It’s so good, I’m sharing it with YOU!😘 #veginspired 🌱 CHICKPEA GYROS WITH TAHINI-YOGURT SAUCE ▪2 cans chickpeas, drained, rinsed, and patted dry ▪2-3 tablespoons red wine vinegar ▪1-2 teaspoons oregano ▪1/2-1 teaspoon garlic powder ▪4 whole wheat pita ▪greens, spinach, etc. ▪cucumber, chopped ▪tomato, chopped ▪red bell pepper chopped ▪red onion, sliced (Yogurt-Tahini Sauce 1 1/2 cups plain vegan yogurt 2-3 tablespoons tahini 1 garlic clove, minced 1 teaspoon dried dill 2 tablespoons lemon juice or red/white wine vinegar 1 tablespoon fresh parsley, chopped 1 large cucumber, peeled, seeded, and shredded (optional - this makes it a tzatziki) Mix all ingredients in a small bowl. ) Instructions 1. Preheat oven to 400 degrees Fahrenheit 2. Roast Chickpeas on a parchment lined baking sheet for 30 minutes 3. Dress chickpeas with red wine vinegar, oregano, and garlic powder 4. Warm Pitas 5. BRAISED BRUSSELS & RED CABBAGE AND CHARD w/ TURMERIC FONIO :: This is my first cooked dinner since the beginning of the raw food challenge. It was good! I had a taste for brussels and so I added some red cabbage and rainbow Swiss chard to it. Now, here’s something new that I added for crazy amounts of amino acids and iron. Fonio is huge for your skin, nails and hair. Additionally, it reverses the aging process. I found out about fonio through a brilliant brother named @ktthearchdegree Thanks for sharing! In order to season it up, I added turmeric, cumin and coconut aminos. It was so filling, full of heightened nutrition. Research fonio for yourself. It’s a grain from west Africa that’s not a starch. Alkaline rich and good for you. FYI... I used purple chard, which gives a dark look to the pic. It was a perfect combo with the red cabbage, which at times need flavor helpers. 💚✊🏾 Next time, I think I’ll add a nutritional yeast gravy to this dish. I was feeling pretty stinking lazy. So I ordered some vegetable fried rice and asked for no egg. I cut up a little tofu and a leftover half of onion. Cooked in a pan and tossed in some sesame seed and sweet thai chili sauce. Presto-chango, dinner! 5 minutes and done. I had a little white rice as well. Newest obsession: Tea Leaf Salads & Ginger Salads. Went to Fuze Asian Grille and holyyyyyy smokes it was good! Probably the best Thai food I’ve had! Tea Leaf Salad (newest obsession), Black rice salad, FuZe veggie roll, Thai Basil fried rice, and then ordered a ginger salad at the end of the meal because I’m savage 🤷🏼‍♀️ Not pictured the 4 orders of edamame and 3 orders of miso soup the kids demolished 😂
I just finished reading this book because a lot of my friends and family are Christian. And a lot of times they can be the worst when it comes to bad eating habits! So, I figured some insight from someone who had a change in perspective would help. Today was another snow day so I hope all of you in the midwest made it home safely! It seems like everyone has closed early out here in Kansas City, MO. So anyway, this is dinner for tonight! 💚😊 ___________ I've been having my eye on oyster mushrooms for a hot minute now and I've been hearing that they taste like chicken 🤔. Well, they do in my opinion! ✅ Check out my IG stories to see what they look like before cooking them and how I made them! 💚 I have only found these at Whole Foods so far. Dinner tonight was super simple😊 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ................................................................ A bed of red cabbage, black rice, and peas, all topped with a peanut sauce😍 For the peas, I sauteed about 2/3 c of frozen peas with a T of liquid aminos, a T of maple syrup, and q dash of garlic powder. I just cook this over medium-high heat for a few minutes until the syrup boils and the peas start to brown. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ................................................................ Today had been an incredibly busy day. I had my usual 5 classes, an exam, and many hours of meetings for my design team. I managed to make time for the gym, which honestly really helps me take a break and destress. I've also had a headache all day, but now I'm eating this delicious food and taking a break before I get back to working on homework and I'm feeling much better 😊 my coursework is definitely very challenging and can be frustrating at times, but I just have to remind myself that I love what I'm learning, despite how difficult it is. @eatbanza chickpea spaghetti with tomatoes, trumpet mushrooms, baby kale and pine nuts. Roughly cut a handful of trumpet mushrooms, sauté in grapeseed oil for 5 minutes, add baby kale and tomatoes and cook for another 2 mins. Mix through cooked pasta. Add toasted pine nuts, dash of avocado oil, Himalayan salt and pepper.

