You guys! These Parmesan meatballs with creamy polenta are 🔥 🔥 🔥
For meatballs: mix 1 pound of ground beef with 4 minced cloves of garlic, 2 table spoons of oregano, 1 egg, 3 tablespoons of panko or (almond flour if you’re GF), 1/3 cup present, and salt and pepper. Mix well and form into balls. Cook in stove top on each side for 2-3 ish minutes or until crust forms and finish off in oven until internal temp reaches 165 (about 10-15 mins in 350 degrees). Makes about 12 meatballs
Tomato sauce: remove meatballs from the pan and in the same pan sauté couple cloves of minced garlic and add two diced tomatoes and cook down until all liquid from tomatoes are absorbed and sauce has thickened. Put meatballs back in the pan to keep warm and get em all saucy
Creamy polenta: bring to boil 4 cups of water and add 1 cup of polenta to the saucepan of boiling water and keep whisking it so it doesn’t clump. Reduce the heat to medium, whisk frequently for 15 minutes or until the water has been absorbed. Turn off heat and add 2 tablespoons of butter, salt and pepper
Plating: pour some polenta in a bowl and add a spoonfuls if the tomato sauce and then add your meatballs. Top with fresh basil and more Parmesan cheese

Tasty roast pork stir fry with hokkien noodles and veggies. The pork I used was $4 worth of pork ribs, marinated for a day and a half in char siu powder/soy sauce/garlic. Then roasted for 20 minutes on both sides, on a small rack inside a baking pan. Turned out very tender and tasty.
