especially when the country you're visiting seems to have one of your favourite foods, tempeh, readily available in all the veggie/vegan establishments you visit! These dumplings and tempeh were served with a yummy root vegetable sauce. It was our first meal when we arrived in Prague, at @vegansprague
and it did not disappoint 😁 so yummy and hearty 💚

➕Chiagrød med ➕aronia saft og ➕hørfrø, toppet med ➕pekannødder, ➕brombær og tørret ➕morbær 💪🏼💪🏼 god start på dagen! 🥣
Det skal du bruge til chiagrøden:
Vanilje stødt 1/2 tsk
1 spsk hørfrø
2 spsk chiafrø
3 dl usødet mandelmælk
Sådan gør du:
Ovenstående røres sammen i en beholder i et par minutter med en gaffel el. Lign. Og så stilles den i køleskabet til minimum dagen efter. Dagen efter tilføjes lidt ekstra mandelmælk
Et godt tip er at røre massen op med lidt mandelmælk før den serveres, så bliver den lækker og blød. Chiagrøden er klart bedst på 3. Dagen, men vi plejer at spise af den allerede dagen efter den er sat i køleren :-)

RASPBERRY & LEMON SLICE

2 cups desiccated coconut
Zest and juice of one lemon or 5-6 drops of @doterra
lemon essential oil
2 tablespoons almond butter
2 tablespoons rice malt syrup
1 cup cashews
2 tablespoons rice malt syrup
2 tablespoons coconut oil (liquid)
150 grams fresh raspberries
1 tablespoon coco milk
1 teaspoon vanilla extract
pinch of salt
Place the cashews for the raspberry layer into a bowl and cover with boiling water. Set aside.
Line a loaf tin with baking paper (overhanging the sides for easy removal)
Place the base ingredients into your processor and blend until the mixture resembles a sticky crumb.
Press the mixture firmly into your prepared tin.
Drain the cashews and place them into your processor and blend until the mixture forms a paste. Add the remaining ingredients and blend until the mixture is smooth and well combined. Spoon the mixture evenly over your base and place in the freezer to set and store.

Super Moist Pumpkin Bundt Cake🎃
I love Autumn ... for me it means many things… sweat shirts, soup, apples, pumpkin, colorful leaves…basically all of my favorite things.
So today I am starting off my favorite cooking/baking season with Super Moist Pumpkin Bnndt cake..

** pumpkin puree
1.)Cut off top of pumpkin
2.) Cut pumpkin in half
3.) Scoop out seeds & pulp – save seeds for roasting if you’d like!
4.) Cut 2 pumpkin halves in half again, and continue until you have 8-16 small pieces
5.)Place pumpkin pieces face up or down on baking sheet. No oil needed.
6.) Roast in oven on 375° for 45 min or until lightly browned.
7.)Remove pumpkin from oven and let cool so it’s comfortable to touch.
8.) Peel skin off, being careful not to waste any of the precious pumpkin!
9.) Add peeled pumpkin pieces to food processor and pulse until it becomes a smooth puree.
10.) Scoop out and store in a jar or ziploc bag. You can also freeze until you’re ready to use
