Dinner Nothing fancy, and done in less than 15mins 😱😎 - 🥦 Feta & Sundried Tomato Pasta Here’s the dEATs • cook your pasta according to package directions except minus 2mins of cooking time 👍🏻 ( I used @ancientharvest Corn & Quinoa #glutenfree Veggie Curls 👌🏻) • while the pasta is cooking, sauté 2 small sweet onions and crushed garlic on med high until soft! Add in diced sundried tomatoes and continue cooking another 5mins • the last 1min 30sec of the pasta cooking, add in broccoli • once the pasta/broccoli is finished toss into the pan, mix, and add in crumbled feta! Give a good toss and shake 😉 then serve! Here’s the recipe I’ve been promising you since last Sunday; my Fırın Kebapı. A one tray special, perfect for a lazy weekend where you can cook once and eat twice, or equally fab for feeding a crowd. Recipe video above, full list of ingredients and recipe below. - - 500g small onions 1kg Charlotte potatoes 2kg Lamb neck / small shanks 8 peeled and bashed garlic cloves 2 level tsp oregano 1 level tsp salt 1 level tsp pepper 3 tbsp chopped parsley 1 lemon, cut into wedges 3 tbsp Tomato purée 2 cans chopped tomatoes 500ml chicken stock Olive oil In a large deep metal tray place the onions, potatoes (whole), lamb, garlic cloves, sprinkle over the oregano, salt and pepper and parsley. Pour the chopped tomatoes over the top, then in a measuring jug, mix together the tomato purée and hot chicken stock and pour over everything, and add the lemon wedges. Drizzle over a really good glug of olive oil, cover the tray with foil, place on middle shelf of a preheated oven at 170C. After 1 hr 45 mins - 2hrs hours take off the foil, turn the lamb over, put the heat up to 200C and cook uncovered for another 20-25 mins. Take out, turn lamb and potatoes over again, baste a little and put back in the oven for another 15-20 mins. Take out, cover tray with foil for another 10 mins then serve, pouring over the thick basting juices. More of a project than our usual 30 min meals...😉 I fell down a pasta shaped IG hole this morning, and just HAD to make pasta this afternoon. (Have you seen @pastagrannies ?! I’min love ❤️). Had a minor hitch as I couldn’t find the pasta machine, but it appeared at last, albeit in need of a serious dusting 😂. I think the last time I used it must have been pre kids... Evening!! We’ve just got back from the kids school fair where they had burgers and sausages for tea so no dinner post tonight BUT!...... I’ve had loads of requests for the recipe for these from my stories so thought I’d share it with you all and pop it down here as a post...really hope you like them!! ~ These are the easiest and quickest things to make and so good if you’re craving something sweet! ~ Simply throw the below ingredients into a food processor and whizz!..... • 1/2 cup oats • 2 tbsp @meridianfoods cocoa and peanut butter • 1 tsp vanilla essence • 6-8 dates - pop removed • 1tbsp maple syrup • 1 tbsp flaxseed • 1/2 cup chopped roasted hazelnuts So yep pop it all into a food processor and whizz!....then lay it into a lined tin and press down...then pop into the fridge to firm up...then you can drizzle some melted chocolate onto the top too...and then pop back into the fridge to harden..these ones are quite fudgey and squidgey 😋😋 but if you want them firmer, reduce the dates and add a few more oats!! Family Friday feast. After two nights away we needed to regroup and I wanted to make some of the boys favourite things - roast gammon, baby potato wedges, carrots and roast cauliflower with cheese and mustard sauce. This looks complicated but aside from simmering the gammon and making the cheese sauce, everything is made in the oven, cooking away while I crack on with writing. This type of food hangs around well - perfect for weekend eating. Here’s what I did... I cooked a piece of dry cured unsmoked gammon (simmered in water with a star anise and whole peppercorns for 30 mins/500g then covered it with mustard and brown sugar and roasted for 30 minutes at 140c /300f fan). I always cook more than we need so we have it for sandwiches, pasta and frittatas. I halved baby potatoes, tossed them with a tiny bit of oil and salt on a metal tray and baked them for about 30 minutes at 160c fan (350f). When they were ready I scattered them with white wine vinegar. I roasted cauliflower florets in the same oven as the potatoes until they were golden and soft. I made a cheese sauce, poured it over and carried on baking it for 20 minutes. I steamed some carrots and that was that. This isn’t my usual type of cooking but it was the food we grew up with and sometimes on tired rainy days, that’s just what you want to eat. Sorry it’s taken me so long to share this but we’ve had a very busy couple of days 🤪 This carrot cake oatmeal tastes like carrot cake 😋😋 we can’t get enough! Please do tag me and share if you try this. I absolutely LOVE getting your feedback! . . . . . ➡️ grate 1 small carrot and cook in a dash of butter (or oil if you prefer, but I quite like giving him a bit of fat this way), then stir in 3 tablespoons of @rudehealth sprouted pats oats and cook for a minute. Pour in around 1/2 cup of milk (I never measure with porridge so you may need to add more) and 1 tsp of cinnamon, 1/4 of nutmeg, 1 tsp vanilla essence, 1 finely chopped date. and 2 tbsp flaxseeds. Bring to the boil and hen let it simmer for around 10 minutes. •FRIDAY AFTERNOON CALLS FOR ONE OF THESE BEAUTIES• These flapjacks had been on my mind for a while. How do you preserve the gooey sweetness of flapjacks but at the same time not consume an entire tub of golden syrup? Well this is my version - and they’re awesome. I’ve added in some seeds for extra goodness and used dates to provide the sweet gooeyness (I’m sure that’s not actually a word 😆) and of course an obligatory drizzle IMO of dark chocolate 🍫. Want to have a go 👇? Happy Friday people...it’s almost the weekend 🎉. .. Recipe 200g oats 100g butter or coconut oil 2 tablespoons honey/maple syrup/agave/golden syrup 75g dates blitzed in a food processor 1 tablespoon chia seeds 1 tablespoon flaxseed 1 tablespoon sunflower seeds 20g dark chocolate - melted (optional) .. 1. Preheat oven to 180 degrees C 2. Melt the butter/coconut oil in a saucepan along with the syrup and add the dates, stir on a medium heat till the dates have melted in. 3. Add the rest of the ingredients (except the chocolate). 4. Spoon into a 20x20cm square lined tin and flatten with the back of a spoon. 5. Bake for 15 minutes. 6. Cool, and then drizzle with the melted chocolate if you’re using and cut in squares:

• Lentil Bolognese • ⁣ ⁣ I had a few requests for this recipe when I shared it on my stories a few weeks ago...its been so crazy over here that it's taken me so long to actully post it but it's finally in the comments. I love this because it's easy, packed with veggies, freezes really well, and tastes as good as any bolognese made with meat. I looked at a few different recipes before I made this for the first time, and ended up just using my usual recipe with a cup of lentils instead of 1kg of beef mince. ⁣ ⁣ We've had a really tough time over the past couple of months, and have been living off this bolognese and meal deliveries from some of amazing family and friends. I will never again underestimate how helpful it is to drop a homecooked meal to someone going through a rough time, or how great it is to have a well stocked freezer! • ⁣ ⁣ Recipe: ⁣ ⁣ 1 cup red lentils ⁣ 1 carrot (grated) ⁣ 1/2 zucchini (grated) ⁣ 4 