Dinner was kind of a fail. The chicken was nearly inedible. Made oven fried chicken using baking powder for extra crispy skin. I don't know what happened but it tasted so metallic to me and never would get crispy. I wanted cheesy caulirice but ended up making more like risotto. This weeks food haul for meal prep. I paid $50 for all this. I also still have some bacon, ground beef, watermelon, and pineapple left over from last week. Seriously, meal prepping has saved my life last week by allowing me and my family to eat proper amounts. I’m so excited about the buttload of tomatoes I got because I’m making a ton of pico de Gallo. 😂😂Can you believe all of those tomatoes were ONLY $3?!?! You don’t have to spend a lot of money to eat healthy. If you follow what’s in season and on sale; I have found it can be very affordable! ☺️😍 I also will be freezing most of the chicken for future meals🤗
Ezekiel toast combos make me drool 😋 Here are a few different ideas to add to your rotation 🙌 The classic - 2 medium boiled eggs, 1/2 a mashed avocado & black pepper over Ezekiel toast. Loose skin update and some Thursday Thinspiration - Here is what losing over 18st looks like!! I've even been brave enough to show 'Boris the Belly' for the first time (top right)...I guess I've been very lucky so far. Where I've lost the weight slowly, my skin has shrunk with me to a certain degree. Skin has a certain amount of elasticity which will decrease over time as you age... I'm officially old now 😂 so there's very little elasticity left... With each pound lost I'm going to have a little more skin leftover... I'm fine with that, I really am!! What's worse - skin, or what used to fill it? [🚨PLEASE READ 🚨] -  Here’s an absolutely stellar post from my friend, @jcdeen. He hit the nail on the head with this one 💥🔨. Carbs are NOT inherently fattening, and here’s JC explaining why: . . . “ 🍩 DO CARBS MAKE US FAT? 🍠 - A very common statement is "I can't eat carbs. They make me gain weight." or "If I even think about chocolate cake, I gain 10 pounds." etc. etc. - When most of us think about carby foods, we tend to think of all our favorites like: 🍰 cake

🍟 fries
🍕 pizza
🍩 donuts - But when you look at the fat content of these foods -- it can make up as much as half the calories (or more). Just look above in my example. Most donuts are fried and that's what makes them so tasty. Half of the calories are fat from the oil and batter. - And then other foods like potatoes🥔, sweet potatoes🍠, rice 🍚, veggies, and fruits 🍒🍊🍍 are mostly all carbohydrates. But these foods on their own rarely taste good without at least a little fat. A baked potato is always better with a pat of butter or sour cream. A salad isn't too tasty unless it has some dressing (that usually contains fat). - ➡️ SO WHAT'S THE DEAL? - At the end of the day, when people say "carbs make me fat" a better statement would be "carbs and fat mixed together in foods that are super easy to overeat on make me fat." - Any excess of food, be it fat, carbs or protein will cause weight gain. Calories matter. But it's way easier to over eat on the donuts, cake, fries and buttery bread than it is on large amount of rice, veggies, or sweet potatoes. - 300g of sweet potatoes with a pat of butter and a dash of cinnamon would still be fewer calories and less fat than a large donut that you could easily eat 2 or 3 of in one sitting.” . . . ^Thanks for the post, JC! - Know someone this could help? Lunch Idea: Creamy Mushroom with Smashed Avocado Toasties by @rainbowplantlife  💚 . Recipe:⠀ Ingredients⠀ 2 tablespoons olive oil, divided ⠀ 3 shallots, diced (or 1 small onion, diced) ⠀ 2 cloves garlic, minced⠀ 1 jalapeño pepper, diced (seeds intact) ⠀ 8 ounces wild mushrooms, sliced (but not too thinly) ⠀ 8 sprigs fresh thyme leaves ⠀ Sea salt and pepper to taste ⠀ 1/3 cup canned coconut milk⠀ 1 1/2 teaspoons red wine vinegar⠀ 1 large ripe avocado⠀ 1/8 teaspoon crushed red pepper flakes ⠀ Juice of 1/2 lemon⠀ 6 slices hearty bread⠀ ⠀ Directions⠀ Heat a 12-inch skillet over medium high heat with 1 tablespoon olive oil. Once the oil is shimmering, add the shallots and cook for 3-4 minutes until softened and beginning to brown. ⠀ Add the minced garlic and diced jalapeño pepper and cook for 1-2 minutes until the garlic is golden. ⠀ Pour in the remaining tablespoon of olive oil and then add the mushrooms and thyme sprigs. Allow the mushrooms to cook undisturbed for 3-4 minutes, then toss and cook for 2-3 minutes. Once you notice the mushrooms have begun to brown, season them generously with salt and pepper and continue cooking until they are completely browned. ⠀ Reduce the heat to low and pour in the coconut milk and stir to evenly combine. Remove the skillet from the heat and stir in the red wine vinegar. Taste the mushrooms for seasonings and adjust accordingly. ⠀ While the mushrooms are cooking, prepare the smashed avocado toast. Spoon out the flesh from the avocado and place it in a bowl. Add the crushed red pepper flakes, lemon juice, and sea salt and black pepper to taste. Use a fork to smash the avocado until you have a smoothish texture that retains some chunks. Spread the smashed avocado onto each slice of bread and finish each slice with a few spoons of the cooked mushrooms. Enjoy! . Here’s proof that you can make healthy versions of your unhealthy favorites 🙌 It makes me sad sometimes how much unhealthy foods are embedded in the American culture BUT it is very possible to create healthy versions of some American classics ❤ . Some tips below: . ▶️ Not all brands are created equal - make sure to check nutrition facts & ingredients. There are definitely healthy versions of peanut butter or even strawberry preserves if you prefer that over strawberries but steer clear of jams with high fructose corn syrup added and peanut butter with vegetable oils and added sugar. . ▶️ Wonder bread vs. Ezekiel bread - Wonder bread has such a crazy long list of ingredients I couldn't even fit it in this caption reasonably. Where as Ezekiel bread has the following Ingredients: Organic Sprouted Wheat, Filtered Water, Organic Sprouted Barley, Organic Sprouted Millet, Organic Malted Barley, Organic Sprouted Lentils, Organic Sprouted Soybeans, Organic Sprouted Spelt, Fresh Yeast, Organic Wheat Gluten. Simple and minimally processed - now that's a win! The healthy choice is obvious and reminder to read the label on your bread brands too! 😜❤ .
