I feel suuuuuuuuer vulnerable posting this, but here goes - Brain is in full blown self destructive mode today 😫 things it has said to me - your not good enough, your not strong enough, why bother trying, you look like a fool, people are laughing at you, no one likes you, yep, that’s right, she came up with that little gem today, which I know isn’t true, but in the past I would have let that nasty thought manifest and become an issue. I am working sooooo hard to get rid of these nasty thoughts in my head. It’s not anything anyone else is actually thinking, it’s only what I’m thinking and it’s not true!!! Do you know what I actually did today, I went to the gym and burned over 600cal, got complimented on my abilities, high fives for doing a good job, told I’ve inspired many others, yet that little brain up there STILL manages to talk to me like that! Rude I say. So I’m telling her to butt out and get lost! NO ONE is going to stop me on this journey, not even MYSELF! ❤️✌️

. When studying yoga I heard this quote from an inspiring teacher "fake it until you make it" and that is so true when you are trying to create a routine of whatever it is. I was telling a friend the other day, the main thing to creating the active routine that you want is to START. And go, make a commitment to yourself, that you will practice whatever exercise(s) you choose. A few days a week. And sometimes you will go unwillingly, sometimes you will battle excuses, but just "fake it", the battle will get easier. Last night’s dinner was Sweet Potato Shepherds Pie (I’ve been on a sweet potato kick lately). Every time I make this, I think of Rachel from Friends making her trifle - “then beef sautéed with peas and onions” 😂. . Instead of beef and peas though, I sautéed 1 lb ground turkey with 1 diced onion, 12 oz baby Bella mushrooms, 2 peeled and chopped carrots, and 2 peppers. . While that was cooking, I steamed 2 sweet potatoes (I cheat and use the microwave) and then blended the sweet potato flesh together with 1 tbsp @kerrygoldusa butter and a pinch of salt. . Once the meat was cooked and the carrots were soft, I stirred in 1/4 cup homemade bone broth, 6 oz @muirglen tomato paste, and salt & pepper to taste. . In a 9x9 baking dish, I spread out the meat mixture, layered on the sweet potatoes, and baked at 350 degrees for 10 minutes. (If I’m in a hurry, I just skip this step and place a scoop of the meat mix and a scoop of the sweet potatoes on our plates, mix it together, and call it a day 😊). . Full disclosure - although hubby and I loved this comfort food dinner, the kids were not huge fans. Have you tried ‘meal prep’ and find it fails? Me too! Until I stopped trying so hard. Nine weeks ago, when I first began prepping foods (like ‘really’ began trying to make it a habit - a weekly goal) I was choosing at least 3 main meal recipes, 2 baking recipes (cupcakes, biscuits etc), fruit, snacks.......waaaay too many to begin with and wondered why i was getting flustered & disappointed in myself. In order for this to work for ME (and stop playing the comparison game) I had to scale it back! START SMALL - focus on prepping fruit for about 10 days or so then, when your comfortable, include veggie prep. Five weeks on.....as you can see in the photo, I am at the stage were I’ve chosen the following for this week: ~ a variety of seasonal fruits (large container for snacking & small ones to freeze for smoothies); ~ celery for snacks; ~ a variety of salad foods for sandwiches & main meal sides; ~ seasonal veggies that are versatile so we can easily add them to any main meal. Still sore from yesterday but also feeling STRONGER! Getting back from this cold makes me want to kick my booty in gear and work even harder! 💪🏻 I challenged myself to go heavier when I was using weights because If I didn’t I wouldn’t be making the progress I would want to - It’s all about pushing limits and working to make your mind just as strong as your body, if not stronger 💗🙌🏻 Mindset. Is. Everything. I read something yesterday that’s stuck with me and I want to share it..the idea of it was that if we go into a weight loss program or journey (anything really) thinking of the process as a burden, like a chore, and that it’s not fun..that’s what it’s going to be, bottom line. BUT if you go into it with an open mind and confidence, you’ll more than likely enjoy the experience and get something beneficial out of it. The Veggie Egg Cups were a hit with the kids, so instead of making an egg casserole this week, I went with muffins. Plus, I just got a new silicone muffin pan and it’s been magical for getting out muffins, so I wanted to try it with egg cups (since cleanup is my least favorite part about this perfect on-the-go breakfast). This time I tried something new! Instead of 2 bags of veggies, I made 1 and I lined the cup with thin pieces of sweet potato. The egg cups turned out great! The potato adds the perfect amount of sweetness 😊. . Peel a sweet potato and discard the skin. Then continue peeling the sweet potato and line the muffin cups with the thin pieces (check out my picture). Thaw a 12oz bag of frozen spinach and distribute evenly between cups. Sprinkle on salt and pepper. Crack 1 egg in each cup. You can stop here or mix the spinach and egg together (I prefer the latter). Bake at 350 degrees for 30 mins and enjoy!

Today’s feeling! I am so tired. I always have a funk on a Thursday for some reason. It’s like everyone’s Monday to me lol I just don’t have the energy on Thursday’s 🤷‍♀️ training is never as good, mood is always slightly lower..... to top it off this week I am right in the midst of week three of the challenge here and if you remember me saying the number three, day three and week three are always my nemesis 🤷‍♀️ I didn’t even realise till I sat and thought about it and it all started to make sense! This week is taking ALLLLL my willpower and strength to keep going. I didn’t want to train this morning, I told myself I couldn’t or I wouldn’t be as good as other days, but you know what, I was just as good if not better, because I just did it! Somehow I did a better job on a little in club challenge than I did the other day, I pushed to the max and I got through it. It did seem impossible this morning, but now it’s done and tomorrow is a new day! YAY 😁❤️

I’ve been working on this #slowcooker Chicken Mushroom Broccoli Stroganoff for awhile now (I’m so lucky that the kids and hubby don’t mind repeated dinners and being my guinea pigs). We finally have a winner! . In a slow cooker place 1.5 lbs cubed organic chicken breast, topped with 24 oz sliced baby Bella mushrooms, topped with a mixture of 1/2 cup organic chicken stock + 3 tbsp tapioca flour + 2 tsp minced garlic + 2 tbsp coconut aminos + 1 tbsp apple cider vinegar. Cook on low for 4 hours. For the last half hour, stir in 2 heads of broccoli chopped into florets and 1/2 cup of coconut cream (the thick layer at the top of a can of coconut milk when cold). Serve over rice, cauliflower rice, or pasta and enjoy 😊