button mushrooms, finely chopped ⁣ 1 small onion, finely chopped ⁣ 2 cloves garlic, finely chopped⁣ 700 grams passata⁣ 700 mls water ⁣ 400 grams tinned tomatoes ⁣ Splash of red wine ⁣ 3 bay leaves ⁣ 1 tsp dried oregano ⁣ 1/2 tsp dried thyme ⁣ 1 small bunch parsley, finely chopped ⁣ ⁣ Saute onions over medium heat until translucent. ⁣ ⁣ Add garlic, all vegetables and lentils and saute for 3-4 minutes until softened. ⁣ ⁣ Add red wine, and cook, stirring, for 2-3 minutes, then add all remaining ingredients except parsley. ⁣ ⁣ Bring to the boil, reduce heat to low and simmer, covered for 2 hours, stirring occasionally. Add more water if it reduces too much (I added about another 500 mls over the total cooking time). ⁣ ⁣ Add parley, season with salt and pepper, and cook for another hour or until lentils are soft and sauce is delicious.⁣ ⁣ Serve with pasta, in a lasagna, stuffed into veggies or on toast. ⁣

Fireworks 🎇 of spices last night for dinner 🤣 with Salmon fillet in a marinade of grated ginger, pomegranate molasses, garlic, orange juice and honey. On the side I roasted sweet potatoes 🍠 wedges in a mixture of cumin, cinnamon, ground ginger, honey, crushed coriander seeds and olive oil. I added a few medjool dates to the tray, it was nice, sweet, sticky, yum Everything I like. 🍓 Porridge with roasted strawberries and sumac 🍓 I took some inspiration from a dessert in @ottolenghi 's new Simple cookbook this morning for breakfast. Roasting the strawberries brings out the natural sweetness and combined with the zingy sumac works perfectly with creamy porridge for a delicious and simple breakfast treat. ~ Ingredients: 300g ripe strawberries, hulled and cut in half 1 lemon, 1 tbsp sumac 3 sprigs fresh mint 1 vanilla pod, split and seeds removed (or 1 tsp vanilla essence) 1 cup rolled oats Honey to serve ~ Directions: 🥄 Preheat oven to 220°C/fan 200°C. 🥄 Toss the strawberries with the sumac, mint, vanilla and lemon. Thai Green Chicken Curry ⠀ ⠀ It’s Friday and time for a delicious curry!⠀ This is Thai green curry with a little twist. Normally it’s made using chicken breast, here I’ve used whole chicken thighs for added flavour and a succulent texture. Not only do I think it tastes better but thighs are cheaper to buy than breasts and there is no chopping involved. This homemade curry paste is absolutely divine and well worth making, however I do understand this can be slightly daunting for some. Two tablespoons of shop bought paste, along with 2 garlic cloves and 2 teaspoons of grated ginger would do the trick instead. ⠀ ⠀ ⠀ Serves 4⠀ ⠀ 8-10 Chicken thighs⠀ 200g green beans⠀ 2 small cans coconut cream or 1 can of coconut milk⠀ Coriander and lime to serve ⠀ ⠀ Green curry paste⠀ 4 green thai Chillies ⠀ 2 thumb sized pieces of ginger peeled ⠀ 2 blades lemongrass (keep one whole)⠀ 5 cloves garlic ⠀ 3 shallots ⠀ 3 tablespoons fish sauce ⠀ 1 tablespoon palm sugar (honey would work too)⠀ 1 tablespoon soy sauce ⠀ 5 kaffir lime leaves ⠀ Juice of 2 limes⠀ ⠀ Blitz the curry paste ingredients in a bullet or processor reserving one of the lemongrass blades. ⠀ ⠀ Pan fry the chicken skin side down, until golden approximately 5 minutes. Turn over and seal the other side for roughly 2 minutes. ⠀ Remove the chicken from the pan and set aside. Pour away any excess oil from the pan.