ROASTED TURMERIC CAULIFLOWER BUDDHA BOWL🧘🏼‍♀️🥗 (hit save ↗️) ⠀⠀⠀⠀ Ingredients Roasted Turmeric Cauliflower 1/2-1 Cauliflower 1 tsp ground turmeric 1/2 tsp ground cumin 2 tsp sesame seeds 1+ tbsp coconut oil salt and pepper ⠀⠀⠀ 1/2 cup brown rice measured uncooked 1 cup edamame beans 1 cup cherry tomatoes 1-2 carrots 1 zucchini 2 handfuls kale or other leafy greens 1+ tbsp coconut oil salt and pepper fresh coriander, sunflower seeds and chilli flakes - OPTIONAL garnish ⠀⠀⠀ Dressing 6 tbsp tahini (hulled or unhulled will work) 2 tbsp sesame oil 2 tbsp maple syrup or honey 4 tsp apple cider vinegar or lemon juice ⠀⠀⠀ 🔸Start your rice according to the directions on its package. 🔸Preheat oven to 370 F/180 C and line two baking sheets (or one large one) with parchment paper. 🔸Chop the cauliflower into small florets and in a bowl pour over melted coconut oil sesame seeds, turmeric, cumin and about 1/2 tsp each of salt and pepper. Toss until evenly coated, then spread out on the parchment paper. 🔸Dice the zucchini and the carrot, and halve the cherry tomatoes. 🔸Spread out on the baking sheet, drizzle with melted coconut oil, and toss around so the vegetables are coated. 🔸Pop all of the vegetables into the oven to roast. This should take about 20 minutes, depending on how small you chopped everything. 🔸While the rice and roasted vegetables are cooking, prepare the remainder of your buddha bowls. 🔸Defrost the edamame beans (I usually do this by soaking in boiling water for a few minutes). Blanch or massage the kale in coconut oil so it's a bit softer and easier to digest (if you're using salad greens like baby spinach, no need). 🔸Make the dressing by whisking together all of the dressing ingredients listed above. Add water to thin out the dressing as needed. 🔸Once the rice and vegetables are cooked, assemble the buddha bowls. Divide the rice and all of the vegetables evenly between two bowls. Drizzle over/mix through the dressing, and then garnish with cilantro, chilli flakes and seeds as desired. FYI *These veggies are interchangeable for whatever veggies you might have lying around. 🤗 ⠀⠀⠀ HAVE FUN 🥗

This winter salad is perfect for lunch filling and healthy. Easy to make and if you make extra it’s a great on the go lunch you can also eat cold the next day. I like to make this when I know I’m not home for lunch the next day. 3/4 of a medium size glass of quinoa 1/4 of the same glass of lentils 2 1/2 times of that same glass filled with water Poor into a pot add lentils and quinoa and cook until all the water is absorbed. Let cool until warm but not hot out of the pan. Add into a large bowl. 1 head broccoli 2 carrots 1 large ognon ( you can add any other vegetable you like actually) Salt and pepper to taste Add veggies into a wok and cook until veggies are still crunchy but cooked. Add into the quinoa. 1/2 cucumber 1 tomato 1 red pepper 2 handfuls of fresh spinach leaves. Cut veggies add into the quinoa and woked veggies. 1 lemon juice 3 tbs virgin olive oil 2 dashes of curry 1/2 tsp of salad spices Mix together and add into the quinoa and veggies.
