Making 🥒P I C K L E S🥒 with Grandma. The boys were so excited to make there very own jar full of pickles made with cucumbers picked from the garden. Getting kids in touch with where their food comes from makes them so much more excited to eat it. Now if only I can keep them from eating all the pickles before they are finished in a few days.

“To totalnie ja” pomyślałam “kocham podróże, naturę, adrenalinę i podejmowanie ryzyka”. “Jestem wyjątkowa” takie hasło zawisło dawno temu w mojej głowie.
Szłam sobie przez życie z przeświadczeniem, że muszę chcieć więcej, odwiedzać nowe miejsca i pokonywać kolejne granice. Wstawałam rano i od razu starałam się cisnąć na maksa. Pływanie z rekinami? Jasne! Jazda na motocyklu? Dawać go tu! W końcu “jestem wyjątkowa”.
I któregoś dnia, gdy razem z Łukim rozmawialiśmy o przeżyciach dzisiejszego dnia i okazało się, że to co dla mnie to było “ekstra, wow, granice przekroczone” dla niego okazało się “niewystarczające, lekko nudne i chcę więcej”.
Patrzyłam na niego jak na wariata. Skąd się urwałeś Łuki? Ja nie rozumiałam jego, on nie rozumiał mnie. I wtedy zdałam sobie sprawę, że to wszystko BZDURA.
Bzdurne są jakiekolwiek ramy i ograniczenia. Nie jesteś bardziej wyjątkowy bo wspiąłeś się na jakiś szczyt, na pewno nie bardziej niż ktoś kto opanował przygotowanie idealnego ciasta na pierogi. Ty stajesz się co raz lepszy we wspinaczce, ja w kuchni. Oboje idziemy do przodu, oboje pokonujemy samych siebie. Oboje robimy to co kochamy, oboje jesteśmy wyjątkowi. Każdemu z nas szczęście sprawia coś innego.
I zrobiłam tego pad thaia, po raz kolejny. Usiadłam na podłodze i zjadłam patrząc jak zajada się nim Łuki. I nikt mi nie powie, że nie można czuć szczęścia dzięki smacznemu obiadowi. Choć przyznam, że zerkam na szafę gdzie czeka plecak przygotowany do wyjazdu na Bali. Bo szczęście daje mi równowaga - adrenalina i spokój, ekstremalne przeżycia i sielankowe życie.

🌱Cauliflower Ceviche. You guys are going to love this! When I first made it, I couldn’t believe cauliflower was in this, it tastes so real! 1 head cauliflower chopped into very small pieces, 3 tomatoes chopped, 1 onion finely diced, 1/2 cup cilantro chopped, 3 avocados diced, 1 cup orange juice, 1 cup ketchup, 1/2 tsp salt, 1/2 tsp pepper, hot sauce to taste, lemon or lime wedges and tortilla chips. Bring 1 cup water to boil, add cauliflower, cook 6-8 minutes or until just tender. Drain well. Mix cauliflower, tomatoes, cilantro, onion in large bowl. Stir together orange juice, ketchup, salt and pepper until mixed. Pour over vegetables. Stir until thoroughly coated. Refrigerate at least an hour. When ready to serve, stir in avocados and garnish with citrus. Deets: I first made the omelette and diced it, sautéed zucchini, mini bell peppers and baby spinach, hemp seed and sesame seeds on top of the avocado toast😋😋
Right now one of my goals is to start getting up earlier so I can be productive first thing in the morning before my son gets up. I'm shooting for 5:30 and today I managed to drag myself out of bed at 6:02. It was so hard to get out of bed but when I see how much I can get done I feel great! 👍🏻
Another goal is to start eating more veggies 🍅🍆🥒🥕🌽🌶so I'm having some greens with breakfast, plus a yellow pepper from our little garden this year. Yum!

Our society and media have established completely unrealistic goals about mothers "bouncing back". I've worked really hard to get to a place where I love my body and all it can do instead of being focused on appearance.. but I'm still HUMAN. So when I start to get sucked into comparison or get frustrated/ discouraged that I still have the baby weight and my clothes don't fit how I'd like, I instead say to myself "Dayyyummm girl..you cultivated an ENTIRE NEW LIFE in your womb for 9 months, birthed that baby, and now completely sustain him with milk your body produces?! You are one badass mother" 😄 That pep talk works every time 👌
I eat the same thing as my family every 🌙. They might skip the veggies most nights, but I hope eventually they will follow my example and add more veggies to their plate. .
This meal fits right into my meal plan. 2 servings of veggies, 1 serv of protein, 1 serv of carbs, healthy fats, and nuts.