⠀ ⠀ Now add the paste to the pan and sizzle for 2-3 minutes. Add the coconut cream and bring to a gentle simmer. Cut the lemongrass lengthways in half and add to the sauce. ⠀ Place the chicken back in the pan skin side up and into an oven of 180 degrees for 30 minutes. Remove from the oven, add the green beans, tucking them under the chicken. When I make mash I make double for another meal the following day. I’m always looking for ways to cook once eat twice, but mash, in my experience, doesn’t freeze too well so we eat it two days in a row instead 🤷🏻‍♀️ I had a late hair appointment tonight so big J was in charge of bath and bedtime for the boys, and cooking our dinner 🙌 Kept it simple with some oven bake @marksandspencer southern fried chicken pieces. I added some grated cheese and black pepper to the leftover mash to change it up a bit and this went into the oven too. Served with a simple side of peas and sweetcorn. Dinner for Mylo tonight was our dinner from yesterday - quinoa, sweet potato and turmeric risotto with roasted brocolli, plus some turmeric chicken I got out the freezer. I love it when Mylo eats exactly what we are eating #familyfood . It saves me a lot of time in the kitchen and his meal times are very quick to prepare as it only requires reheating the food, meaning no more crying hungry baby (apart from when I’m taking a photo 🤓). Plus, it is making me focus on preparing and trying new nutritious meals for me and my husband, which have been less of a priority for me over the last few months. Did you know that turmeric is a powerful anti-inflammatory and antioxidant which has been shown to boost the immune system? It is a perfect superfood to be adding your babies diet from an early age. Why not add it to porridge, stews or some milk for your baby to enjoy?
Thursday: Chicken skewers 🍢🍗with chorizo packed couscous..😋 ~ ~ Other than the time marinating your chicken this is actually SUPER SPEEDY! ~ • Couscous takes 2 minutes to cook (follow packet instructions and add a stock cube for flavour) as does frying off some chopped chorizo, boiling some beans & peas, and chopping some spring onion! That’s all you need for the couscous..throw it all in a bowl, season, mix and you’re done! ~ 🍗 For the chicken you just need chicken mini fillets in a bowl and add: • 2 crushed garlic cloves • 1 tbsp smoked paprika • 1 1/2 tbsp honey • 1 tbsp olive oil • salt and pepper ~ Mix it all up and leave to marinade for 20 mins or longer if you can!...then simply thread onto skewers and pop under the grill, turning occasionally until cooked through! Honestly it’s that simple...nothing complicated at all tonight! Thursday is a manic day for me and as I am not a planner, when it comes to dinner, I often have to think on the spot. When faced with the inevitable question on the way home, after ferrying my youngest to swimming, I stopped off to get some lean steak that was already cut into strips and made this ginger and black sesame stir fry with pak choi and buckwheat soba noodles. This took less than 10 mins to make and about 10 mins for us all to gobble up. Now time to collapse for 10 mins before taking on my second job as chauffeur to teens. Chicken, onion, garlic, pepper, mango, sultanas, chicken stock and coconut milk. Didn’t have mild curry powder so chucked in a bit of medium with added cumin, coriander and turmeric. Another win!! •I’M NOT QUITE READY TO SAY GOODBYE TO SUMMER• I’ve made a lovely summery pasta dish today - wholewheat mafalda corta pasta (that’s the shape apparently!) sautéed with asparagus, courgette, peas, a whole load of garlic and finished with some hot smoked salmon and a sprinkling of chives. .. Contrary to belief, pasta isn’t the enemy. I do find a distinct lack of pasta on my feed. I LOVE a big bowl of pasta. If you load your pasta up with veggies and protein then you have a really good balanced meal here. I could have gone for a glug of cream here but actually just a splash of the pasta cooking liquid was enough here. I’ve gone with wholewheat pasta for the extra fibre and the lower GI option, but actually there are so many amazing varieties of pasta out there now. Right, who’s with me in the pasta camp 🍝?
