NEW RECIPE :: Let me tell ya bout my beeeeest friend! All the summer zucchini 🥒 has me craving the flavors of zucchini bread, but I wasn’t in the mood for all the bready and muffiny fluff! I wanted something easy and bite-sized. The answer? Cookies! (Let’s be honest…I always choose 🍪.) I wanted to turn the flavors of zucchini bread into cookies and I think it worked! These soft, cakey little morsels are gluten-free, grain-free, optionally dairy-free and packed with flavor from cinnamon, coconut, hazelnuts, and chocolate…but instead of regular old chocolate chips, I chopped up a “Dutch” bar from @honeymamas
and it took these cookies to a whole notha level!
So, if you have lots of monster zucchinis popping up in your garden and you're sick of zoodles…OR if you bought some at the farmers market and need to use them up, give this recipe a try and let me know what you think!
