So today made rack of spare ribs that I found on sale under $7 and below is how I made these bad boys before I tried to make them into a meaty jenga stack like Angel @bustedcanofbiscuits
did the other day! This is my pre-football season prep.
First thing first was trimming ribs and removing the membrane. Next I rubbed on some of local hot sauce on them, then I rub down with some @blackriverbbq
hog island rib rub and let it sit for about 35 minutes while I got the pitbarrel rolling with some @kingsford

cherry Once the coals began to get white and checked temp to ensure cooker was around 275
Next I positioned two hooks under second rib bone to hang slab of ribs. Then closed the lid and came back in about 55 minutes check temp was perfect 162 Then pulled rack off wrapped in aluminium foil on top of some raw honey, brown sugar and sprayed with cherry and apple juice mixture. With ribs covered I placed back on pitbarrel in grates for about another 25 minutes and then took off and let sit for about 20 minutes to rest before putting on the spicy bbq sauce I made.