Thursday time to start to #treatyoself after a few days fighting a cold and a whole day of classes I needed to bake a yummy Yoghurt Cake with Bananas 🍌 and Chocolate Chips. I put the recipe below to enjoy: - 1 pot of natural yoghurt (use the pot once empty as your measure cup) - 2 pots of sugar - 3 pots of self raising flour - 3/4 pot sunflower oil - 1tbsp spice mix - 3 eggs - 3 ripe bananas - 120gr walnuts - 100gr chocolate chips I simply put everything in a food processor except the walnuts and chocolate chips and gave it a good blitz. I added the walnuts and blitzed gently so you keep bits of nuts and not ground. Put the batter in a tin and spread the chocolate chips on top. In the oven for about 30-35 minutes at 180 degrees. I wasn’t going to cook properly tonight but who was I kidding; my pomegranate molasses, honey and orange chicken - with added potatoes this time. And as requested by a few of you, a full list of ingredients too. - 1kg chicken drumsticks/thighs 500g halved Charlotte potatoes 6 peeled whole garlic cloves 2 tbsp pomegranate molasses 2 tbsp olive oil 1 tbsp honey 1 tbsp chopped parsley 1 heaped tsp oregano 1 tsp pul biber 1 tsp cumin 1/2 tsp paprika Juice and carcass of 1 orange Good pinch salt and pepper Toasted one nuts, pomegranate and chopped parsley to serve 2 peeled and roughly chopped onions Place chicken in a large dish, along with the potatoes, garlic cloves and onions in a large oven tray. In a separate bowl mix together the olive oil, pomegranate molasses, 1oregano, pul biber, paprika and cumin, honey and chopped parsley and the orange juice. Chuck the orange carcasses into the dish, and pour over the marinade so that all the chicken is coated. You can marinate overnight, or not at all, then preheat oven to 200C and roast (cook for an extra 15-20 mins with the foil on if you’ve had it in the fridge marinating overnight) on middle shelf for 40-45 mins, then uncovered for another 40-45 mins, turning once. Veg chilli 🌶 Trying to make a real effort to cook more variety for the kids. Got stuck in the rut of just cooking what they ‘liked’, well what my now 3 year old likes. BUT I don’t want baby to be as fussy so need to start offering more even if they don’t eat it. Tried getting my little boy involved by looking at the veg etc and helping to cut some. It was a win for me - he ate about 5 mouthfuls I reckon which I am taking as a win. The little princess wolfed it down!! Tried to make it interesting by cutting some left over wraps and cooking them in the oven until crisp. My cupboard is full of spices and I particularly adore my Moroccan spices coming straight from the Spices Souk in Marrakech 🇲🇦 where I go every year to see my Dad who chose to retire there - tough life of sun ☀️, golf 🏌️‍♀️ and amazing food. Tonight I used cumin, cinnamon and coriander to prepare this lovely Moroccan Aubergine 🍆 Bake. I dug it out from an old @bbcgoodfood recipe of a 2011 issue. It has a mince beef base with tomatoes, Spices, Onion, carrots, raisins and you layer your meat sauce overlapping with aubergines. I will put the recipe on blog this weekend. BOOK REVIEW 💫 This week I couldn’t decide which Leon book to recommed so I’m recommending them as a package! Leon was first founded in 2004 by Henry Dimbleby, John Vincent and Allegra McEvedy - their mission was to change the way fast food was provided and I think they have certainly succeeded. They wanted to provide simply-cooked fresh, local, natural and seasonal food and their recipe books reflect this aim. . If you haven’t got one of their books then I certainly recommend them - just don’t ask me to choose which one! I love the way all the books are written with old photos and foodie memories from childhood adorning the pages. All of the writers of the books have clearly loved food from an early age and it shines through in the books. Most of the recipes are simple to cook and don’t require fancy ingredients. It’s just good home cooked food using the best