Guys. I. Did. The. Unthinkable. I ran 4 miles. In a row. Without stopping!!!! What?!?!?! So overwhelmed with emotion. It was hard. I wanted to stop after 2 miles. And then Michael Jackson’s Smooth Criminal came on again. Annie are you okay? Crystal are you okay? Are you okay Crystal?! Yes. I fought back tears and a slight emotional attack. I had to concentrate on my breathing. I was so overwhelmed, once again with this song. I’m okay. I’m a fighter. Ive been to hell and back. Motivation? Maybe some. It’s discipline you guys, build habits and stick with them. No excuses. Watching your child seize and feeling helpless because there’s nothing you can do, it changes you. I’ve been through more than I wish I had been. To having 2 parents who weren’t parents, a sister who told you that you wouldn’t live past 25 because you’re FAT. And things that I wish not to even talk about. I used those as excuses for far too long. I always thought, maybe I was destined to eat myself to death. I’m no good. My parents don’t want me, who would? I thank God for my husband, loving me through my pain, anger and sadness. I always wanted to marry a man just like my grandpa, God rest his soul. And when I met my husband, I truly found my love and heart. My husband and kids are my life. I have to live for not only me, but them. My 2 1/2 year old stroke survivor has beaten a stroke. He fights epilepsy and cerebral palsy. He’s my hero. Mommy will fight too, buggie boy. Banana Oat Pancakes🥞 Happy Saturday! Pancakes are always a great way to start a busy day ahead😋 Ingredients: 2 ripe bananas 2 cups old fashioned oats 2 eggs 1 cup your favorite milk (I used coconut milk) 1 tsp vanilla extract 1 tsp cinnamon 1/2 tsp baking powder 1/4 tsp sea salt Place oats in blender or food processor and blend until a flour forms. Mash banana until applesauce-like consistency. Put everything in a bowl and mix. Heat skillet to medium heat. Pour 1/4 cup of batter onto skillet and cook about 4 minutes or until bottom is golden brown. Flip with a spatula and cook for 2 more minutes or until golden brown. Repeat with remaining batter. Top with pure maple syrup and fresh berries ✨

¿Sábado de lasaña? ¡SÁBADO DE LASAÑA! Pues eso, hoy me he venido arriba y he vuelto a preparar una rica lasaña de verduras y tofu, con la misma receta de la última vez y, como siempre, sin gluten. RECETA: 1️⃣ Cortamos en tiras finas las verduras (cebolla, puerro, calabacín, pimiento verde, pimiento rojo, zanahoria, berenjena, ajo y champiñones), y en cuadraditos el tofu (yo uso tofu firme de @friasnutricion ), y lo ponemos todo a fuego medio en un wok (tapado) para que se vayan pochando poco a poco. 2️⃣ Cuando las verduras estén pochadas, añadimos al wok unos arbolitos de brócoli, hojas de espinacas y media lata de tomate triturado (yo uso el de @apisoficial ). 3️⃣ Añadimos al wok las especias que queramos. Yo le puse un poco de sal yodada, pimienta negra, curry, ajo en polvo, perejil y hierbabuena fresca. 4️⃣ Montamos la lasaña: Ponemos un poco de tomate triturado en la base, una placa de pasta, una capa de relleno, otra placa de pasta, otra capa de relleno, una placa más de pasta, un poco de tomate triturado, y por encima el queso (podéis añadir bechamel si queréis, pero a mí no me gusta mucho, así que preferí no hacerla). ~SUGAR FREE WHOLE WHEAT CHOCOLATE CHIP COOKIES~ Yesterday night I had a crave for something sweet and I wanted it right away. So I decided to make a 5 minute sugar free chocolate chip cookies with sliced sugar free dark chocolate, white spelt flour, eggs, a little butter, a sweetener, baking soda and a pinch of salt.
