½ cup unsalted butter, melted⠀
1/2 teaspoon espresso powder ⠀
ESPRESSO CHEESECAKE FILLING:😘🍮
400g dark chocolate⠀
1 ½ teaspoon espresso powder ⠀
500g full-fat cream cheese, at room temperature⠀
200g granulated sugar⠀
60g brown sugar⠀
1 tbsp Dutch-process cocoa powder ⠀
1 ½ teaspoons vanilla extract ⠀
1 cup thickened/whipping cream⠀
ESPRESSO GANACHE: 🌰😉
400g dark chocolate⠀
300g thickened/whipping cream⠀
60g unsalted butter⠀
1 tbsp espresso powder⠀
Espresso beans, for garnish, optional ⠀
White chocolate shavings, for garnish.

to one of my very first posts on this feed. Note, this post is gonna get kinda honest & real, so feel free to skip over it if you're here just for the food pics.
Instagram/social media is a great place to be seen, without being "seen". You can hide behind the photos and comments, share only what you want people to see...but that's not always reality. I guess that can be a comfort zone for many people. So here's a bit about how/why I'm on here.
My passion for being in the kitchen was born from dealing with anxiety, personal fears/insecurities etc. It was my escape...to completely put my energy into something and take my mind off the things that were clouding my focus. I have grown to love learning, creating & experimenting with different ideas and it turns out I'm not half bad at it either...but it's still (for now) mainly an outlet to calm and recenter myself and my mind.
Some of my best creations, were/are the result of me having a really crappy day...but obviously I'm not gonna share that in the caption. It's seems easier to stay behind the camera and have people judge/see only the best bits.
I appreciate so much, the support and enthusiasm I receive when I post something new, from everyone who interacts with me on Instagram. It's definitely a confidence booster!
I guess I'm just posting this here so I can have it in writing, to get out of my comfort zone, to take control and 'own' my anxiety and fears and not let them control me and my plans to do what I enjoy doing. I'm slowly learning that It's not weakness to admit that you struggle sometimes.
There's no quick fixes in life, but I want to be able to say that 2019 was the year I started LIVING MY BEST LIFE. I often get asked when am I going to start my own business full time...I really don't know yet. I definitely think I'd like to have a career in food/patisserie someday sooner rather than later, and hopefully this is the first of many small steps for me to get to where I'd like to be.

In all reality, I have been all over the place eating wise this month but have maintained the same weight (within 2-3# either direction) all month. So, as I have said before, I am figuring out this whole balance thing. However, I am feeling super ready to "level up" and kick it into high gear and get back into losing mode! Even though I have been "balanced" I dont feel as good as I do when I am eating healthier and getting my water in. And for the love of God, I need to get my butt to a meeting!!!

Hi all! I hope you’re having a good week so far! Here’s another peek at the French madeleines I made last week. Topped with a pink glaze that’s made with fresh raspberries and a dash of rose water. 😍 Elegant, delicious and also dairy and gf. These cookies are only 3 ingredients (+ food coloring & sugar sprinkles)
& just look how fun they are 🌈🍪
1 box of White Cake Mix
1/3 C Vegetable Oil
2 Large Eggs
1 container of White Sanding Sugar
Pink Yellow, Black, and Teal Gel Food Coloring
Preheat oven at 350º F.
In a mixer, combine cake mix, vegetable oil, and two eggs
Divide the dough into four separate bowls
Mix each color into a separate bowl
After mixing you should have four bowls that are pink, yellow, teal and black
(I used Wilton Food Coloring. You can get it at most craft/baking supply stores)
Take about 1 teaspoon of each color of dough and form into small sized balls. (Note: I made about TABLESPPON sized balls and at that is why mine are so big. Just as cute but a lot harder to get to bake all the way through)
Take a piece of each color and gently roll the balls in the palm of your hand until they become one bigger, mixed color ball
Pour the sanding sugar into a bowl and roll each combined dough ball in the sanding sugar
Finally, place the cookie dough balls about 2 inches apart on a parchment paper lined baking sheet, lightly pushing each dough ball down until it is flat like a thin hockey puck. (Don’t make them too thick or they might not cook all the way through!!)
Bake for 7 to 8 minutes.
Allow cookies to cool completely before enjoying!

My bf is a total square. He really makes me filo!
You know what doesn't make me filo, dough😏? This bleeping delicious bougatsa, aka layers of flaky, buttery, warm, yes, you guessed it, filo, filled with custard.
Came here on a quest for loukoumades, or Greek 🍩doughnuts. Was 😳crestfallen to learn the machine to make these wasn't working. So much so that I almost left. That is, until a staff person lured me with this bougatsa. Yes, I like writing 'bougatsa😉.' So what? Anyway, my dining partner-in-crime was especially entranced by this, ultimately declaring it the best thing he ate on what turned out to be a looong day of food crawling.
This is a tiny place with minimal counter seating. By all appearances, it's a 💗beloved community hub, which is always a surefire way to charm me. I plan to return again and again if I have to in order to complete my Greek doughnut mission. If it's the last thing I do.😋😋😋