ingredients to hand. . The first book is “Ingredients & Recipes” and the first half of the book lists lots of different ingredients that are used in their cooking and why they are special. After all good food comes from good ingredients. . The second book is “Naturally Fast food” and contains many more recipes. The first half of the book is dedicated to meals that take under 20 minutes to rustle up - showing that healthy home cooked food doesn’t take hours. the second half of the book has recipes where it might take longer - but it’s usually the oven doing the hard work and are handy to make ahead and just reheat when needed. . The third book they wrote is called “Baking & Puddings” which I don’t actually have. But flicking through it in a bookshop it looks divine! . The fourth book is the “Family & Friends” book. Perfect family home cooked food that any family will enjoy from meatballs to burgers to roasts and shepherd’s pies. . For the vegetarians there’s “Fast vegetarian” - but this is by no means just for vegetarians. There’s plenty of recipes that will entice everyone! . I also have their “Fast & Free cookbook, which is recipes that are free of gluten, dairy and sugar or as they call it - Paleon. Their version of #paleo . Do you have any of the Leon books? Last nights super appetising looking tea 😂😂 sausage & mash with peas and sweetcorn. We had the dentist after school and I needed to get this done quickly as they were both starving by the time we got back. I took the sausages out of the skins and smushed them up in a frying pan so they would cook quicker. It did also have gravy but they both pour it over different parts of the meal 🤦🏼‍♀️ so I let them pour it on themselves. 10 Minute Rose Harissa Salmon ⠀ ⠀ You know I am a huge fan of anything from Belazu particularly their rose Harissa paste 😍 ⠀ Two spoonfuls of this paste transforms these Salmon fillets into something really delicious. This entire meal can be pulled together in literally 15 minutes which is perfect after a busy day. ⠀ ⠀ ⠀ ⠀ 2 Salmon fillets ⠀ 2 teaspoons Belazu’s Rose Harissa ⠀ 10 cherry tomatoes on the vine⠀ ⠀ Quinoa Salad ⠀ 1 pouch of pre-cooked mixed quinoa ⠀⠀ 100g finely chopped spinach ⠀⠀ 2 spring onions finely chopped ⠀⠀ 1 clove garlic crushed ⠀⠀ 1 tablespoon olive oil ⠀⠀ Juice 1/2 lemon ⠀⠀ ⠀ Coat the salmon fillets in the Harissa paste and season. Roast for 8 minutes at 210 degrees. Leave to rest for 2 minutes.⠀ ⠀ Drizzle the tomatoes with olive oil, season and roast for 10 minutes. ⠀ ⠀ Mix the quinoa salad ingredients together and drizzle with the lemon and olive oil. Dinner Simple and quick is the name of the game, and I’m on a mission to master it 😜 #keepitsimple - Pineapple Fried Cauli “Rice” 👌🏻 Here’s the dEATs • pulse a whole head of cauliflower in a food processor until you have a rice texture & size, but not minced 🙅🏻‍♀️ • sauté #caulirice with avocado oil on med high until softened and browned 👍🏻 set aside! • add more avocado oil to the pan and lower your heat to medium • add in diced onion, sauté 30 seconds! Add in crushed garlic, sauté another 30 seconds! • add in diced carrots, frozen peas, frozen corn, and sauté for 5mins • next add in coconut aminos and a splash of apple cider vinegar. Cook for about 2 mins • toss in diced pineapple and turn up the heat to med high again! Sauté for about 3 mins and add in the cauliflower rice. • continue cooking for another 5-7mins and serve! Such a classic, and oh so simple, but always a winner. Sausage, mash and onion gravy for dins tonight. A proper comfort meal for a stormy day! Jack is a sausage fiend and would eat them daily, so I always try to buy good quality sausages, and grill them to make them as “healthy” as possible! I love mash, but It is another of the few things I don’t enjoy making. Possibly as it’s just not nice (in my opinion) if it’s too lumpy or too watery. It’s a fine balancing act but the potato ricer attachement to my kenwood blender stick definitely helps to ensure a smooth