Hello and welcome to “Alex absolutely loses her mind because she has five sit down finals within six days and hasn’t stopped shoving material into her brain since last weekend and can’t stop until next Thursday.” On this episode I break my vow to not see Instagram until December 21st to post about one of the the only good things that happened today: a bowl with spinach, shaved Brussels, mini heirloom tomatoes, some @traderjoes
cauliflower gnocchi, and pear dressing/garlic salt seasoning. Ok so I’m gonna go now bc I still need to read my marketing notes oooonnneee more time before I ptfo 👐🏼.
when we took this photo back in july, all i wanted to do was eat all of the fruits🍉🍓… now all i want are those liddle buttery baby dutch potatoes 🥔🤤. funny how things change.
you guys keep asking why i’m not eating as much fruit as i was. here are some of the things i’ve notice while eating less raw/fruits and more cooked/potatoes:
•i don’t have to eat as frequently.
•i can eat less quantity yet feel more satiated and satisfied.
•i don’t have to plan as much or pack lots of food for the day.
•i don’t feel as bingey around food and am not thinking about food all the time.
•and most importantly… freaking love POTATOES 👅
don’t get me wrong… fruit will always hold a special place in my heart 😻 and i will always enjoy eating its sweetness but it’s nice to feel ok enough to grant myself the permission to experiment and be ok with not being a raw/high fruit vegan.✨
Beluga lentils, roast potatoes and pumpkin, sriracha & paprika roasted cauliflower for lunch at work today 👅🔥 A nice break from all the salads I’ve been making lately but I’m not sure spicy food in the middle of summer was the best choice 😂

This Mushroom Ramen is vegetarian, but the menu specified that it can also be made to be vegan! I feel it is important to note that when I ordered it, when I asked for it without the egg our waitress was incredibly sweet in asking if I was vegan and letting me know it could be made vegan if I wanted (the only other non-vegan item in this ramen is the mushroom butter). So Why Turkey for Xmas Dinner? .
I’ve heard people say they don’t like the taste but eat it as it is “Traditional”!
They fill it with a stuffing of onions & herbs, cover it with cranberry sauce, bread sauce and gravy, all of which can be made using no animal products... And which are the real flavours we remember of a Christmas dinner.
The turkey is something we’ve been told to eat (by our parents, by warm fuzzy TV adverts & every supermarket we visit from October onwards!!)

On the left we have dried mango and on the right we have dried mango. Obviously eating the fruit in it’s natural form is better, It’s still a great snack and really convenient. The difference here is the one on the left has only 1 ingredient, mango. The one on the right has added sugar, and other additives that just don’t need to be there. As always make sure to check the ingredients when you buy foods like this, and stay healthy!✌🏻
zucchini noodz are my fav bc you can eat them raw or cook them and they never disappoint! my dinner did not look as nice as these noodles did by themselves but if you swipe you'll see; zucchini noodles cooked up w homemade pesto, crispy greek seasoned tofu, and some sautéed sweet potato chunks (that i burned the first time and had to cut the burnt parts off of, oops) lightly seasoned w salt and pepper.
sadly, this concludes my stretch of days off so the rest of the week i'll probably be eating canned veggies that i can microwave, fresh fruit and bread bc they're the easiest things to eat between jobs. i'm lazy🚶🏽♀️