I haven’t cooked dinner for myself in a long time! Finally I made something. I had sautéed mushrooms, carrots, purple cauliflower, and cauliflower rice. And I made this green dip/dressing by blending parsley, basil, spinach, arugula, mint leaves, 3 Brazil nuts, a handful of walnuts, olive oil, Dijon mustard with apple cider vinegar, lemon juice, balsamic vinegar, nutritional yeast, and salt. It was very yummy. I used it as my salad dressing as well!
The most delicious way to make corn rice is to cook with the core of the corn. It brings out the flavor and sweetness 🤤🌽
🌱🌮Local Pepper Breakfast Tacos...for dinner. I was craving kala namak-ghost pepper tofu scramble but needed an added crunch! Ok, too ways to fit in more veggies:
1️⃣ Hide them in stuff!! Whether it be in a pasta sauce (sautéed, or half pasta, half zoodles), in sloppy joes, in stir frys, smother them in healthier sauces!
2️⃣ Eat immediately after working out!! I know a lot of us think like this “oh, I just worked out, I can eat whatever!” But typically, if you eat RIGHT after working out, your body wants to fueled after it’s hard work! That’s what I did here after an intense hot yoga class— I made this salad right way, and scarfed it up because my body wanted to refuel. Your body is still on that high from doing something good for itself, so you’ll crave those veggies!
3️⃣ Know you don’t always have to choose the salad. A lot of the time, there’s an equally good protein and veggie combo on the menu somewhere!! Search it out! We rarely make salads bc I much prefer my veggies cooked rather than raw. Which is tip 4️⃣- always add something hot to your salad! It makes it SO much more enjoyable!! My proteins are always heated, and I love to add in a warm veggie too!
5️⃣ Start your weekend with veggies. Before I leave my house on the weekends, I make sure I get in a serving of veggies. Whether it be adding greens to my shake, or making an egg breakfast with some leftover veggies from the week, I make sure I squeeze them in! Then I’m less worried throughout the day because we all know nutrition slips most on the weekends!

When bacon and goat cheese are meal plan approved 😍 I cut spaghetti squash in half and roasted at 350 for about 45 minutes (perfect timing during my workout), until I could easily shred with a fork. Meanwhile, I cooked bacon according to the package and also warmed up green beans, then plated as pictured and sprinkled with goat cheese. Easy, inexpensive, and delicious!
Hello 👋 It’s been a while between posts but we’ve been here, busily working in the background!
Today some of the team enjoyed a delicious chickpea, sweet potato and ginger soup, and we’re sharing the recipe for you to enjoy!
And remember, veggie soups can still be hearty, just add extras like these tasty chickpeas to keep you more satisfied👍
🔹1.2 kg sweet potato peeled & chopped
🔹1 kg butternut pumpkin, peeled, deseeded & chopped
🔹2×400g no added salt chickpeas, rinsed & drained
🔹3 large onions, finely chopped
🔹4 cloves garlic, peeled & crushed
🔹4 celery stalks, finely diced
🔹4 tsp fresh ginger
🔹2 long red chilli, deseeded & finely chopped
🔹4 tsp extra virgin olive oil
🔹4 cups no added salt vegetable stock
🔹2 tbspn pepitas
🔹2 tbspn shredded coconut, lightly toasted
🔹4 cups of water
1️⃣Peel & chop pumpkins
Lightly toasted pepitas & coconut
2️⃣Peel and crush garlic, deseed & finely chop chilli, peel & finely grated ginger
3️⃣Chop onion & celery
5️⃣Heat oil in saucepan
6️⃣Cook onion and celery, stirring continuously until soft.
7️⃣Add ginger, garlic & chilli and cook staring till tender
8️⃣Add the sweet potato, pumpkin, chickpeas, stock & water and bring to boil. Reduce heat and simmer uncovered until vegetables are tender.
9️⃣Blend soup until smooth, season with cracked black pepper and top with pepitas & coconut 🔟Serve with Greek yoghurt and/or lime & enjoy with fresh sourdough 🥣
Serves 8 so there’s plenty to freeze!