mash. I add “butter” and “cream”’for a little indulgence. To make the onion gravy slowly sweat some sliced red onions in olive oil and “butter” over a low heat, when soft add a sprinkle of sugar and sauté further to caramelise a little, then add in beef stock and simmer for the flavours develop. All the greens 🍃💚🍃 I’ve been craving soup lately and this watercress, spinach & pea soup totally hit the spot. Superduper fast to make a brilliant way to get a dose of green in. Sautee 1 finely chopped onion in 1 tbs butter and 1 tbsp olive oil until completely soft and translucent (important as converting the starch to sugar gives the soup extra sweetness), add a pinch of salt and pepper, 500 ml chicken stock, 100g watercress and 200 g spinach, 1 cup of peas (i used frozen), bring to a rapid boil and boil 1-2 minutes until the greens have wilted, then pour into a blender and add 2 handfuls of ice cubes. Not cooking for too long + rapid cool down helps retain the bright green colour. Reheat briefly just before serving. We had it as a starter with a drizzle of cream, to make it more of a meal, add toppings like croutons, toasted seeds & crumbled feta or crispy bacon. I’m still working on getting the boys to eat soup - especially blended soups. Wednesday: PORK & SAGE KOFTAS/burgers/patties 🤷🏻‍♀️with roasted new potatoes and veg.. ~ ~ Very simple dinner tonight, totally fuss free.... (This mama is heading out to a friends house later to discuss and plan a girly holiday next year!! 🤗🤗🤗🤗🤗💃🏼) ~ ~ I realise I did burgers on Sunday (My Lamb, Mint and Feta burgers, for those that missed it scroll back a few posts!) so tonight instead of burgers I made koftas!!! Not that there’s any difference here to be fair other than the shape!...these would have been good as meatballs too with a tomato sauce over the top and served with spaghetti...just to give you another serving option! In fact I think @gemcwade has just made something similar tonight so check out her post too! ~ ~ Anyway back to these all you need is: • 450g pork mince • 1 Apple grated • 2 tbsp fresh chopped sage • 1 small onion finely diced • 2 garlic cloves - crushed • large splash of Worcestershire sauce • 1 egg • 1 handful of fresh breadcrumbs • Salt and Pepper ~ • Simply mix it all together, then grab a handful of the mixture and form into any shape you see fit!!!....meatball, koftas, burger, pattie. • lay onto a lined baking tray and pop into the fridge to firm up for 20 mins. • When ready to cook simply pop under the grill, turning occasionally until browned and cooked through... • you can fry these too if making meatballs and tomato sauce! ~ ~ Right yep need to get a wriggle on and get to my friends - there are holiday plans to be made!!!!! 😜🤗 ~ ~ Tomorrow on the meal plan we have chicken skewers with chorizo couscous so stay tuned for that! #humpdayfood After a frantic day chasing around after the children, I was very happy to give everyone a steaming bowl of homemade French Onion Soup when we finally got home. The cheesy, toasty bread is the best bit isn’t it? I use tinned beef consome in my soup with a good splash of brandy and a dash of Worcestershire Sauce. I make it in big batches because it freezes so well.
•COOLER NIGHTS CALL FOR STEWS• I’ve made this lovely warming Spanish style stew with chicken, peppers and butter beans. I know many people think I’m vegetarian but actually I do eat meat (mainly just chicken) and fish. I have massively reduced my meat consumption for both health and environmental reasons but also because over the last few years I have really grown to LOVE vegetables and actually am really happy eating a mainly plant based diet. I do cook meat from time to time, but I tend to bulk it out with lots of vegetables and lentils/beans. This stew went down a treat with the family 🙌. I’ve served this with some steamed green beans, purple sauerkraut and chilli (swipe 👉 for these) plus some brown rice for the kids. .. Who else has started on the stews ❄️?
