High fat, plenty of carbs and a touch of protein 👌🏼 Tasty little mix to start the day
Have a great day all 😊

Prawn cutlets with creamy garlic sauce, some casual zoodles and a sprinkle of my favourite dairy-free cheese substitute: nutritional yeast 😋😋
Have to say I was pretty impressed with the fact that the toppings on this smoothie didn't sink to the bottom😆🤸🏻♀️
I just love the fact that you can fill up a smoothie with so many nutrient dense, healthy stuff, and still have it taste like a yummy chocolate milkshake-ish drink 😁😎
We all know by now that chocolate (actually cacao) helps to improve your mood.. But did you know that it could also help to alleviate stress and contains antioxidants and minerals like iron, copper and maganese?!🙌🏼✨ .
Unfortunately, this is not a free ticket to eat as much chocolate as we want (though I still sometimes do.. Ooops). Make sure to check your labels and try to choose chocolate with at least 70% cocoa content, contains less than 7 ingredients and that preferably uses natural sugars like stevia, or raw honey.
If this🔝 isn't possible, don't beat yourself up! Remember the aim is progress, not perfection. ✨
For this 🍫Chocolate Smoothie🍫 I blended:
~Ice (...ice baby)
~Cacao powder ~Vanilla ~Stevia drops ~Coconut milk ~Soy protein powder
~Cacao maca boost (from @healthconnectionsa
~Chia seeds ~Spinach (yeah you read right😁)
~ BAKED BEANS ~
Homemade baked beans. Such a quick, easy, nutritious and affordable breakfast lunch or dinner. .
Today, we had baked beans on toast with poached eggs for lunch as Mark requested. Even Elise (nearly 8 months) enjoyed them, although I slightly mashed them up for her as her teeth are yet to break through.
Homemade baked beans are much more nutritious than canned ones. They are packed full of protein and are a great source of fibre and low GI carbohydrates. They freeze exceptionally well and are great to have portioned in the freezer for a quick meal for the kids.

Garlic honey lime salmon, pan-seared on a cast iron and then broiled for 5 min. So fast! I served it on a bed of greens. #postcardfrommykitchen
This was prepped last night...
Dinner tonight + lunch for tomorrow= less stress for this busy momma
It’s about that time for a good ole bowl of pumpkin soup😋 #Repost
Everyone needs a classic pumpkin soup recipe! 🎃 This thick, rich soup is utterly delicious and is the perfect winter warmer! Please don’t laugh at how big that pumpkin looks compared to my baby hands!!! – N x
PUMPKIN SOUP | Serves 4-5 as a main
2 lb/1 kg pumpkin (any), unpeeled weight (Note 1)
1 onion, sliced (white, brown, yellow)
2 garlic cloves, peeled whole
3 cups / 750ml vegetable or chicken broth, low sodium
1 cup / 250 ml water
Salt and pepper
1/2 - 3/4 cup / 125 - 185 ml cream or half and half or 3/4 cup / 185 ml milk (any type, I use low fat)
1. Cut the pumpkin into 3cm / 2.25" slices. Cut the skin off and scrape seeds out. Cut into chunks.
2. Place the pumpkin, onion, garlic, broth and water in a pot - liquid won't cover all the pumpkin. Bring to a boil, uncovered, then reduce heat and let simmer rapidly until pumpkin is tender.
3. Remove from heat and use a stick blender to blend until smooth. If you don't have a stick blender, use a blender but let soup cool a bit first (hot soup in blender = soup explosion).
4. Season to taste with salt and pepper, stir through cream to taste (never boil soup after adding soup, cream will split). 5. Ladle soup into bowls, drizzle over a bit of cream, sprinkle with pepper and parsley if desired. Serve with crusty bread! .

When I don’t feel like slaving away over dinner I like to make tuna melts. They take less then 10 minutes to make. So easy and so yummy. .
Also is it just me or does this dinner look like a smiley face?! 🙃

Easy crustless quiche ⭐️
Perfect for a quick dinner or portioned out for lunches through the week.
6 eggs whisked
1/2 block of Philadelphia cream cheese softened in the microwave
1/2 cup grated cheese
4-5 spring onions thinly sliced
4 rashers bacon chopped and lightly fried till just starting to crisp
Salt and pepper to taste
Grease and line a baking dish with baking paper
Combine all ingredients (don’t worry if the philly cheese isn’t smooth - the creamy lumpy bits are what make this dish so good)
Pour mixture into dish and bake at 180 degrees for about 20 minutes or till just cooked and starting to brown.

My hubby discovered this recipe for Zucchini fries a couple months ago and it's been a popular way to use up zucchini. The kids usually don't mind it but tonight they couldn't get enough, good thing I made a double batch!
A sample of @simplyorange
juice came with our @hellofresh
box and when I saw it was “light” I was skeptical. Usually that means they use artificial sweeteners and that’s a 🚫. But I checked the ingredients and discovered it’s sweetened with stevia leaf, a natural sweetener. My kids love it and feel good about giving them a drink that’s not loaded with sugar and chemicals #momwin
Yep, that’s eggs in my meatballs...🤷🏻♀️ Don’t knock it until you try it. On a scale from 1-10 of me following the recipe instructions I would give myself a 2, which is kinda awesome because this had AMAZING flavor and I was able to flex my artsy fartsy muscle in the kitchen.
My girl @setoney05
sent me the recipe and I got the basics of it and put my own little twist on it. Served it over pasta zero noodles which were really really good.
though...bag says noodles will have an “earthy” smell upon opening...ummm hold your britches because it’s like dead washed up fish smell in a sea lions den...BUT, stay with me...rinse them super duper good before boiling and they will be fine! Promise!
Anywho, looking to get the recipe up on the blog this week. Give me an emoji so I can you on my blog list!! Cheers to Happy Belly’s!!! ❤️ EC
I’m obsessed with this 4 day a week workout program! I workout not to lose weight but to be healthy and strong. ✨
My family is full of heart issues. I can not control my family history but I can control how I choose to live. I choose to be healthy. ✨
Everyone wants to workout and be healthy for different reasons!! What are yours??
In all honesty, this stir fry was just an excuse to eat an unacceptable amount of spicy chili crisp. #justbeingreal
What hot sauce/condiment can you not get enough of?
On reentry from vacation, a 📦 from @hellofresh

Here is a list of what we are having for dinner in my house this week: #mealplan
1. Left over pumpkin chili
2. Chicken “pasta” bake with POW brand lentil noodles
3. Easy zucchini chicken. Literally zucchini layered in a dish with avocado oil and garlic, topped with chicken and spinach, baked with raw grass fed cheese on top 😋
4. Grainless meatloaf
5. Chicken salad in lettuce cups
6. Steak and Greek salad
7. Cauliflower pizza
Each meal takes under 30 minutes and are very budget friendly. Eating healthy doesn’t have to be hard or expensive.
One of my fave things to cook and eat is pasta. I know, so original 😬 I keep things interesting by mixing up the sauce, veg, and legume. Tonight we had cashew-hemp cream sauce; sautéed garlic, mushroom, green pepper, kale and tomato; brown lentils; roasted squash; and fresh oregano. I especially love to use whatever is fresh and in season (the kale, tomato, squash and oregano are all from my garden.) The easiest weeknight meal! #pasta #veganpasta #eatlocal #urbangardener
Kept it light for dinner.. simple yet filling. Doesn't need to be complicated!
Everything but the bagel seasoning
