had the most delicious clams on their fish counter - serendipity brought me to this glorious spaghetti alla vongole 🍝
Super simple pasta 🍝 - if I had to eat a salad every day for lunch I’d be a miserable person. I like filling, warm, comfort food that often either has shitty ingredients or is too caloric. Even in SF, it’s been sooo hard to find food that optimizes for both health and fitness. Sooo I’ve found ways to make both healthy and fitness-y versions of things I like. They’re not the most delicious things on earth (or am I just being humble mwahaha) but delicious enough for me and QUICK which is KEY.
Added all steps to story/highlight - I used red lentil pasta which is just red lentil flour, aka super wholesome as legumes are great for health. This specific one from @traderjoes
wasn’t great, but whole foods has a ton of delish ones (e.g POW!)
DEETS: I roasted summer squash w/ avo oil + salt & pepper at 400. In the meantime for sauce I did simple garlic, onion, cherry tomato. For pasta used red lentil pasta (try to eat more wholesomey things during the week). Spices: salt, pepper, oregano, basil. Topped it with parmesan & pine nuts.

Dinner tonight was🔥💯I had some grains, veg and herbs that were lying around in my fridge begging to be turned into a power bowl💪🏼
Threw some finely chopped dill and kale into bison meatballs, roasted up some broccoli and threw together a creamy pumpkin seed dill sauce to slather on every bite
👉brown rice and farro, bison meatballs, roasted broccoli, pickled red onions, dill pumpkin seed sauce
i don’t know if this meal will ever get old - so easy, so quick, and SO good 🤗 definitely makes for a solid thursday night 👌🏻 i love thursday nights because it means friday is right around the corner 🤗😂 i’ll be soaking up the last bit of summer at the beach next week - and i’m really hoping i get to come home to some fall weather and not this 95 degree georgia heat 😅🔥 i hope everyone enjoys their thursday night! happy almost friday 😎
🍽➡️ wild caught salmon drizzled with avocado oil and s+p, then broiled in the oven on high for about 12 minutes (i place a slice of lemon on top for the last 3-4 mins). Asparagus sautéed in avocado oil on the side 🍣🍋

🌕🍴🍚🥦🥒🥕 🥥🥜 Tibetan Mama (vegan/plant based 🌱👍🏼). Organic brown rice bowl topped with coconut peanut butter curry sauce, and steamed vegetables & kimchi. One of my go-to plates at Le Botaniste 🤤 assuming I don’t proceed with a creative thought: right amount of spice, savory (the curry has garbanzo/chick peas inside), and best of all: vegan/plant based and nourishing at boot! I recommend to pair this off w/ their raspberry lemonade 🍓🍋🍹 (whenever available) as seen in my other photos ➡️, works as a good fit to cool the spice! It’s been ages since I’ve visited Le Botaniste, a reputable series of eateries in NYC themed around a healthy apothecary touting to be a “100% plant based restaurant”, so I’m in! Ordered one of my favorites for old times sake, and a healthy dose of nostalgia later, I’m clamoring for leftovers for home. Thank you for the fabulous meal again, until next time! 😀

Tonight's dinner was chickpea and chicken curry made with tinned toms, chickpeas, coconut milk, sweet potatoes, courgettes, onions, 4 garlic cloves, 1tbsp curry powder, 1tsp mustard seeds, 1/2 tsp tumeric, tsp chilli powder and ginger. It's the fall back recipe that's keeping us away from the takeaway tonight as I recover after surgery yesterday (there's a whole new post coming on that soon) .

It actually started out as a kids lunchbox last week but was so good it's made it's way to our kitchen table. .
Tonight I'm thankful for my family, amazing doctors, hugs from my boys, my heart being fixed and a whole new me in the coming weeks...oh and Netflix and copious amounts of Roobois Tea over the next few days ❤️

Get the dipping sauce ready for these mouth-watering avocado fries! 🥑🥑🍟 Ingredients:
2 avocados, each sliced into 8 thick wedges
1 egg lightly beaten
1/4 cup flour
1 cup coarsely ground almonds
1 tsp. Lee Kum Kee Panda Brand Dipping Soy Sauce

How to make it:
Preheat oven to 400°F. Grease sheet tray fitted with parchment.
Combine the dipping soy sauce and egg. Gently dredge the avocado slices in flour, then dip in egg mixture. Coat in almond meal. Continue until all the slices have gone through all three stages.
Place in a single layer on the greased sheet pan. Drizzle with the remaining oil or spray with cooking spray. This will help the avocado slices crisp in the oven.
Bake for 15 minutes or until the avocados are golden and crispy. If desired, more oil can be drizzled while they are baking for additional crispness. Serve with Lee Kum Kee Panda Brand Dipping Soy.

Smoky chorizo salmon 🐟🍴 Een van mijn favoriete recepten uit een van de vele kookboeken van Jamie Oliver: 5 Ingredients. Dit boek is echt een aanrader voor iedereen die met zo min mogelijk ingrediënten de lekkerste gerechten op tafel wil zetten.
*Cosy carrot soup topped with homemade sour cream*
Few minutes for max effort 🙌

for the Soup
400 ml Water
1 Pepper (Yellow or Orange)
4-5 Basil Leaves
1 tbs Tomato Paste
1 tsp Vegetable Stock
1/2 tsp Garlic Powder
1/2 tsp Chilly Flakes
Salt & Pepper
for the Sour Cream
100 gr Cashew Nuts (soaked for 4 hours)
120 ml Water
1 tbs Lemon Juice
1/4 tsp Pink Himalayan Salt
1/4 tsp Dijon Mustard
1.Rougly chop the veggies and place in a microwave proof container along with water, basil, tomato paste, vegetable stock, garlic powder, chilli flakes, salt and pepper.
2.Cover with film and pierce the film a few times with a fork.
3.Micowave for 10 minutes at 800W.
4.In the meantime let’s make the sour cream.
5.Drain and rinse well the soaked cashews.
6.Add all ingredients in a blender and blend for a few minutes until smooth and creamy. Give it a little taste and adjust salt or acidity, according to your own tastes.
7.Once the veggies are cooked blend the soup, pour into a serving dish and top with extra virgin olive oil, sour cream, nutritional yeast and mixed seeds. Best served warm.
Not the prettiest but this mixed bean chili is a super quick, tasty and cheap dinner or lunch option 👌🏻
To make this you will need 👇🏻
👩🏻🍳1 small red onion, diced
👩🏻🍳10 button mushrooms, chopped 👩🏻🍳1 clove garlic, crushed
👩🏻🍳1/2 tin chopped tomatoes 👩🏻🍳1 tin mixed beans (kidney, butter beans, etc)
👩🏻🍳1 tbsp coconut oil
👩🏻🍳1 tsp cayenne pepper
👩🏻🍳1 tsp mixed herbs
👩🏻🍳a generous dash of Himalayan sea salt
🥄Fry the onion and garlic in coconut oil until softened and then add the mushrooms. Cook for another minute or two until the mushrooms are lightly browned
🥄Add in the tinned tomatoes, pepper, herbs and salt and simmer for a few minutes then add in the mixed beans and continue to cook until the onion and mushrooms have fully softened
🥄Serve with some veggies and a carb of choice for a balanced meal - this pairs really well with a sweet potato 🍠 .
This will make two decent servings so I like to cook it one evening for dinner and have the rest for lunch the next day 💪🏻
