Last month, I decided to try something different with my diet. It was just a test to eat low carb for a few weeks without any real expectations other than seeing what ::COULD:: happen. The ONLY thing I did was cut out my high carb days. I didn't up my fats, I didn't change my protein and I didn't cut my calories. I just changed my goals. And then I challenged myself within those goals. (who tuned in for the 800 gram challenge??? Turns out you can eat 800 g of veggies for less than 50 nc/day!) So far, I'm down 8 lbs. In less than a month! •• It should be noted that I don't intend to do this long term, but it was really fun for a quick burst to see what my body could do. •• The moral to this story is if you're not counting macros yet, you should be. Summer Chickpea Kale Salad with Feta, Olives & Basil: * (4) cups cooked or canned chickpeas * (2-3) cups packed green curly kale or spinach , minced * (1/3) cup black olives, pitted, sliced if desired * 1 cup green olives * (1/2) cup cubed feta cheese * (1) clove garlic, minced * 1/4) cup minced red or green onion * (4) tbsp olive oil * (2-3) tbsp red wine vinegar * (1) tsp salt (or to taste) * black pepper to taste * (1) pint cherry tomatoes * fresh basil leaves (from the garden or about one 6-8 leaves) Combine the cooked beans, chopped spinach or kale, olives, feta, garlic & onion and toss gently together. Stir in the olive oil, red wine vinegar, salt & pepper and adjust to taste. Mix all gently to incorporate the dressing. Halve the cherry tomatoes and toss them in just at the end, reserving a few to leave on top for color. Just before serving, tear a generous amount of fresh basil leaves and scatter over the top. Enjoy!!

Goood morning and happy sunday... which means it’s upper body day for me 🤗 But no workout without having some fancy breakfast afterwards like this yummy plate with scrambled eggs, avocado, raspberries and a smoothie packed with protein some simple carbs and healthy fats ☺️so simple but so good 😋 I’m struggling a lot with upper body strength especially when it comes to pull ups and push ups... but it’s getting better step by step. It’s never easy to work on things you’re not good at. It can be super frustrating some days and you feel like giving up but if you push yourself harder and harder you’ll get stronger everyday and see how your body starts to change. After hitting the gym and then went directly to a hair saloon... here’s what I learned about planning... never make an appointment right away after your workout... especially when everything you grabbed as a post snack is a banana 🍌 😛 I was soooo hungry and almost got me some food with all the foil in my hair 😂 but I made it and when I got home I had like breakfast and lunch in one meal 👌🏼 i made this yummi Buddha bowl packed with wild rice sashimi edamame salad and some tahin sauce on top... so so good... and well... It’s back to school and back to simple food prep for me now. I’m doing school drop offs now, so leaving later in the morning I have more time to get my meals ready for the day.