🌊Welcomed our boy home from sea with a humongous toad-in-the-hole with lashings of balsamic onion gravy and some veggie sides 🌊 . Needless to say it all was devoured whilst recounting fabulous tales of crewing, dolphins, gold bidets, sea swimming and eating MacDonald’s in Monaco (I mean wtaf 🙈🙊). Toad in the Hole It doesn’t get more British than Toad in the Hole. Delicious Yorkshire pudding taking on the flavour of the sweet onion and savoury sausage couldn’t get much more comforting than this. You can leave out the onion if you like, but I think it’s definitely worth adding. Serves 4 Batter 125g plain flour 1 teaspoon salt 2 large eggs 300ml milk 1 red onion cut into 8 wedges 2 tablespoons oil 6 to 8 sausages Whizz the batter ingredients in a blender or bullet and leave for at least 30 minutes to rest if you can. Put the sausages and onion in a roasting pan drizzle with a little oil season and roast for 15 minutes at 210 degrees. Remove from the oven and place on the hob. Add a little more oil to the pan, then add the batter. Return to the oven and cook for another 20-25 minutes. Soup is the answer, especially lentil soup (Mercimek çorbası) with toast (gabira) and grilled black olives (izgara zeytin). Hubby has hardly eaten since Saturday because he’s been so poorly, and I’m not going to get much cooking done today with all the works going on in the garden and the house, so I’ve made up a batch of this, as the kids love it too. I add grated carrots to the traditional recipe for extra goodness. At least bubs is napping through all the drilling and banging. Wish I could send some over to you too ML @keepme4ever_thehudsonhome - wishing you better x - - - In a sieve, wash 1 1/2 large mugfuls of red lentils and 1/2 mugful of brown rice. Add the lentils and rice to a very large saucepan and cover with 3 litres of cold water. Place saucepan on a high heat and bring to the boil. Turn the heat down to medium and scrape off some of the foam that forms on top of the liquid. Add 3 finely grated carrots and a large mugful of hot vegetable stock, stir and simmer on a medium heat for 30 mins until it thickens, then switch off the heat. Blitz a 1/3 in a blender then add back to the pan. Season to taste. You can simply serve with fresh parsley and pul biber, or make a simple chilli oil. Boeuf Bourguignon⠀ ⠀ A timeless French classic that is rich and packed with flavour. This beef in red wine went down a storm with everyone in my house and fortunately I’d made extra so we had plenty for another meal. I served it with new potatoes, but it would work beautifully with creamed potatoes or dauphinois for a Sunday treat. I often make this with beef cheeks for and even richer version which is amazing, but for that you will need to increase the cooking time. ⠀ ⠀ ⠀ 1 kg shin of beef chopped into large chunks ⠀ 200g lardons or chopped bacon ⠀ 2 onions chopped ⠀ 8 very small onions or shallots peeled but left whole⠀ 5 cloves garlic crushed ⠀ 1/2 bottle red wine⠀ 1 tablespoon Belazu’s balsamic vinegar ⠀ 3 teaspoons plain flour ⠀ Optional sprig of thyme leaves⠀ 1 pack chestnut mushrooms chopped Start by seasoning the beef and browning it in batches, then set aside on a plate. Add the onions to the pan and sauté until soft. Now add bacon and the garlic and stir. Cook until the bacon is opaque. Add the chopped mushrooms. Spoon in the flour and stir thoroughly. Pour in the wine and the balsamic vinegar, bubble off the alcohol. Return the beef (and juices) to the pan, along with the thyme leaves. Bring back to a gentle simmer, cover and transfer to an oven of 150 degrees for 2-3 hours until the meat is tender. Food art inspired from Zoo visit _ Which animal is your favorite? ________________________________ _ Last week, we took the kids to the Zürich zoo, they enjoyed it A LOT. The day was perfect, awesome weather, good mood, beautiful zoo with many animal variations, unforgetable experience and fun time on the playground. It was the first time that they saw wildlife animals in live. _ Since I planned to make some BBQ veggies for the dinner, I thought to include DS' favorite animals; the elephant from Thai zone and the Koala bear from the Australian zone. There's the 3rd animal that kiddo loves, but I saved it for the upcoming food art. _ This was how the food presentation in the middle of the table before I served them on a plate (will post later).
