While many of you may still be experiencing summer 🌞 here in New England it’s been 60s and today was gloomy and a bit chilly so I decided to whip up my delicious Loaded Fauxtato Soup! I even put together a little video I will upload on my story to show you just how easy it is. This soup is delicious! And those that are vegetarian can always omit the bacon! And in true Keto4karboholics fashion I added in some delicious greens! So for those already feeling the fall weather or those that are feeling the chill of the cranked AC throw a batch together and enjoy!
Keto4Karboholics Loaded Faux-tato Soup(with Spinach)
Makes 11 1 Cup Servings
1 Serving: 247 calories, 19.3 fat, 4.2g carbs, 11.1g protein 1/2 cup onion, chopped small
2 Tbsp olive oil
8 cups of cauliflower chopped
10 slices of thick cut bacon (and use the drippings!!!) 8 Cups of Spinach (optional but spinach has great micronutrients)
3 cups (24 oz.) chicken stock (I used two cups garlic infused chicken broth and one cup chicken stock. If you don’t use garlic infused add 1 Tbsp of garlic powder)
1 tsp. salt (more if you like)
pepper to taste (I added ½ tsp)
8 oz. cream cheese, cut into cubes
2 cups grated sharp cheddar cheese
Optional ½ tsp of xanthan gum( I wanted mine thicker)
1.Turn Instant Pot or pressure cooker to SAUTE and drizzle the olive oil; then add the onion and cook 2-3 minutes. Then add the chopped cauliflower, chicken stock, and salt. Lock the lid, use the MANUAL setting and cook on HIGH PRESSURE for 5 minutes. Quick release the pressure.
2. While the soup cooks, cut the cream cheese into cubes, grated sharp cheddar cheese, and cook and chop the bacon.
3. Check to make sure the cauliflower is very tender; then turn the Instant Pot to KEEP WARM. Use an immersion blender, blender, or food processor to puree the soup.
4. Add the grated cheese and cream cheese cubes and let them melt, then stir to combine. Here you can add the xanthan gum if you want it thicker (then whisk well). 5. Enjoy! **You can also make this on the stove just cook the cauliflower first until very tender!!**
First time trying on pants since I’ve lost weight and I went from a size 18 to a size 8!! I don’t ever remember being anything under a size 10, so I am BEYOND thrilled! It’s okay to brag, root for yourself and don’t give up!!! 💪🏻🙌🏻

I proudly lost 40lbs in 7months, 26 of those in the last two months. You guys made this transformation possible. All the love and support y’all gave me, the positive feedback, the spotters at the gym and to all the 30 something gym partners I’ve had lol, thank you. P.S if you see someone down, like they’re going through $hit, make sure you reach out to them before it’s to late. So many ppl put on a fake smile just to get through the day and that honestly hurts. Acknowledge others, don’t be so much about yourself. A random act of kindness will bless someone’s day, so why not do it.

On a depressingly overcast day I ran my first full outdoor run in months. I had 2 great insights today:
- I am only 2 minutes away from a sub 60 10k
- My runs are burning over 1100 calories each - over 1 lb burned per week from running alone!
Pretty good outing today, but after a night of heavy drinking I'm ready to couch potato hard.

This week I've slacked so bad with exercising. But I've been on track with eating healthy and eating less meat. Often times life happen and we neglect ourselves, that's what I've done this week! 🤫
Fingers crossed, I’m out of my boot in another week, so I’m hoping that I’ll be able to take a fitness class when I’m in NYC a few days later. So, what should I take? I’m staying near Grand Central. What studios rock in that area?

Within the first 6 weeks of my new journey, I’d lost 23 pounds. I was so excited and expected to keep losing that quickly...that’s not how MY journey has gone. There have been plenty of plateaus as a matter of fact I’ve hit one recently. Before it aggravated me and now I just keep chugging along.
No matter how long it takes or how many obstacles, I wouldn’t go back to the old me...EVER. Even when I cheat now it’s not the same. I don’t like how I feel after. Yes, I enjoy my life. No, I don’t need junk food to enjoy it.
Everyone’s journey is different. Do not compare your journey to anyone else’s. Go out and blaze your own trail. Conquer your own goals. Clap for your damn self! But stop putting it off.

Me during the entire 32 minute cardio workout today! I wanted to quit 5 minutes in but instead I used the modifications when I needed, yelled at my TV, and just kept moving! The best part about working out at home? Being able to blast music, sing, dance, yell and cuss my way through it!
Starting is scary, I know. But wanna know what’s scarier? NOT starting. Continuing to let the days pass wishing you were fitter, skinnier, or healthier. Don’t wish for it, WORK for it!
