to our local coffee shop and sipped on some coffee while we ate this bread. The recipe is on my blog, I 10/10 recommend it if you’re looking for a simply, minimal ingredient, hidden nutrients, naturally sweetened little treat.

Hoje quando ia preparar o almoço (frango e salada) me lembrei e coincidiu de ter tudo em casa. Fica muiiiiiiiito bom! Saborosíssimo!
Como vocês pediram, segue como eu fiz (duas porções BEM generosas):
FRANGO COM ARROZ E LIMÃO
(adaptado do @jantinhadehoje
🍋Temperei 3 sobrecoxas (com a pele) com sal, pimenta, 2 dentes de alho bem grandes, raspas e suco de 1 limão siciliano grande e algumas folhas de alecrim fresco. Deixei no tempero por uns 30 minutos.
🍋Tirei o frango do tempero e coloquei na frigideira aquecida (usei a minha que vai ao forno) com a pele para baixo e deixei dourar bem. Virei e deixei dourar do outro lado, tirei o frango e reservei.
🍋 Retirei o excesso de gordura e juntei 1 fio de azeite, 1/2 cebola roxa picadinha, 1 talo de alho poró fatiado e mais algumas folhas de alecrim. Refoguei até murchar, raspando bem os grudadinhos no fundo da frigideira. Juntei 1/2 xícara de arroz e refoguei bem. Acrescentei 1 xícara de caldo de frango (caseiro) e o tempero do frango que ficou na tigela. Acertei o sal e quando ferveu, voltei o frango para a panela (deixando a pele pra cima e fora do líquido) e coloquei rodelas de limão.
🍋 Tampei a frigideira e levei ao forno pré-aquecido a 180°C por 20 minutos, retirei a tampa e deixei mais 10 minutos. Retirei do forno, esperei 5 minutos e servi com salsinha fresca picada por cima!

• I decorated this cake surrounded by my family watching in fascination, giving me tips and making me a nervous wreck while creating the watercolour effect. DAY 10 UPDATE: I feel amazing! Seriously feeling so productive and clear headed this week. Dare I say “the bloat” is going away? The most noticeable is my stress level. Typically going into event week(end) I eat poorly (no desire to cook), sleep poorly, and feel anxious. This is the calmest and most well rested I’ve felt prior to an event...ever?
I know what I’m supposed to do (eat clean, go to bed early, exercise regularly, blah blah) but have gotten lazy and out of the habit. Really enjoying this time to reset and start new healthy habits. Anyone else still sticking to their resolutions?✨#kaleinthekitch
