This is one of my favorite recipes to batch cook. This super healthy tomato veggie sauce is loaded with spinach, zucchini, carrots, capsicum, mushrooms, beetroot, onions and garlic. It’s one of my go to meals because it has so many nutrients in it plus it takes no time to prepare. Take 1 or 2 squares from the freezer, boil some pasta and that’s it. I also like to add pre-made meatballs from the freezer too for some added protein.
PUFFED RICE PEANUT BUTTER BALLS: You Will Need: Puffed Rice Peanut Butter Honey Powdered Sugar Raisins How To: Take honey in a bowl. Add powdered sugar to honey. Add peanut butter. Combine the ingredients Add puffed rice. Add raisins (optional). Mix the ingredients together. Now make tiny balls from the mix. Vietnamese Salad with Cashews 125g vermicelli noodles cooked Red cabbage, shredded Cucumber, sliced Spring onions, sliced Handful of mint 1/4 cup of @community_co cashews Mix salad together & toss with a dressing of 1/4 cup soy sauce 2tbs maple syrup 2tbs lime juice 1tbs sesame oil 1tbs peanut oil Small garlic 2-3tsp sambal oelek

I usually do, and try to make it super healthy and as appetizing as possible so I can always stick to it 😋 It's the best way to do it, right?👏 ______________________________________________ Here is what I made today 👉Zoodles & Meatballs👈 makes 4 servings ☝️ INGREDIENTS: 1 lb. ground lean turkey 3 large zucchini 2 Tbsp oil 1 cup breadcrumbs or Panko 1/2 cup grated Parmesan cheese 2 medium eggs 1/2 Tbsp dried oregano 1/2 tsp sea salt, or to taste 1/4 tsp ground pepper 1 garlic clove, minced 1 (15oz) can marinara sauce 1/2 tsp chili flakes (optional) 2 Tbsp fresh chopped basil ☝️ INSTRUCTIONS: To a mixing bowl add ground turkey, 1/2 cup breadcrumbs, Parmesan, eggs, oregano, salt and pepper. Mix well to combine then form about 12-14 meatballs. Coat meatballs into the remaining breadcrumbs.
Heat oil in a large skillet over medium heat. Cook meatballs until golden browned, about 6-7 minutes. Stir in the marinara sauce and bring it to a gentle simmer, then take it out of the heat. Season with fresh chopped basil. Meanwhile, make zucchini noodles using a spiralizer. Add about 2 handfuls of zoodles to each meal prep container, then top with meatballs, sauce and a sprinkle of chili flakes. Refrigerate for 3-5 days. I love hummus so much! It’s a real staple in my house. It’s an easy way to get high quality vege protein in to you. It’s so yummy and great for snacking too. If a main dish is looking a little dull or meh, just add a dollop of hummus and your back in fancy town (obviously depending on the dish). I always make my own these days. 1. Because it’s way more delicious that way and you can tweak the flavours to your liking. 2. It’s so much cheaper than buying from the super market. Even cheaper still if you buy your chickpeas in bulk. 2 cups cooked chickpeas 1 tbsp tahini 1/2 tsp cumin seeds 2 tbsp lemon juice 1 clove of garlic 1/2 tbsp salt A Sprinkle of paprika if you like. Put all ingredients into a food processor and blend until smooth and creamy. Xx

Just returned home from a trip to Asia and am feeling super jet-lagged. But the idea of a hot bowl of chicken noodle soup snapped me out of my grogginess! I decided to add in milk as part of my soup base, giving this a beautiful creamy texture. So perfect for a simple dinner at home. . . 1. Dice 1 small white onions, 3 sticks of celery, 1 stick of carrot 2. Stir fry the chopped veggies in a large soup pot with a little olive oil over medium heat. Season with salt and pepper. 3. In a separate pan, pan fry diced chicken thigh in a tablespoon of butter and minced garlic. Season with salt and pepper. When it is nearly cooked, add the chicken into the same pot as the veggies. (Feel free to add in any other veggies you like. Sometimes I’ll add in green beans, corn or zucchini.) 4. Add 1 cup of chicken broth and bring to a boil. 5. In a separate pot, boil pasta in salted water until it is a few minutes from fully cooked. Drain and set aside. 5. Once the soup is boiling, bring heat down to low and slowly add in two cups of 2% milk while stirring. Careful not to burn the milk or it will start curdling. Add in the drained pasta. 6. Lastly, sprinkle in a teaspoon of oregano. Let everything simmer and come together for a couple more minutes until pasta is fully cooked. Add in more salt and pepper (maybe even red pepper flakes!) to your liking. . . Take a ripe banana and mash it properly 2. Add 2 eggs and beat it well 3. Add about 100 ml milk (toned) beat well 4. Add a spoon of peanut butter and half a spoon cardamom powder. Beat the mixture well 5. Add some cooking oil or butter to a non stick pan and let it heat 6. Take some of the batter and put it on the pan on medium high flame 7. Let one side cook and repeat the same for the other side 8. Serve by topping the pancake with honey 9. Yummy pancakes ready to be gorged!!

Ingredients: 1/2 cup homemade mayonnaise 1/2 cup full fat sour cream or plain greek yogurt 1/2 cup buttermilk (I used paul’s) 1 tbs fresh dill - finely chopped 1 tsp fresh chives - finely chopped 1/2 tsp dried parsley (use fresh if in stock) 1/2 tsp garlic powder 1/4 tsp onion powder 1/4 tsp pepper powder (black or white) 1/4 tsp salt (I used fine pink salt) 1 1/2 tsp fresh lemon juice (or to your preference) 1/2 tsp cayenne (optional) 1/4 tsp smoked paprika (optional) 1 tsp sriracha sauce (optional) 1/2 tap worcestershire sauce (optional) • How to: 🥣Stir together mayonnaise and sour cream. 🥣Add in garlic powder, onion powder, white pepper and salt. Stir. 🥣Stir in cayenne, smoked paprika, sriracha and worcestershire sauce if using - Skip if not. 🥣Add along the herbs - parsley, chives and dill.
