I love days where I can start the morning on my own terms. Where nobody wants anything from me, when I can wake up without an alarm and enjoy a warm breakfast. I like left-overs but a nice warming #congee
can be good, too. I however do not like to start off my morning with a huge ass glass of lemon water or a big cold smoothie...

I vowed to cook more from my Donabe and tonight it’s honeynut squash congee made Golden Milk style with turmeric and coconut milk and served with a poached eggs. Cooking in a claypot keeps the food warm even after being taken off the flame. And it’s this slow cooking in the clay pot helps the ingredients release the best of their aromas, which are kept even when cold. Have some leftover cooked rice? Make a fast congee or kanji/moi/bubur_nasi aka rice porridge! Just add water and boil till the grains break down. I also added some ginger and fenugreek to get the kanji variant that my husband likes. What do you top yours with? #saltedduckegg

I’ve been experiencing digestive issues so in an effort to eat something other than egg noodles and butter, I made this congee [an ancient Chinese food used medicinally to treat the stomach and spleen.] Cooking the rice for a long time allows it to break down which makes it easier to digest.

CHICKEN GINGER PORRIDGE .
Untuk 2 porsi
3 genggam beras
Air yang cukup untuk memasak bubur
2 siung bawang putih, iris halus
3 cm jahe, iris tipis
4 ekor udang kering, cincang halus
Garam dan merica secukupnya
2 sdm minyak goreng
Topping: 100 gr ayam cincang + 2 siung bawang putih iris halus + 1 sdm mentega, tumis hingga matang
1. Panaskan minyak pada panci besar. Tumis bawang putih, jahe, dan udang kering hingga wangi. Masukkan beras. Aduk rata. Tambahkan air yang cukup untuk memasak beras hingga jadi bubur yang lunak dan kental. Tambahkan garam dan merica secukupnya. Aduk rata. Matikan api.
2. Tuang bubur pada mangkuk saji. Hidangkan selagi hangat dengan pelengkapnya: topping ayam cincang, poached egg, irisan daun bawang dan seledri, bawang goreng, kerupuk, dan sambal. .

Brown rice congee with many kind of beans, coriander and salt and pepper on top.
Bit piece of fried cracker (laufabrauð), 1/4 pear🍐, 1/2 tangerine🍊and two Pepsi’s🥤.
Strawberry skyr🍓 with frozen blueberries, two slices of bread with garlic hummus, cucumber🥒 and lettuce🍃, and finally, one tangerine🍊.
It has been a long day today... many mood swings been coming lately... lol
