Have to say I was pretty impressed with the fact that the toppings on this smoothie didn't sink to the bottom😆🤸🏻‍♀️ 🍹 I just love the fact that you can fill up a smoothie with so many nutrient dense, healthy stuff, and still have it taste like a yummy chocolate milkshake-ish drink 😁😎 . We all know by now that chocolate (actually cacao) helps to improve your mood.. But did you know that it could also help to alleviate stress and contains antioxidants and minerals like iron, copper and maganese?!🙌🏼✨ . Unfortunately, this is not a free ticket to eat as much chocolate as we want (though I still sometimes do.. Ooops). Make sure to check your labels and try to choose chocolate with at least 70% cocoa content, contains less than 7 ingredients and that preferably uses natural sugars like stevia, or raw honey. ~ BAKED BEANS ~ . Homemade baked beans. Such a quick, easy, nutritious and affordable breakfast lunch or dinner. . Today, we had baked beans on toast with poached eggs for lunch as Mark requested. Even Elise (nearly 8 months) enjoyed them, although I slightly mashed them up for her as her teeth are yet to break through. . Homemade baked beans are much more nutritious than canned ones. They are packed full of protein and are a great source of fibre and low GI carbohydrates. Everyone needs a classic pumpkin soup recipe! 🎃 This thick, rich soup is utterly delicious and is the perfect winter warmer! Please don’t laugh at how big that pumpkin looks compared to my baby hands!!! – N x . PUMPKIN SOUP | Serves 4-5 as a main . INGREDIENTS 2 lb/1 kg pumpkin (any), unpeeled weight (Note 1) 1 onion, sliced (white, brown, yellow) 2 garlic cloves, peeled whole 3 cups / 750ml vegetable or chicken broth, low sodium 1 cup / 250 ml water Salt and pepper Finishes: 1/2 - 3/4 cup / 125 - 185 ml cream or half and half or 3/4 cup / 185 ml milk (any type, I use low fat) . DIRECTIONS 1. Cut the pumpkin into 3cm / 2.25" slices. Cut the skin off and scrape seeds out. Cut into chunks. 2. Place the pumpkin, onion, garlic, broth and water in a pot - liquid won't cover all the pumpkin. Bring to a boil, uncovered, then reduce heat and let simmer rapidly until pumpkin is tender. 3. Remove from heat and use a stick blender to blend until smooth. If you don't have a stick blender, use a blender but let soup cool a bit first (hot soup in blender = soup explosion). 4. Season to taste with salt and pepper, stir through cream to taste (never boil soup after adding soup, cream will split). 5. Ladle soup into bowls, drizzle over a bit of cream, sprinkle with pepper and parsley if desired. SUSHI BOWL, another quick dinner comin’ in hotttt. Marinated chicken in braggs, garlic, ginger, raw honey, sesame oil, and chilli flakes. Pan sear both sides, finish in the oven at 350 for 8 mins. Mandolin carrots and cucumber - a fast way to get the veggies chopped quickly, bonus you can have them nice and thin! Used kitchen scissors to cut a sheet of nori. Made some rice, toss it all together! I prepped everything and cooked the chicken during nap time. Real life: I eat a lot of meals out of containers. Yah, it’s not as exciting as a beautifully plated rainbow filled meal, but the alternative for me would be convenient not so healthy foods.. so I make this lifestyle work for ME. I don’t follow a meal plan that doesn’t allow certain food groups (not sustainable) and I get to choose the foods I want to eat and that work for me and my body. I hate when people tell me they don’t have time to meal prep or get a few meals ready ahead of time. How many minutes do you sit and wait in a drivethru line? 🐸☕️ take control of your time and quit making excuses. I don’t make meals for a whole week at a time because I would get sooo bored. Ingredients: 6 eggs whisked 1/2 block of Philadelphia cream cheese softened in the microwave 1/2 cup grated cheese 4-5 spring onions thinly sliced 4 rashers bacon chopped and lightly fried till just starting to crisp Salt and pepper to taste . EASY Asian Chicken Stirfry: In a large pan add 1 bag of frozen riced cauliflower, 1 bag of frozen California Mix veggies, 1/2 an onion diced, 2-3 cloves diced garlic, 5-6 dashes of ground ginger, roughly 1/8C coconut aminos (I just eye-balled it), & leftover chicken (cook double the night before). Cover & simmer on medium-low for 8-10 minutes. Enjoy! Note: Try adding a dash or 2 of red pepper flakes. But I checked the ingredients and discovered it’s sweetened with stevia leaf, a natural sweetener. Yep, that’s eggs in my meatballs...🤷🏻‍♀️ Don’t knock it until you try it. On a scale from 1-10 of me following the recipe instructions I would give myself a 2, which is kinda awesome because this had AMAZING flavor and I was able to flex my artsy fartsy muscle in the kitchen. My girl @setoney05 sent me the recipe and I got the basics of it and put my own little twist on it. Served it over pasta zero noodles which were really really good. #psa though...bag says noodles will have an “earthy” smell upon opening...ummm hold your britches because it’s like dead washed up fish smell in a sea lions den...BUT, stay with me...rinse them super duper good before boiling and they will be fine! Steak and Greek salad 7. Cauliflower pizza Each meal takes under 30 minutes and are very budget friendly. Eating healthy doesn’t have to be hard or expensive.

One of my fave things to cook and eat is pasta. I know, so original 😬 I keep things interesting by mixing up the sauce, veg, and legume. Tonight we had cashew-hemp cream sauce; sautéed garlic, mushroom, green pepper, kale and tomato; brown lentils; roasted squash; and fresh oregano.
