I’d never driven a food truck before, but it’s become one of my favorite things about this business. It’s fun to see people pointing at the truck, laughing at it, or taking pictures of it.
And I’ve tried to make the inside fun, too. I’ve decorated it with Red Sox stickers, Christmas lights, and all sorts of things that make me happy.
The first two things I do as soon as I unlock the truck in the mornings are turn on the Christmas lights and start playing music. My morning kitchen routine has always involved double-checking equipment and triple checking food, but now I feel fortunate to get to do that in my own kitchen, surrounded by festive lights and souvenirs from some of my favorite places.

Awesome Tacos aren’t the only thing we serve! I love making tamales—I was taught how to make them by a Salvadorian woman named Gloria, who was an A.M. prep cook I worked with in my early twenties. No matter what the tamale special is, I suggest upgrading to “messy style,” which means with a fried egg and spicy Korean mayo. We can only fit so many in our tamale pot, so this is often the first thing we run out of.
We’ve also got a Mexican crackerjack—and you can't call yourself a crackerjack unless you come with a prize!
I love to innovate and use seasonal ingredients, so I’m always playing around with a seasonal vegetarian side—stop by the truck to see what we are serving this month.

When I was writing the menu for the taco truck I knew I wanted a few things:
1. A chicken taco I’d want to eat every day for the rest of my life
2. A vegan taco so delicious even non-vegans would order and enjoy it
3. Something from back home.
I come from fine dining—I worked in an award-winning white-tablecloth restaurant for fifteen years, I’ve cooked at the James Beard House—so I think of tortillas like edible plates, and I think of each taco as a composed dish, aiming for awesomeness in every bite.

I’ve lived in Nashville for almost five years, and I’ve been a chef pretty much my whole life. Back in Boston, I was the head chef at an award-winning date night Mexican restaurant and really enjoyed writing that menu and working professionally with Central and South American cuisine for the first time.
Then I moved down here and spent a few years working with the incredible team at @lockelandtable.
True to the local spirit, Hal and Cara were incredibly generous and welcoming—I couldn’t have found a better place to start my Nashville adventure. But I wanted to get back to making tacos, so in early 2017 I left to start That Awesome Taco Truck with my wife.
