This Cod with Tomatoes & Basil was SOOOOO pleasing to the palate and beautiful to look at!!!! The best part is that the recipe was easy prep and a quick cook time (20 mins) with minimal ingredients. Husband rated this an 8/10. I rated it even higher! The fish recipe is adapted from my one of my favourite cookbooks from @onceuponachef.

2-4 Cod or halibut fillets (I use cod because it’s less pricy but still great!)
2 cups cherry tomatoes, halved (try to get various colours)
2 medium garlic cloves, minced
1 tsp red wine vinegar
2 tbsp olive oil
2 tbsp chopped fresh basil
Salt & Pepper to taste
1 tbsp olive oil
Bunch of kale, chopped
2 minced garlic
1/4 cup of chicken broth (add more if not all the kale is moist)
Squeeze of lemon
Wash the fish with cold water and pat dry with paper towel. Sprinkle with salt & pepper
In a bowl, combine the tomatoes, minced garlic, red wine vinegar, salt (a few generous pinches), Pepper (not as much as the salt). Heat non-skillet with olive oil on high, wait until its sizzling hot and place the Cod serving side down until it’s a nice golden brown (approx 4 mins). Flip the fish and cook until it’s easy to cut and opaque all the way through (another approx 4 mins). Take the fish off and put to the side. Let the pan slightly. Cook tomatoes on medium heat in the same pan until they start breaking and juices flow out (approx 5 mins). Add in the basil and toss. Taste of it needs more salt and pepper. Place the tomato mixture on top of the fish.
For the kale: At the same time as cooking the fish, you can sauté garlic on medium heat until aromatic (40 seconds). Add in the chopped kale and toss with garlic. Add in the broth (start with 1/4 cup and add more if still dry). Put a lid and turn heat up to high for five minutes. Take the kale out once the liquid is evaporated. Squeeze lemon.
Make a bed of kale with fish and toppings over top!
