I shy away from posting transformations these days as im aware that they can be a bit ~problematic~ (placing too much emphasis on achieving a “certain look” etc) - but I feel the message I wanna talk about is important 🙆🏻‍♀️ (quick fyi: my weight is only included to emphasise that weight gain isn’t *bad* and that ive grown muscle, your weight really isn’t that important). anyway - my journey has never been about dramatic weight loss; it’s been about steadily becoming healthier & stronger and learning to how to eat, train, and treat my body properly. . back in 2015 I was pretty damn skinny: under eating & over training. over the course the past few years ive educated myself and learned how to properly exercise and eat to see results while maintaining a pretty happy & balanced life - one I initially didn’t lead when I got into “fitness”. I weigh more now, eat more now, and socialise more now which in turn has made me more confident/happy/healthy in my body - all whilst still being able to achieve “goals” ive set myself. for me, this was always the most important thing. I was tired (and still am) of seeing obsessive & restrictive “fitspo’s” on insta who guised their eating disorders with hashtag #gymlife hashtag #healthyeating . don’t get me wrong, if that makes you happy you do you hey, but it didn’t for me, and im v glad and grateful to have found a groove to suit me. trust me when I say there’s a more sustainable and enjoyable way to be fit and healthy friends, which doesn’t involve drinking kale smoothies. ~ ✨also on the topic: i’ve currently got spaces open for online coaching - so if you’d like guidance with achieving your goals, are stuck in a bit of a rut and want to change your restrictive mindset whilst still seeing progress in the gym, please email me: emlouisefitness@outlook.com (or you can click the email link in my bio, OR directly through my website, tried to make it easier haha) 🤗 pretty excited to offer this properly now i’m fully qualified woohoo :) . Keep seeing cauliflower rice recipes think it’s time to try! #Repost @mealpreprecipes ・・・ CHICKEN WITH PARMESAN CAULIFLOWER RICE💪🏼😍 @mealpreprecipes . . 2 large boneless and skinless chicken breasts halved horizontally to make 4 1/2 cup fresh Parmesan, finely grated Salt and fresh cracked pepper 2 large cloves garlic, grated 1 teaspoon paprika 1 teaspoon Italian seasoning 4 tablespoons unsalted butter divided For the cauliflower rice 3 cups riced cauliflower (about 1 medium head) 1/2 cup white onion, chopped 2 large cloves garlic minced 2 tablespoons vegetable stock Juice of one lemon (+ zest, if you like) Red chili pepper flakes, optional 1/4 cup fresh parsley chopped In a shallow plate, combine parmesan cheese, grated garlic, paprika, and Italian seasoning. Season the chicken with salt and pepper; dredge in the parmesan mixture; shake off excess and set aside. 2. In a large skillet melt 2 tablespoons of butter over medium-high heat. Cook chicken until golden on each side and cooked through – about 3-4 minutes for each side, depending on the thickness of your chicken. Transfer to a plate. The cauliflower rice 1. In the same pan, melt 2 tablespoons of butter. Fry the garlic and onion for 1 minute until fragrant — be careful not to burn. 2. Add the riced cauliflower to the skillet and stir to mix everything together well and coat in melted butter. Cook, stirring regularly for 1 minute. 3. Stir in the 2 tablespoons vegetable stock, about half the parsley, and lemon zest (if using). Cook for one minute to reduce juices then add the lemon juice and a few sprinkles of leftover parmesan cheese, if you like. 4. Adjust seasoning as needed. Stir in the remaining parsley. Return chicken over cauliflower rice and reheat quickly. Serve with fresh cracked black pepper, red chili pepper flakes, and more parmesan. Many people fall into trouble because they don’t know how to cook from scratch and rely on many of the processed vegan food like products, which are commonly expensive. 🥕 If you look at the research on the health benefits of a vegan diet, the research is not based on soy imitation meats or processed grain and sugar laden sweet treats. Oreos, a Coke, and French fries are all vegan just as sweet potato, broccoli, and blueberries are. 🥕 A true vegan diet celebrates nutrient-dense whole foods that are made up of whole fruits, vegetables, whole grains, legumes, nuts, seeds, and herbs. 🥕 What’s so great about a whole food, vegan diet is that it provides an abundance of fiber, diversity, and beneficial phytochemicals which are found exclusively in plants and are ideal for optimal health. 🥕 The more phytochemicals we consume, the better our body is able to combat oxidative stress, decrease inflammation, and protect our gut. 🥕 While not everyone thrives on a strict vegan diet, one thing that can be agreed upon by all health practitioners is that you can't eat enough vegetables, and we need a lot more of them. There are several reasons cravings could including hormones, hunger, stress, medications, and even thirst! My cravings are usually for sweets and happen when I'm stressed or I haven't consumed enough calories in that day. My daily nutrition shake actually helps curb these cravings and has helped significantly! I actually have an uneaten cookie in my house right now which it totally unheard of!! I am always on the lookout for healthy breakfast ideas especially for the weekend. On weekdays we have a very simple oatmeal breakfast. But on weekends, it has got be special. I have recently started preparing pesarattus as they are very quick easy to make and healthy too! - - Pesarattu Recipe- Soak a bowl of moong dal and a handful of brown rice overnight. Grind the mixture using a grinder into a smooth batter along with some ginger, green chillies, salt and cumin seeds. This batter requires no fermentation and can be made immediately. Over a year ago, I started drinking hot lemon water + Himalayan sea salt every morning when I woke up upon a friend's recommendation (thanks @amethystandaspen + @jenacee_ 😘). I just realized today that it’s been months since I did that and it made me feel SO good I’m not sure why i stopped! So I’m back at it. Try it out and let me know what you notice. There are so many benefits (resource linked in stories): 🍋Lemons are high in Vitamin C (good for the immune system) 🍋help balance the body’s pH 🍋naturally antibacterial 🍋help dissolve uric acid (which means they decrease inflammation in joints!) 🍋are a natural source of citric acid, potassium, calcium, phosphorus, and magnesium 🍋encourage the production of bile (for better digestion!) ICE CREAM SWAP 🍨 - is it really worth the trade?! "Nice" cream has become increasingly popular as an ice cream replacement. Most nice cream is made using frozen bananas 🍌, which means it contains a serving of fruit. However, nice cream comes with a similar amount of calories and sugar per 1/2 cup serving as real ice cream. • • You could argue that natural sugar from a banana is better than added sugar...which is somewhat true. Though during digestion our body really can't tell the difference- sugar is sugar. Also, calling it "nice" cream makes ice cream sound like it's a "bad" food. In our opinion, there are no bad foods. A serving of REAL ice cream gives you calcium, protein, and most importantly SATISFACTION! 😋 • • Bottom line: if you want real ice cream, eat it! If you want "nice" cream, eat it! Just be aware that some swaps aren't as healthy as you might think. One of my kiddos at work made this dish for me today. Looks good enough to eat, right? • Clearly this is fake food. What’s sad is how so much of what we eat is assumed “real” food, but when you stop to read the labels you find the “ingredients” aren’t far from being as outrageous as this play dish. • Do you read food labels? If you do, can you pronounce the ingredients in your food? I know I’m working to be better at this (Reading & pronouncing 😉)! Let me know if YOU are too in the comments. 💜
