Wheatberry Sloppy Joes. We used @minimalistbaker ‘s recipe for vegan sloppy joes, but used wheatberries instead of lentils. I’ve had wheatberry sloppy joes before from @forksoverknives and I really liked the texture of the wheatberries. Since we’ve had @minimalistbaker ‘s recipe before (and loved it) we wanted to see how it was with wheatberries. It was definitely a success! We served it on @costco artisan rolls with a side of coleslaw from @itdoesnttastelikechicken ‘s cookbook.
Rosemary lemon lentil soup and salad. 🍋🍲🥗🌿💚 The amount of greens I eat nowadays is unbelievable to me. I'm about to devour this entire plate and I used to hate kale!! 🙊🤷 I may post vegan treats here and there, but 90-95% of the time I'm eating sooo healthy. 🙆 I still do a 64oz green smoothie packed with 75% greens and 1/2 cup of flax & chia at the very least 6x a week. It's really helped my energy, my skin and my rashes. Trying to get more veggies in my diet I was amazed by how good cooking some kale in a pan with a little olive oil and some raw basil pesto is 🌿 it’s bloody lovely! So I recreated it again with some red pepper and scrambled egg for breakfast 🍳 what a nutritional powerhouse. I’m learning so much about the microbiome 🦠 - I’m fascinated by it and am so aware that it holds the key to A LOT of health issues, including my own. It’s 5’clock somewhere 🍹❄️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ But really, there’s a good chance you’re going to a holiday party sometime this weekend and will have the option to drink alcohol and/or eat something you didn’t cook. It could be a total “throw the towel in, it’s a holiday party” indulge fest, or you could follow my 8 simple tips for mindfully enjoying so you’ll still feel motivated to hit the gym tomorrow and drink your green smoothie: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1} Have a healthy snack before you go. This is my go to, always. Never show up starving! It’s a recipe for disaster 😝 2} Make your first (or only) drink water. If you’re imbibing, alternate between alcohol and water, 1 for 1 3} Scan the whole food area to see what you’re working with. Makes it much easier to make good choices 4} Go for the veggie tray (even if it’s kinda boring, you know it’s good fuel). Combine with a salad, lean proteins, and lighter dishes if available 5} Minimize any sugary drinks, mocktails or cocktails. Or stick to a simple vodka/soda water/lemon 6} Have a small amount (or bite) of dessert if you know it’s awesome. Savor it. I have a sweet tooth and love me some treats, but I do not waste my time/appetite on things that aren’t delicious! 7} Get back to your routine tomorrow. Even if you overindulged, tomorrow is always a fresh opportunity to take good care of yourself ☀️ 8} Enjoy! It is the most wonderful time of the year after all 🎅🏼 🎄 ⠀⠀⠀⠀⠀⠀⠀⠀⠀

⭐️Patatitas con Salsa Verde⭐️ . Feliz noche de viernes familia ☺️. Hoy cenamos, entre otras cosas, esta bandeja de patatitas. Las vi el otro día en la frutería y no me pude resistir 😅. . Os cuento cómo las he hecho: 🌱Las he hervido unos 15-20 minutos hasta que han estado tiernas. 🌱Las he pasado a una fuente de horno y las he machacado levemente sin llegar a romperlas. 🌱Les he puesto sal, pimienta y aceite de oliva y las he metido en el horno. 🌱Cuando llevaban 10 minutos les he añadido una cucharada de mi salsa verde de perejil y ajo (receta en mi libro y en mi web) y las he removido bien. 🌱Las he horneado 5-7 minutos más y las he servido con un poco más de salsa verde por encima. . Podría ser una buenísima y rapidísima guarnición para nuestros platos navideños 🥳🎄. . Tonight we're eating Toasted seed and tahini slaw. Currently my top favourite #riverfordrecipe Fabulously uses #carrots #cabbage and #redonions which all feature in our #organicveg boxes at this time of year. Ingredients: 4 tbsp mixed seeds (eg. sunflower, sesame, pumpkin, linseed) 4 tbsp plain yoghurt 1 garlic clove, crushed or grated 1 tbsp light tahini (sesame) paste Juice of 1 lemon ½ Savoy cabbage, core & tough ribs removed, leaves very finely shredded 2 carrots, peeled & coarsely grated 1 small or ½ large onion (red or white), very finely sliced Salt & pepper Method: Toast the mixed seeds in a dry frying pan for 1–2 minutes over a medium heat, until fragrant. Mix the yoghurt, garlic, tahini and lemon juice in a large bowl. Add the cabbage, carrot, onion and toasted seeds, season and toss gently to combine. Next up, make a list of all the things you love about yourself and why. I’ve seen broccolini in the grocery store so many times but I never get it because it always seems so expensive 🙃 but I finally decided to #treatmyself and I’m in love! It’s sooo yummmmy!!!⁣⁣⁣ ⁣⁣⁣ You may be wondering... how in the world do you cook broccolini?! Well, I don’t know what other people do but I’ll tell you how I did it and it was amazing 😉 ⁣⁣⁣ ⁣⁣⁣ Recipe: ⁣⁣⁣ •Put broccolini in a pot and cover with broth (I used chicken bone broth). Cook over medium heat until the stalks are tender, then take out of broth and put on plate and add desired seasonings - I didn’t add anything tbh cause it soaks up the flavor of the broth. (Ps. Lunches are almost never pretty for me. They usually consist of some form of dinner leftovers or a big bowl of things like this thrown together to make a salad. Although it’s a bit of a hodge podge, this salad is packed with everything good in this world and keeps me fueled all afternoon. I change it up from day to day, but on this day my bowl is full of salad greens, canned salmon, carrots, tomatoes, grapes, raspberries, roasted pepitas, hemp seeds, and my favorite homemade balsamic vinaigrette! For the vinaigrette: - equal parts olive oil and any vinegar (this has balsamic but I’ve done it with apple cider, white wine, red wine, etc) - A quick squeeze of Dijon mustard - A more generous squeeze of honey - A little salt - A lotttt of black pepper - Put it all in a sealable bottle and shake it up!
