One of my favorite #2bmindset tips: If making dinner feels overwhelming, just start throwing mixed veggies in a big pan. I use olive oil, salt, pepper, but you could also do cooking spray. Fresh, frozen, or a mix. Picture your plate. The plan is 75% veggies, 25% protein. Add meat or veggie protein. Done! In 10 minutes. Seriously. I love chopped veggies for busy weeks. Tonight, brussel sprouts added to red onion, pepper, broccoli, and carrots. One note about kits like this though: Skip the sauce to avoid extra ingredients, sugar, etc. Or just drizzle some on top! Tonight I did no sauce, but did use a little parm and hazelnuts. Yum! Tonight’s dinner is baked cod with rice (cooked with bay seasoning) and plain green beans. Topped with a fresh lemon dill sauce 😋 Total calories was 403 for the whole plate 😁 This took less than 30 minutes from start to finish. That’s making the rice and fish. The beans were canned so just had to open it, dish and heat it up. True story about yours truly. 💯 When I was young my sister and I would go grocery shopping with my Mom, and we were each allowed to pick out one “treat.” Money was always tight in our family growing up, so to have a treat was extra exciting and super special... and it’s something we never took for granted. The treat I would choose week after week and year after year, you ask? Brussel sprouts. Yes, I was that kid (I assume this now explains a lot to you about me 🤓). I don’t even know why or how I became some infatuated with brussel sprouts (and other vegetables and fruits, like starfruit and kiwis....all things no one in my family ever ate or even knew anything about...bless my Mom’s heart for embracing my uniqueness 😂). To this day I’m still super down with these tasty “treats” which I kinda eat by the plateful (#sorrynotsorry ) 🤷🏽‍♀️ Moral of the story- clearly I’m as eccentric as you probably already knew (I think my ponchos and print pants may give that away 🤣) and obviously I ended up in the right field 💚 #integrativewellness #childhoodmemories
More soup! I seriously love fall and the fact that it’s the perfect season to make all the soups. This here is a Golden Cauliflower + Leek w/ garlic, ginger & turmeric topped with roasted brussel sprouts. I loosely followed a simple cauli + leek soup recipe and improvised a bunch, here’s how I prepared it: Roughly chop 2 leeks, rinse and add to pot with olive oil heated at medium. Sauté for minimum 2 minutes, I let them cook on low after 2 minutes for another 8-10min stirring so it doesn’t burn. Add minced garlic (6-8 cloves), ginger (1.5” piece) and turmeric (1” piece) and let cook until fragrant. Add full head of cauliflower, broken into florets, and cook for 2-3 min. Add 4 cups of veggie broth and bring to a boil. Then simmer on low for 15 minutes or until the cauli is tender. During this time add your preferred seasoning, I used parsley, salt, black pepper and thyme. Trim and halve brussel sprouts, sprinkle with olive oil and seasoning, I used smoked paprika, cumin, parsley and drizzled on agave. Roast at 375 for 25 minutes or until edges are dark and crispy, flipping half way through. Once soup has finished simmering take off heat and let sit for a few minutes. Blend with immersion blender or regular blender to your desired consistency. Then add 1/2 cup of plant based milk, I used cashew, and mix. AH-MAZINGG Almond Veggie Burger topped with mango chutney and a side of Trip to Italy Vegetables 😍. . We're at Assignment #4 in the #cneprogram and I'm feeling the heat! . I absolutely love how well this meal turned out! I thought the Almond Burger was a great substitute for meat with its hardy texture! 🍔 . I especially loved the side of roasted veggies topped with scrumptious roasted garlic, parsley and Italian vinaigrette. . The entire dish just tasted incredibly fresh and invigorating! 🙆‍♀️ . I’ll eat them any which way, but I think roasted is my fave (anything tastes good when it’s been drizzled with olive oil and thrown in the oven for an hour). Last night I roasted a big tray of veggies to use in a couscous salad, and today I’m having the leftovers smashed up on toasted wholemeal sourdough with feta for lunch.
