Spicy 🌶 Butternut Squash Sauce 🤤 I made this delicious sauce and paired it with my favorite @tolerantfoods
lentil pasta. You can control how spicy you want to make it. I made it from an entire butternut squash... not the pre- cut squash from the grocery store. It only took a couple extra minutes and was waste free. Anything pre-cut from the store is overpriced and made with so much packaging.
2 Tbsp olive oil
2 Tbsp sage (optional)
1 chopped onion
1-2 garlic cloves (you decide the spice level)
1/4 Tsp red pepper flakes (This was pretty spicy for me so do less if you aren’t a fan of spicy)
Salt and pepper
2 cups veggie broth
In large saucepan heat up 1 Tbsp olive oil. Peel and chop squash into 2 inch squares. Add to pan. Chop onion, and garlic. Add to pan. Let cook for 5 minutes. Add in red pepper, salt, pepper and vegetable broth. Bring to a boil, then simmer for 15 minutes. While cooking, heat up olive oil in other pan. Add sage, salt and pepper. Cook until crisp. Once squash mixture has cooked, put in blender, blend until smooth. Enjoy with your choice of pasta and garnish with sage.
Sometimes you just start throwing things together and have no idea where it’s going...and sometimes it ends up an absolute masterpiece. Dinner was exactly this:
Zoodles and kale in a creamy tahini tomato sauce, crispy air-fryed chickpeas, and lemon garlic roasted broccoli.
Creamy tahini tomato sauce:
2 tbsp tahini
2 tbsp tomato paste
1 tsp dried basil
1 clove crushed garlic
1 tbsp lemon juice
1/2 tsp red pepper flakes
Salt & peppa
(This is gonna be a new go to because D A Y U M this was amazing)
