Seared Scallops on top of Cauliflower Gnocchi in a Lemon Pesto Sauce

Cauliflower Gnocchi so decided to whip up this dish! I made a simple pesto by blending some Basil, Spinach, Arugula, Walnuts, Garlic, Parmesan Reggiano, and some EVOO. -
I cooked up my gnocchi in the air fryer so check out my steps on my last post for that! While that was cooking, I sautéed some Mushroom, Pancetta, Onion, and Fresno Pepper. I then seared my Scallops in some EVOO and Butter.
For the sauce, I added some pesto to the pan and added in some Lemon juice and butter. Then I tossed in the mushroom mixture and some of the gnocchi and got everything coated then put on a plate and topped with the scallops! This was out of bonds bomb.com! 😃👍
