Albert Adria’s Cakes & Bubbles is a fantastic place to spend the afternoon... amazingly delicious creations like this “Air Pancake”... made with a light pancake batter the middle is filled with yogurt foam with maple syrup butter on top that is torched til crisp like a creme brûlée... ridiculously good

chicken stuffed peppers 🌶🥑 | so remember those delicious chicken empanadas I posted in my stories the other day? this was my low-carb version! I used the tasty chicken from the empanadas I made the boys, stuffed it into sweet peppers, topped it with a little cheese and popped it in the oven! topped them off with some homemade guacamole and mmm mmm good. best part was my toddler enjoyed this too (with some brown rice). I just kind of made this up as I was going but I tried my best to post the recipe below ⬇️:
2 chicken breasts
1 packet of sazon seasoning
1 chicken bouillon cube
1 tbsp adobo ( I use all @goyafoods
products, as you can tell I’m a huge fan)
3 bell peppers
1/2 can goya tomato sauce
2 tbsp olive oil
1. steam chicken breast and shred (if you had leftover rotisserie chicken it would be perfect for this!)
2. pan fry in olive oil with all dry ingredients. I left it long enough to get a little crisp. then add tomato sauce and leave to simmer for at least 5 minutes.
3. while the chicken is simmering, slice and remove seeds/membranes from bell peppers and preheat the oven to 350 degrees.
4. stuff peppers with shredded chicken and bake for 20 minutes. * optional to top with cheese or guac
your mornings set the tone for the day 🥚🍅🥑 | you’ve probably heard it a million and one times - “breakfast is the most important meal of the day”, right? yet it’s probably also the most skipped meal! I don’t know about you, but my mornings go so much better when I have a good kickstart with a healthy breakfast! it doesn’t have to be a fine dining experience. there is beauty in simplicity 💛☀️

homemade barfi 🇫🇯🇹🇹 | just a weird craving I’ve been having. I literally made an entire tray just to have one bite, and I’ll just be sharing out the rest of it! sooo I kinda/sorta used self-control - yay me 💁♀️ *FULL DISCLOSURE: this recipe was taken from @trinigourmet

2 cups sugar
3/4 cup water
1 tbsp grated ginger
4 cups full-cream milk powder
1 cup thick or heavy cream
1. Grease a 9×9 inch glass dish
2. Combine sugar, water, and ginger in small saucepan
3. Boil for about 10 minutes, just until sugar spins a thread
4. Combine 2 cups of milk powder with cream, mix thoroughly
5. Pour sugar syrup into milk mixture, mix well
6. Stir in the additional 2 cups of powdered milk, mixing well.
7. Push mixture into greased dish using the back of a spoon 🥄
8. Decorate with sprinkles!
9. When almost set, cut into squares.
eggplant pizza 🍆🍕🍃🍅 | sooo I’ve been craving pizza since last night but I kind of want to save my carbs for girl’s night out this weekend and the super bowl on Sunday🙊 found an eggplant in the fridge, and voila! lunch is served!

guyanese green seasoning 🌱🍃🌶 | we put that sh*t on everything. haha, if there was a commercial for it that would be our slogan too. with a little west indian old lady. but in all seriousness, I would best describe this as a multipurpose marinade for curries, stews, any kind of meat, etc. nothing like a fresh batch! I love my auntie Bina’s version! every time I pass the fridge I open it up to get a good whiff... (is that weird? probably.) I’ll let you guess what her secret ingredient is! would love to hear what some of you put in yours 🙂
homemade quiche is always a good idea 🍳🧀🍃🥓 | I love quiche because you can basically throw anything in it and it still tastes delicious! perfect for when you’re trying to clean your fridge out. this is a ham & cheese quiche I made. you can make this low-carb as well by going crustless! it’s super simple and beats the store-bought stuff and day! my recipe is below:
1 9-inch pie crust * (skip this if going low-carb)
1 cup ham, diced
4 slices bacon, cooked and crumbled
1 1/2 cup cheddar cheese, shredded
1 tbsp flour
1 1/2 cup milk
1/8 tsp fresh ground black pepper
(I also used mushrooms in this particular quiche that I wanted to get rid of, but you don’t have to!) ____________________________________
1. preheat oven to 350 degrees.
2. add the diced ham and bacon to the pie crust, spreading evenly across the bottom.
3. mix cheese and flour so the cheese is coated and sprinkle over the meat in the pie crust.
4. whisk together the eggs, milk and pepper.
5. pour over the meat/cheese and bake at 350 degrees for 40-55 minutes. (the middle will still be jiggly and that’s okay!)
6. let sit and settle for at least 15 minutes before serving
🌸🌱🍽 my new wooden recipe box! | I guess I have the fear that (a) I won’t always have a smartphone (b) I’ll get old and forgetful one day and (c) my son’s wife might not know to cook 😂
this recipe box is sturdy enough to last for generations! it comes with 100 floral recipe cards (“recipe” on the front, “directions” on the back) and cute dividers! the beautiful maple wood is the perfect addition to any countertop! there’s even a groove on top to hold the cards while you’re in the kitchen 🤩 love love love being organized! (and of course one of my fave recipes by my fave food blogger is already in there! @alicaspepperpot
strawberry smoothie 🍓🥛| 1 cup of strawberries, 1 cup of vanilla almond milk & 1/2 cup yogurt. blend & enjoy!
smoothies are such a fun way to boost your fruit/veggie intake. just being real, even at almost 30, I usually don’t indulge in fruits unless my mother is sitting there and peeling them for me, haha. lately I’ve been making smoothies for when my son and I are on the go in the mornings☀️healthy, simple, and quick!
You better rum before I finish all the desserts because there is nothing I sphere more than to not have my daily intake of sweets 🤭
